ROUX (IN THE FRENCH TRADITION) image

Steps:

  • Melt desired amount of butter in a pan and add equal amount of flour. Stir vigorously until the mixture forms a smooth paste which leaves the sides and base of pan cleanly. It will be light brown. Add about 1/5 of the quantity of your chosen liquid (see above) and allow to boil without stirring. Stir until the mixture blends smoothly, stir vigorously and add the remaining amount of liquid, beating well.
