Russian Apple Cake (Sharlotka) image

Steps:

  • Preheat the oven to 175c and grease a 9x13 baking pan/dish (ceramic) with butter or margarine. Set aside.
  • Peel, core and chop the apples. Place in a bowl and stir through brown sugar. Set aside.
  • Using an electric mixer, beat the eggs and sugar on high for about 2 to 3 minutes, until light yellow, thickened and about tripled in size.
  • Lower the speed to low and beat in the vanilla and flour.
  • In a small bowl, quickly mix the baking soda and vinegar and add it to the batter. Mix batter gently.
  • Arrange the chopped apples on the baking pan. Then pour batter over the apples.
  • Bake for about 30-35 minutes then cover with foil and bake for another 15-20 mins or until a knife comes out clean.
  • Serve warm with some double cream or wait to cool and dust with icing sugar!

Steps:

  • Remove core from the apples, cut in large chunks 2",lay parchment paper on the bottom of your baking form ( I use 8 1/2 inch spring form).
  • Lay the apples on top of parchment paper.
  • Let eggs warm up for 10 minutes,then mix till light yellow and foamy; add sugar in, small portions at a time, let sugar dissolve; add flour; mix till you see air bubbles, pour mixture on the apples.
  • It will soak throughout, do not mix apples with batter.
  • Bake for 55 minutes on 375°F.
  • When pie is done flip upside down, Apples will be on the top.
  • Enjoy.

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Lightly butter an 8 inch square baking dish.
  • Sift together 1 1/2 cups of flour, sugar, salt, and baking powder. Cut in 1/2 cup of butter until the mixture is crumbly. Stir together the egg with the cream and gently mix into the flour until a soft dough has formed. Press into prepared baking dish. Layer the apples into the dish overlapping, in neat rows. Prepare streusel by mixing the brown sugar, 2 tablespoons flour, and cinnamon together in a small bowl. Cut in 2 tablespoons butter until the mixture is crumbly. Sprinkle over apples.
  • Bake in preheated oven until apples have softened, and topping has browned, about 25 minutes.

Steps:

  • Combine farmer's cheese, melted butter, and milk in a bowl and stir until smooth.
  • Mix 1 3/4 cups flour, 2 tablespoons sugar, and baking powder in a separate bowl. Add to the ricotta mixture. Mix until pastry dough comes together. Refrigerate until chilled, about 30 minutes.
  • Beat 1/2 cup sugar and eggs together in a bowl using an electric mixer until thickened. Add sour cream, 2 tablespoons flour, and vanilla extract; stir until filling is well combined.
  • Preheat oven to 350 degrees F (175 degrees C). Butter a 9-inch springform cake pan.
  • Press the chilled pastry into the bottom and sides of the cake pan. Add 1/2 the apples; top with 1/2 of the filling. Repeat layering, ending with the filling.
