ITALIAN SAUSAGE STROMBOLI (AKA SAUSAGE BREAD)

I wanted to use up some left-overs and had some frozen pizza dough and this is the result. This is really tasty and can be used as a main dish or as an appetizer.

Italian Sausage Stromboli (Aka Sausage Bread) image

Steps:

  • Lay pizza dough on a lightly floured surface so it can rest.
  • Slice Italian sausage into 1/2 inch slices; fry in a 10" skillet over medium heat until browned, about 10 minutes.
  • Add 1/2 cup water, peppers and onions; bring to boil and cover.
  • Reduce heat to low and cook about 5-10 minutes more, or until veggies are tender and sausage is heated through.
  • Drain liquid from skillet and sprinkle sausage mixture with Italian seasoning; set aside.
  • ***If you have leftover sausage, onions and peppers, like I did, you just need to warm it up***.
  • Preheat oven to 375 degrees and spray a baking sheet with cooking spray.
  • Roll pizza dough (on a lightly floured counter) into a rectangle, approximately 11 x 17.
  • Sprinkle with sausage mixture, then the cheeses.
  • Start at the bottom of the long side and roll jellyroll fashion, stopping occasionally to stuff sides it. When you get to the end, pinch seam together, trying to squeeze air out as you go.
  • Place seam side down on baking sheet; bake for about 25 minutes at 375 degrees.
  • Remove from oven and lay a clean dish towel on top of loaf; this will allow the crust to soften up and it will be easier to slice and eat.
  • After about 10 minutes or so, slice into 1 inch slices. Serve with warmed sauce for dipping, if desired.
  • Enjoy!

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Heat a large skillet over medium-high heat; cook and stir sausage until crumbly, evenly browned, and no longer pink, about 10 minutes. Drain and discard any excess grease.
  • Pat out bread dough on an ungreased baking sheet, to 3/4-inch thickness. Lay salami, ham, and American cheese slices in center of dough. Sprinkle with mozzarella cheese, salt, pepper, and cooked sausage. Wrap dough to cover ingredients, pinching and sealing edges to prevent leakage; brush top with egg white.
  • Bake in preheated oven until dough is baked and lightly browned, 17 to 20 minutes.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Punch dough down. On a lightly floured surface, roll each loaf into 20x8 inch rectangle. Place one rectangle on a greased baking sheet. Spread spaghetti sauce in an 18x4 inch strip down the center. Sprinkle with oregano, pepperoni and mozzarella cheese. Fold long sides of dough up toward filling; set aside. I don't know if this is made in Italy, but I can tell you it is a big seller in any Italian deli in NYC. This simple-as-you-can-get treat is amazing for tailgaiting, picnics, or just hanging around the house with friends. As the saying goes, "TRY IT, YOU'LL LIKE IT" Use the best Italian ingredients you can get, trying to stay away from pre-packaged goods, if possible. The pizza dough I recommend is found, uncooked, in plastic bags in the frozen case, near the dairy items or you can buy it in a bakery or pizzeria. Make two loaves, because this stuff goes like hotcakes!!!

Salami Bread or Stromboli image

Steps:

  • Preheat oven to 425 degrees.
  • Cover a cookie sheet with aluminum foil.
  • Combine 2 packages of dough and spread the dough out over the entire cookie sheet (this may require some assistance).
  • Put out two sheets of waxed paper and lay out half of the meats and cheeses over each of the sheets.
  • Turn one waxed paper sheet out onto the stretched out dough, leaving about 1" of dough on the edge.
  • Start to roll the dough (into a log) and after one"roll" lay out the rest of the meats/cheese and continue to roll.
  • It is best to roll this like a big burrito, folding the sides in before finishing the rolling process.
  • Bake for 35-45 minutes or until a deep golden brown.
  • There is a chance that some of the melted cheese will bubble out of the loaf- no big deal.
  • Let the loaf cool for about 15 minutes before cutting into it, unless you want a tidal wave of cheese coming at you.

No-Knead Salami Bread image

Steps:

  • In a large bowl, whisk together the flour, salt and yeast. Add the water and stir with a stiff rubber spatula until combined and there are no longer bits of flour, 20 to 30 seconds. (It will be very sticky.) Cover with plastic and let sit on the counter at room temperature overnight, 12 to 18 hours.
  • Remove the plastic cover and smell the funky fermented aroma and appreciate the bubbles. Sprinkle one-third of the salami and chives over the top. Using a rubber spatula, fold the outside of the dough over the salami to cover. Repeat this process two more times until all of the salami and chives are folded in.
  • Lay a piece of parchment paper on the counter and sprinkle with an even layer of flour to cover the surface (about 1/4 cup or so). Scrape the dough onto the floured parchment and use heavily-floured hands to shape it into a roundish blob. Press in any exposed salami bits and pinch the dough to seal. Sprinkle the top with another layer of flour and cover with a piece of plastic wrap. Let sit until the dough has risen by half, 1 1/2 to 2 hours.
  • Place an oven rack in the lower third of the oven and preheat to 450 degrees F.
  • Place a 3- or 4-quart lidded Dutch oven on the rack and allow to heat while the oven reaches the desired temperature.
  • When the dough has proofed, carefully remove the Dutch oven from the oven and remove the lid. Uncover the plastic from the bread dough and gently lower the dough into the Dutch oven on the parchment. Cover the Dutch oven and bake for 30 minutes. Remove the lid, then bake until the top is golden brown and crusty, another 10 to 20 minutes.
  • Let it cool on a rack for about an hour, then slice and serve with butter if desired. This is best on the first day, but it will freeze well wrapped tightly in plastic.

Steps:

  • Tip the flour into a large bowl, then stir in the yeast and 1 tsp salt. Pour in 250ml warm water and the olive oil, and bring together with a wooden spoon to make a soft dough. Tip onto a surface and knead for 10 mins until smooth. Put the dough back in the bowl, cover with a tea towel and set aside for 40 mins or until doubled in size.
  • Roll the dough out on a lightly floured surface to a rectangle roughly 35 x 20cm. Layer over the salami (leaving a bit of a border), then scatter over the mozzarella and finally the basil leaves. Tuck the shorter edges in and roll the whole thing up like a swiss roll. Will keep frozen, tightly wrapped in foil, for up to one month. Can either be defrosted and baked, or baked from frozen (see step 3).
  • Leave the loaf to rest for 20 mins on a baking tray. Meanwhile, heat the oven to 200C/180C/gas 6. Brush all over with olive oil and sprinkle with sea salt. Bake for 40 mins until puffed up and golden. If cooking from frozen, bake for 1 hr. Leave to cool for 10 mins before slicing and serving with salad.
