SALATAT KHIYAR (ALGERIAN CUCUMBER SALAD)

This recipe was initially posted in response to a round the world game. Not only did it sound good but once I got around to trying it myself, it WAS good! I'm not usually a cucumber person but I really like this recipe.

Salatat Khiyar (Algerian Cucumber Salad) image

Steps:

  • Toss the cucumber in a salad bowl with the green pepper, olives, and mint.
  • Add the coriander, paprika, olive oil, and vinegar, season with salt and pepper, toss again, and serve.

1 large cucumber, peeled,halved lengthwise,seeded,thinly sliced
1/2 green capsicum, cored,seeded and cut in half lengthwise
1/3 cup pitted and coarsely chopped green olives
4 large fresh mint leaves, finely chopped
2 tablespoons finely chopped fresh coriander leaves (cilantro)
1/2 teaspoon paprika
1/4 cup extra virgin olive oil
3 1/2 teaspoons white wine vinegar
salt & freshly ground black pepper

Steps:

  • Toss the cucumber in a salad bowl with the red pepper, onions, olives, mint, and parsley.
  • Add the cilantro, paprika, olive oil, and vinegar, season with salt and pepper, toss again, and serve. Enjoy!

Posted for World Tour 2006, this is a mildly tangy cucumber salad of the sort you can find at small cafes and private homes in Germany. I loved this one when I lived there. It's not fancy but it is definitely tasty.

Gurkensalat (Cucumber Salad) image

Steps:

  • Peel cucumbers and cut into very thin slices.
  • Mix together vinegar, sugar, salt, and pepper and pour over cucumbers.
  • Marinate about 20 minutes to an hour but no more than that; drain off liquid, toss cucumbers with sour cream, then top with fresh parsley and serve.

2 tablespoons cider vinegar
1 1/2 tablespoons sugar
1/2-1 teaspoon salt
1/4 teaspoon pepper
3/4 cup sour cream
2 tablespoons minced fresh parsley

MASHT-O KHIYAAR (PERSIAN CUCUMBER SALAD WITH SULTANAS AND WALNUTS)

This is a Persian recipe and my favorite cucumber salad. Cucumbers are combined with toasted walnuts and sultanas and a light dressing of yogurt, fresh dill, and fresh mint. For best results refrigerate salad for about 1 hour.

Masht-o Khiyaar (Persian Cucumber Salad with Sultanas and Walnuts) image

Steps:

  • Place yogurt into a fine-mesh sieve lined with a coffee filter and allow to drain, about 20 minutes. You should end up with about a cup of thick yogurt.
  • Heat a small skillet over medium heat, add walnuts, and toast while stirring until nuts start to turn golden brown and become fragrant, 3 to 5 minutes. Allow to cool.
  • Mix yogurt, sultanas, walnuts, dill, mint, salt, and pepper in a large bowl, add cucumber and toss to combine. Refrigerate for 1 hour.
