TURKEY SALISBURY STEAK
Reminds me of the old school days lunch. YUM! Ground turkey is mixed and then formed into patties which are baked and served with a mushroom gravy.

- Preheat oven to 400 degrees F (200 degrees C).
- Whisk 1 cup water, onion soup mix, Worcestershire sauce, garlic, and black pepper together in a bowl. Strain mixture, reserving solids and broth. Pour 1/2 cup broth and the solids into a large bowl; mix turkey, bread crumbs, and egg into broth-solids mixture until thoroughly combined. Scoop 8 portions using 1/2 cup measure and form each into an oval patty; arrange on a baking sheet.
- Bake in the preheated oven until no longer pink in the center and the juices run clear, about 20 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
- Whisk remaining broth, mushroom soup, 1 can water, and gravy mix together in a saucepan until smooth; bring to a boil, stirring constantly. Remove from heat.
- Flip patties and pour gravy over each. Continue to cook until gravy has slightly thickened, about 10 more minutes.

- In a nonstick cooking pan that has been sprayed with veggie spray, sweat minced onion, mushroom stems, and 1 dash of salt until translucent. Set aside to cool.
- In a large bowl, mix ground turkey, cooled veggies, bread crumbs, 2 egg whites, 1 tablespoon Worcestershire sauce, 1 tablespoon onion powder, 2 tablespoons ground sage, 2 teaspoons kosher salt, and freshly cracked black pepper until thoroughly mixed (as you would a meatloaf). Divide the meat into 6 patties. Preheat a seasoned cast iron skillet (this gives the best results, a rich beefy flavor), brush on 1 teaspoon of olive oil. Brown meat on both sides. Finish in the oven at 400 degrees for 20 to 30 minutes until no longer pink in the center.
- In the meantime, sauté a pound of sliced mushrooms in nonstick skillet with cooking spray, until tender.
- Once the meat is done, take it out of the pan and scrape the bits of caramelized meat out of the bottom of the pan with a spoon. Add the sage leaves, wine and the beef broth, and bring to a boil. Let the sauce reduce by half. Remove from the heat, take out the sage leaves, and pour sauce over steak. Serve along with sautéed mushrooms, brown rice, and a fresh green salad.

This meal is quick, easy, and cheap! I used to make this hamburger but since I'm eating healthier I'm trying it with turkey. It's usually a favorite in my home. I usually make it with mushroom gravy as well but turkey gravy should work as well.

- Preheat oven to 350 degrees.
- Mix cavenders and turkey together and make into patties.
- Place patties in a casserole baking dish. Evenly pour turkey gravy and mushrooms over patties. Bake for 20 minutes or until cooked through.
- Serve over rice or with mashed potatoes and green beans or any veggie.

- In a large bowl, stir turkey, egg, breadcrumbs, half the diced onion, ketchup and spices together until combined. Form 6-7 patties and brown both sides in 1 tablespoons olive oil in large, deep skillet. Remove from pan and set aside. Patties will not be cooked completely and that's totally ok!
- Pour in remaining 1 tablespoon of olive oil into skillet. Saute last of the onions and mushrooms until browned and tender, about 5 minutes. Remove from pan and set aside.
- Melt tablespoon of butter into pan. Sprinkle in flour and whisk to form a paste. It might seem to form crumbs because it's a little dry; that's ok! Slowly whisk in beef broth to avoid lumps. Bring to boil to thicken, then reduce heat to simmer. Pour in Worcestershire sauce. Slide in browned turkey steaks and spoon sauce over to coat. Add in cooked mushrooms and onions overtop and cover. Simmer 10 minutes or until gravy thickens even more and turkey steaks and cooked thoroughly.

- Add the ground turkey, salt, pepper, garlic, ketchup, Worcestershire sauce, steak sauce, egg and breadcrumbs to a large bowl. Mix together until all ingredients are incorporated.
- Separate the ground turkey mixture into 4 patties. Shape each patty into an oval shape. Like an elongated burger. Place the patties on a baking sheet or plate.
- Heat the oil in a large, deep, non-stick skillet over medium-high heat. When the oil is very hot – but not quite smoking, add the turkey patties. Cook the patties for about 2-3 minutes, per side until they are browned.
- Remove the skillet from the heat and lower the burner to medium-low. Remove the patties and place them on a plate or pan. Keep them warm by covering loosely with a piece of aluminum foil, and/or place the plate in the microwave or oven. They stay nice and warm in an enclosed space away from drafts. Don’t worry if the ground turkey steaks are not cooked through, they will finish cooking in the gravy.
