POACHED SALMON IN THE MICROWAVE
A quick way to make perfect salmon fillets. They stay firm and the house doesn't smell like you cooked fish at all.

- Combine butter, wine, lemon juice, dill, sugar, salt, and black pepper together in a microwave-safe casserole dish; place cover on dish.
- Microwave butter mixture until butter is melted, 45 to 60 seconds. Add salmon, skin-side up, to butter mixture and place cover on dish. Microwave until salmon flakes easily with a fork, about 6 minutes.

- Combine the soy sauce, chilli, ginger, spring onions, orange juice and honey in a bowl. Cut out two large squares from a sheet of baking parchment, and put a salmon fillet and half the pak choi in the middle of each. Bring the parchment up over the fish, pinch and fold the corners together and transfer the parcels to a plate. Divide the sauce between the parcels, then fold the ends in to seal well.
- Microwave on high for 4-5 mins until the salmon is tender. Pour the sauce over the fish and serve alongside sticky rice, if you like.

TERIYAKI SALMON PARCELS
These easy steamed fish parcels with Japanese seasoning are an ideal way to get kids in the kitchen

Steps:
- KIDS: The writing in bold is for you. ADULTS: The rest is for you. Make the sauce and marinade. In a small bowl, whisk together the soy, honey, garlic and mirin and set aside.
- Cut out some squares of foil. Using scissors, cut out 4 squares of foil, each about 30cm square. Brush each piece of foil with a little oil and bring the edges of the foil up a little.
- Fill your parcels. Place a couple of broccoli stems on each one, then sit a salmon fillet on top and scatter over the ginger.
- Spoon over the sauce. Spoon the sauce over each salmon fillet and drizzle with a little sesame oil, if you like.
- Close the parcels. Fold over the edges of the foil together to seal and place the parcels on a baking sheet. Can be prepared up to 1 day ahead.
- Cook the parcels. Heat oven to 200C/180C fan/gas 6. Get your child to place the parcels in the oven for 15-20 mins, but ensure an adult removes them, then leave to stand for a few mins. Serve each parcel on a plate and let each person open it themselves. Serve with spring onions and sesame seeds for scattering over, and some rice on the side.

- Thaw filet in refrigerator for several hours, or immerse package in cold water for 30 minutes.
- Place filet in small microwave casserole dish.
- Sprinkle with lemon pepper seasoning.
- Top with butter or margarine.

- Repeat for remaining filets.

SALMON PARCELS - MICROWAVED
My best friend in England gave me this recipe. It's fast, tasty and quite elegant I think - and I usually have the ingredients on hand. Creme Fraiche is not readily available in Canada yet, so I have used both plain yogurt and sour cream, and even low-fat and no-fat versions. For petit pois I use good quality tiny peas and for greaseproof paper I substitue wax paper. Parchment would be fine too.

- Arrange each salmon fillet on a 14" (35cm) square of greaseproof paper and season.
- Top each fillet with leeks and peas and 2 tbsp of creme fraiche.
- Sprinkle with pepper and salt and tarragon.
- Fold the paper over at the top and fold the ends underneath (think gift wrapping) and put them on a microwave-proof plate.
- Cook on full power for 5 minutes. (I have a smaller, older, over the stove microwave and they need 7 minutes).
- Unwrap and slide onto 2 plates and top with extra creme fraiche if using.
- I like to serve these with tiny new potatoes.

SALMON PARCELS
As usual, I'm not sure where this recipe comes from, but we make it for small dinner parties. The parcels look so elegant, but the recipe takes no time at all! I make my own pesto with basil and mint for this, but you could use a jar pesto. Fresh is so much nicer tho!

Steps:
- Season the fish with salt.
- Take two phyllo sheets and fold in half. Lay a piece of salmon on the phyllo, take care to tuck any tail piece under the salmon.
- Top each piece of salmon with at tablespoon of the pesto.
- Draw the phyllo up around the salmon and make a "knot" by twisting the phyllo so it stays in place.
- With scissors cut off any excess phyllo from the knot.
- Place each parcel on a non-stick cookie sheet. Refrigerate (covered with plastic wrap) until ready to cook.
- Heat your oven to 400°F Drizzle or spray the olive oil over each parcel.
- Cook in the middle of the oven for 15 minutes or until each parcel is golden brown.

- Season the salmon fillets all over. Slice the leeks really thinly. Cut two 40cm square sheets of greaseproof paper and put a fillet in the middle of each sheet.
- Top each fillet with leeks and peas, and 2 tbsp of crème fraîche. Sprinkle with tarragon and salt and pepper.
- Make up parcels with the paper and stand them on a microwave-proof plate or tray. Microwave on full power for 5 minutes. Put the contents of the parcels on two plates and top each serving with a spoonful of crème fraîche. Serve with new potatoes.

STEAMED SALMON IN THE MICROWAVE

- Pat the fish dry with kitchen paper then cut into very big pieces. Put in a heatproof dish and evenly scatter with the ginger. Wrap tightly in cling film. Can be prepared to here up to 2-3 hours ahead, chill. Put the plate of fish into the microwave and cook for 3-5 minutes (depending on its thickness and how you like your fish cooked) on full power.
- Remove the plate of cooked fish. Wait one minute and pour off any excess liquid that may have accumulated on the plate, then scatter the spring onions on the fish, together with the light and dark soy sauces.
- Heat the two oils together in a small saucepan until very hot, then pour over the top of the fish. Scatter with a handful of coriander sprigs and serve at once.
