Steps:

  • Whisk together the cream cheese, buttermilk or regular milk, lemon zest, lemon juice, horseradish and a large pinch of salt and pepper in a medium bowl until smooth. Fold in the smoked salmon, dill and chives until completely combined. Season to taste with additional salt and pepper if needed. Transfer to a small serving bowl and serve with vegetables and/or crackers.

Grilled Salmon with Lemon-Dill Sauce image

Steps:

  • 1.Spray a grill grate with cooking spray or brush with oil.
  • 2.Heat a gas or charcoal grill.
  • 3.Brush the top of the salmon with the olive oil; sprinkle with the salt and pepper.
  • 4.Grill over medium heat, skin side up, for 3 minutes.
  • 5.Using a broad spatula, turn the fish over; grill for 5 to 7 minutes or until the salmon flakes easily with a fork.
  • 6.Meanwhile, in a medium bowl, mix all of the remaining ingredients. Serve the sauce over salmon.

  • Preheat oven to 400 degrees.
  • In baking dish, place salmon skin side down.
  • Cover with wine, butter and juice of 1 lemon.
  • Spread mustard evenly on top.

Steeped Salmon With Chive and Dill Sauce image

Steps:

  • Fish: Place fish in a large shallow pan with a tight fitting cover.
  • Add enough water to cover the fish by 1 1/2 inches, then remove the fish and set aside.
  • To the water, add lemon, onion, thyme, salt and pepper, cover and bring to a full boil.
  • Remove the pan from the heat, add the fillets and cover pan tightly.
  • Let fish steep 3 to 10 minutes depending on the thickness of the fillets, then remove the salmon to a serving platter using a slotted spatula.
  • Note: for thicker fillets you will need to add the salmon to the liquid and simmer until partially cooked before removing from the heat and covering.
  • Sauce: Whisk together, mayonnaise, sour cream, chives, dill, salt and Tabasco.
  • To assemble: Place cucumber slices around the edge of the serving platter over lapping as you go. Spoon sauce across the center of each fillet and top with a few drops of fresh lemon juice.

  • Line a non-stick or greased and floured 20 x 4 cm deep tart tin (preferrably a springform pan).
  • Cover with foil or greaseproof paper, fill with pie weights or rice and bake for 10 minutes at 400 F or 200 C.
  • Remove the foil and bake for another 10 minutes.
  • Meanwhile, beat of whisk the two egg yolks, the whole eggs and the cream until smooth.
  • Strip the dill from its stalk, chop coarsely and add to the mixture, along with some freshly ground black pepper.
  • Arrange the smoked salmon in the pastry shell.

Steps:

  • Flake salmon so no large lumps remain.
  • Add egg, mayo, salt, pepper, dill and breadcrumbs. Mix well.
  • Form into four cakes. Coat with additional breadcrumbs.
  • Heat a skillet over medium heat and melt 1 Tbsp of butter. Add olive oil.
  • Fry cakes in skillet until golden on both sides -- about 5 minutes per side.
  • Remove cakes and to the pan, add 2 tbsp butter and 2 tbsp flour. Cook, stirring, until the roux is bubbly.
  • Slowly add the milk/salmon juice, stirring all the while.
  • Simmer 3 minutes, adding dill during last minute of cooking.
