BAKED SALMON WITH GUAJILLO SAUCE

Steps:
- Cook garlic in small skillet on medium-high heat 10 min. or until roasted, turning occasionally. Peel; reserve. Heat oven to 350ºF. Soak chiles in hot water 10 min. or until softened; drain, reserving 1/4 cup liquid. Place chiles and reserved liquid in blender. Add dressing, 1/4 cup nuts and reserved garlic; blend until smooth. Pour over fish in large bowl; toss to coat with sauce.
- Place 1 avocado leaf on each of 8 (12-inch-square) sheets of foil; top with fish. Gather up sides at top and twist tightly to form pouch. Place on baking sheet.
- Bake 20 min. or until fish flakes easily with fork. Meanwhile, coarsely chop remaining nuts; mix with cilantro. Open pouches; sprinkle fish with nut mixture.

- In a large bowl, mix oil, salt, pepper, and paprika. Coat the salmon fillets with the marinade and refrigerate for 30 minutes.
- Grill the salmon on an 11 inch (28 cm) griddle pan on high heat for two minutes on each side.
- In a separate bowl, lightly toss avocados, ¼ red onion, the juice from one lime, 1 tablespoon olive oil, and salt to taste.
- Spoon avocado salsa on top of the cooked salmon. Top with finely cut cilantro.

- Heat a dry heavy medium skillet (not nonstick) over medium heat until hot, then toast chiles briefly on all sides, pressing flat with tongs, until slightly softened, about 3 minutes.
- Simmer tomatillos in water to cover in a small saucepan until tender, about 5 minutes. Transfer with a slotted spoon to a blender and add chiles, onion, garlic, orange juice, and 3/4 teaspoon salt. Blend until smooth (use caution when blending hot liquids). Transfer to a bowl and cool to room temperature.

- Cocina los ajos en una sartén pequeña a fuego medio-alto por 10 min. o hasta que esté tostado, volteándolo de vez en cuando. Pélalos y reserva. Calienta el horno a 350ºF. Remoja los chiles en agua caliente por 10 min. o hasta que se ablanden; escúrrelos y reserva 1/4 taza del líquido. Pon los chiles y su líquido en la licuadora. Añade el aderezo, 1/4 de taza de almendras y el ajo que reservaste; licúalos hasta que queden cremosos. Vierte la mezcla sobre el pescado en un tazón grande; revuelve para cubrirlo bien con la salsa.
- Pon las 8 hojas de aguacate sobre 8 cuadrados (de12 pulgadas) de papel aluminio; pon el pescado encima. Dobla hacia arriba los lados del papel, júntalos y tuércelos ligeramente para formar un paquetito. Colócalos sobre una bandeja para hornear.

- In a large saucepan over medium-high heat, place 4 cups water, the guajillo chilies, garlic cloves and white onion and bring to a boil. Reduce the heat to simmer until the chiles are soft and tender, about 25 minutes. Transfer the boiled vegetables, the tomato and 2 cups of the boiling liquid to a large blender and set aside to cool before blending. Process until smooth. Season with 1 teaspoon salt and a pinch of black pepper.
- In a medium, heavy saucepan, heat the vegetable oil over medium heat. Strain the pureed guajillo salsa into the pan. Add the bay leaf and simmer until thickened, about 10 minutes. Taste for seasoning, adding additional salt and pepper as desired.
