SANTA FE PINWHEEL WRAPS FOR A CROWD

A combo of colored favored tortillas works great. The presentation, people with rave over. This makes 90 to 96 pinwheels, figure 5 per person.

Santa Fe Pinwheel Wraps for a Crowd image

Steps:

  • Mix together grated cheeses, basil, black olives, green onion, garlic and mayonnaise.
  • Thinly spread mixture all over open tortilla.
  • Then at the one end of the tortilla, lay 3 or 4 strips of roasted pepper as well as about 1/2 cup of slivered lettuce.
  • Roll up the tortilla tightly.
  • Wrap the tortillas tightly in plastic wrap and refrigerate until ready to use.
  • Remove from refrigerator; slice each tortilla (on a bit of an angle) in about 8 slices.
  • Then display the slices on a platter with a little parsley or other garnish.

5 cups grated cheese (fontina, old cheddar or Monterey jack)
3 cups grated asiago cheese
1/3 cup slivered fresh basil
12 black olives, chopped
1/3 cup green onion, diced
1 garlic clove, minced
1 1/4 cups mayonnaise
12 soft flour tortillas
1 leaf lettuce, cleaned and patted dry, sliced into slivers (2 or 3 leaves)
3 red peppers, roasted then cut into strips

This is a Paula Deen recipe that has been modified a little and one of our favorites. Our family & friends love this one!! These can be made ahead of time and refrigerated until ready to serve. I always do!! : )

Steps:

  • 1. In a large bowl, combine first 6 ingredients. Beat at medium speed, stir in spinach.
  • 2. Spread evenly over surface of each tortilla, roll up tightly, cut crosswise.
  • 3. Bake at 350 degrees for about 10 min. or so (just needs to be starting to get a little crispy.

2 pkg (8 oz) cream cheese; softened
1 c sour cream
1 can(s) (4.5 oz) chopped green chilies
1 c (4 oz) shredded pepper jack cheese (with hot peppers)
3 green onions, sliced
2 Tbsp salsa
1 c fresh spinach, chopped
2 pkg flour tortillas, burrito size
salsa & sour cream for dipping

  • In a medium skillet, heat olive oil over medium high heat. Add sliced onion and saute for about 5 minutes or until soft.
  • Assemble the wrap: Place two slices of pepperjack on tortilla. Top with sliced chicken. Top with onions and sliced tomatoes. Drizzle mexi -ranch over everything. Fold up both ends and roll up tight.
  • Heat a medium skillet over medium high heat. Brush sealed wrap with a little olive oil on both sides. Place seam side down in skillet. Press down with another pan and heat until golden brown. Flip and press down grilling until golden brown again.
