- Sprinkle chicken with salt and pepper. Place on a broiler pan. Broil 4-5 in. from the heat for 3-4 minutes on each side or until lightly browned. Transfer to a 5-qt. slow cooker. , In a small bowl, combine the barbecue sauce, honey, mustard, Worcestershire sauce and pepper sauce. Pour over chicken; stir to coat. Cover and cook on low for 4-5 hours or until chicken is tender.

HONEY-AND-SOY-GLAZED CHICKEN THIGHS
In this simple weeknight recipe, chicken thighs are tossed with a sweet-salty glaze made of honey and soy sauce that caramelizes into a sticky coating as it roasts in the oven. Serve the sliced chicken with bibb lettuce cups for wrapping, or over steamed rice to catch all the juices. Leftovers can be chopped and combined with vegetables for a tasty clean-out-the-fridge fried rice.

- Heat the oven to 425 degrees. Heat 1 tablespoon oil in a small saucepan over low heat. Add the garlic and ginger and cook, stirring occasionally, until softened, 3 minutes. Add the soy sauce and honey and simmer, stirring occasionally, until reduced and slightly thickened, about 10 minutes. (You'll want to cook attentively for this step, as the syrupy mixture can burn if it cooks too long.) Turn off the heat then whisk in the butter. Season with salt and pepper.
- On an aluminum foil-lined rimmed baking sheet, season the chicken all over with salt and pepper. Add half the glaze and the remaining 1 tablespoon oil and toss the chicken to coat. Arrange in an even layer, skin side up, and roast until browned, 15 minutes. Brush the chicken all over with 2 tablespoons of the remaining glaze. Roast until golden and cooked through, about 10 minutes.
- Drizzle the chicken with the remaining glaze and serve with lemon wedges.

- Place chicken in a 6-qt. electric pressure cooker; sprinkle with poultry seasoning. Top with onion and tomatoes. In a small bowl, mix tomato sauce, barbecue sauce, water, orange juice and seasonings; pour over top., Lock lid; close pressure-release valve. Adjust to pressure-cook on high for 10 minutes. Quick-release pressure. A thermometer inserted in chicken should read at least 170° If desired, serve with rice. Freeze option: Place cooked chicken mixture in freezer containers. Cool and freeze. To use, partially thaw in refrigerator overnight. Microwave, covered, on high in a microwave-safe dish until heated through, gently stirring and adding a little water if necessary.

SAUCY THIGHS
I needed to get dinner in a hurry and this is what I came up with. This is a super easy, super fast way to get a dinner on the table in under an hour. Bonus is it tastes great. The V8 gives some veggie flavour and nutrients without all the chopping when you are in a hurry. This dish would also be great with chopped peppers if you like. We like it served over egg noodles or spaghetti but it would also be good with rice. Be sure to get the noodles cooking while the thighs and sauce simmer.

Steps:
- Add olive oil and butter to hot frying pan.
- When butter starts sizzling add in the chicken thighs and lightly brown on both sides at a medium to medium high temperature.
- When the thighs are browned add in the onions with a good pinch of salt and pepper.
- When the onions start to take on colour add in the mushrooms and cook for a few minutes. (and garlic if you are using fresh).
- Add the wine and give it a minute or two to pick up the bits on the bottom of the pan.
- Pour in the V8 and add Italian Seasoning. (also garlic powder if you didn't use cloves).
- Bring to a light boil, put on lid and simmer for 20 to 30 minutes.
- Adjust seasoning to your preference.
- You may need to remove the lid for the last few minutes to let the sauce thicken.
- Serve over noodles or spaghetti.
- Enjoy!

- Pat chicken thighs dry with paper towel and trim off excess fat. Combine the onion powder, garlic powder, herbs, salt and pepper. Coat the chicken evenly with the combined seasoning.
