Steps:
- Heat the olive oil in a large skillet over medium heat. Add the shallots and cook, stirring, until softened, about 1 minute. Add the green beans and salt and pepper to taste. Saute, stirring occasionally, until crisp tender, about 5 minutes. Transfer to a serving dish and set aside.
- Return the skillet to medium-high heat and add the cream, thyme, lemon juice and zest, and chicken broth. Bring to a simmer and let reduce by half, until thick enough to coat the back of a spoon, about 5 minutes. Remove from the heat and stir in the sour cream. Add salt and pepper to taste.
- Pour the dressing over the green beans to serve.

Add lemon juice to butter (juice lemon half right side up to keep seeds with lemon, rather than in your beans). Add beans to lemon butter and coat evenly. Season with salt and pepper, to taste. - Heat a pan over a medium heat and add the butter. (It helps to use a pan with a light-colored bottom so you can keep track of the color.) Swirl the pan occasionally to be sure the butter is cooking evenly. As the butter melts, it will begin to foam. The color will progress from lemony-yellow to golden-tan to, finally, a toasty-brown.

- Heat oil in a large saucepan over high heat.
- Chop onion into thin strips and add them to the pan. Add half the garlic, salt, and pepper, and saute until onions barely begin to brown.
- Cut ends off green beans if fresh, and add them to the pan. Mix in remaining garlic. Juice 1/4 of a lemon into the pan and add 2 tbls of balsamic vinegar and i tsp of butter.
- Sample a green bean, and add remaining lemon, salt and pepper to taste.
- Before green beans are fully cooked, toss in desired amount of sliced almonds. Warm a little longer, and serve immediately.

- Rinse the beans and drain them. Put them into a saucepan with water to cover and salt.
- Bring to a boil and simmer 10 minutes or until tender. The beans must remain a trifle firm or al dente.
