- Cook 2 bunches trimmed and halved radishes and 1 sliced red onion in a skillet with olive oil over medium-high heat, stirring, until tender, about 8 minutes; season with salt and pepper. Stir in 5 ounces baby spinach, the juice of 1/2 lemon and a pinch each of salt and pepper; cook until wilted, about 1 minute.

Steps:
- Trim the largest leaves and most of the stems from the radishes, leaving the smallest leaves and approximately 1/2-inch stems. Cut the radishes in half lengthwise.
- Melt butter in a large saute pan over medium-high heat. Add radishes, and cook, shaking pan occasionally, until just tender and golden brown, about 7 minutes. Transfer to a serving dish and season with salt and pepper. Serve warm.
SAUTEED RADISHES

- Heat butter in a skillet over low heat; arrange radishes, cut side-down, in the melted butter. Season with salt and black pepper. Cook, stirring occasionally, until radishes are browned and softened, about 10 minutes.

SAUTEED RADISHES
Steps:
- Weigh the radishes after trimming off their stems and leaves as well as the thin sprout from the top.
- Cut the radishes into thin slices.
- Heat the butter in a skillet, preferably of the nonstick variety and add the sliced radishes. Sprinkle with salt and pepper. Cook, tossing and stirring so that the radish slices cook evenly, about 3 minutes.
- Add the scallions or green onions. Continue cooking, stirring and tossing, about 2 minutes longer.

- Heat butter with oil in a 12-inch heavy skillet over moderately high heat until foam subsides, then sauté radishes with salt and pepper, stirring occasionally, 6 minutes. Add water and cook, covered, until crisp-tender, about 2 minutes, then cook, uncovered, stirring occasionally, until liquid is evaporated, 1 to 4 minutes. Add watercress and sauté, stirring, until wilted, about 1 minute.
SAUTEED SPINACH

- Remove the spinach stems. Tear the leaves into large pieces. Fill a large bowl with cold water and wash the spinach. Repeat 2 or 3 times until the spinach is thoroughly cleaned. Drain.
- In a large skillet, heat half the oil over medium heat, add the garlic and stir until it begins to turn golden, about 3 minutes. Remove the garlic and discard. Add the spinach in batches, stirring to wilt, before adding more. When all the spinach has been added, raise the heat to high, season with salt and pepper, and cook, covered, for 3 minutes. Drain the spinach in a colander. Return spinach to the skillet to heat through. Serve in a medium bowl, drizzled with the remaining oil and garnished with lemon wedges, if desired.
SAUTE SPINACH WITH GARLIC
Recipe from Martha Stewart. I am not an avid Martha fan, but this spinach dish is fragrant with garlic, but without the fat, and easy. I think it's better than spinach salad because you don't even have to dry them and comparing with with the calories you get with salad dressing, this "sauted" spinach is practically calorie-free!

Steps:
- In a large sauté pan, heat olive oil over medium heat.
- Add garlic, and cook until golden brown, 2 to 3 minutes.
- Using a slotted spoon, transfer garlic to paper towels; reserve.
- Discard oil.
- Spray pan with cooking spray, and heat over medium heat.
- Coarsely chop spinach and stalks.
- Working in batches, add damp spinach to the pan.
- Cover, and cook until spinach just begins to wilt, 4 to 5 minutes.
- Transfer the cooked spinach to a metal bowl, and cook remaining spinach.
- Season with salt and pepper.
- Sprinkle reserved garlic over spinach, and serve warm.
SAUTéED RADISH GREENS
It seems like such a waste to throw away or compost beautiful greens. Radish greens have a slightly peppery taste similar to arugula. They are best fresh from the farmers' market.
