SAUTEED ZUCCHINI
This is a really easy recipe that tastes great. Fresh veggies in a light sautee. You can add a cup of cooked pasta if you wish to give it more heft as a side dish. We always make too much pasta during the week so this is a great way to work through some of the leftovers.

Steps:
- Melt the butter in a large skillet over medium heat; cook and stir the onion in the melted butter until translucent, about 5 minutes. Add the garlic; cook and stir 1 minute more. Stir the tomatoes and 1/4 cup water into the mixture; cover. Cook until the tomatoes have reduced slightly, stirring occasionally, about 5 minutes.
- Pour another 1/4 cup water into the skillet, and add the bouillon cube; stir until the bouillon is dissolved. Add the zucchini; continue cooking until the zucchini is tender, 5 to 7 minutes. Season with black pepper to serve.

SAUTEED ZUCCHINI WITH GARLIC AND HERBS
Steps:
- In a large skillet, heat oil, over medium-high heat. Add zucchini, scallions, and garlic. Saute for 6 to 8 minutes, or until zucchini is tender.
- Slowly pour in vegetable stock. Stir in sauce mix and parsley. Simmer for 1 1/2 to 2 minutes. Season, to taste, with salt and pepper.
SAUTéED ZUCCHINI

- Cut 1 medium zucchini into matchstick-size pieces. Heat 2 tablespoons toasted sesame oil in a large skillet, preferably nonstick, over medium heat. Add zucchini; cook, stirring occasionally, until just tender, 3-4 minutes. Season with kosher salt, freshly ground black pepper, and gochugaru (coarse Korean red pepper powder).

Steps:
- Puree garlic cloves in the bowl of a food processor. Add sun dried tomatoes and pulse till coarsely crumbled. Add oregano and pulse. Add cheese, 1 tbsp olive oil and balsamic vinegar; pulse till crumbly. Season to taste with salt.
- Measure 3/4 cup of crumbles, reserving remainder for another use. Heat a large sauté pan over medium high heat. Add 2 tsp olive oil and heat. Add onions and sauté till limp and just beginning to caramelize. Add zucchini strings and sauté gently until zucchini is bright green, about 4 minutes.
- Add the sun dried tomatoes, parmigiano crumbles and toss to coat zucchini completely.
- Adjust seasonings to taste with kosher salt. Serve immediately with reserved crumbles sprinkled on top.
SAUTE OF GRATED ZUCCHINI
Leftovers can be livened up by mixing them with dressing made with sour cream and Dijon mustard or a dressing made of mayonnaise mixed with lemon juice, to taste, and chopped anchovies.

EASIEST SAUTEED ZUCCHINI EVER
One of my mother's favorites for when she was rushed and wanted a vegetable side dish that was quick, simple and tasty. She didn't measure the soy sauce, just sprinkled it with the plastic "sprinkling top" (I don't know what else to call it) on the bottle, so I'm just guessing at the amount. These days, I use light (lower-sodium) soy sauce. If you like, jazz it up with the herb of your choice, but I like it just as is. (Occasionally I sprinkle with my favorite herb thyme.)
