Steps:
- Preheat oven to 350 degrees.
- Cook noodles uncovered in a large pot of boiling salted water over high heat about 4 minutes or until nearly tender but firmer than usual.
- Drain, rinse with cold water, then drain well again.
- Transfer to a large bowl.
- Heat 3 to 4 tablespoons oil in large skillet over medium-low heat.
- Add onions and saute about 20 minutes or until very tender and light brown, (but not burned!) stirring occasionally.
- Add salt, pepper, and 1 teaspoon paprika, and saute about 5 minutes or until well browned.
- Cool slightly.
- Stir onion mixture into noodles.
- Adjust seasoning, mixture should be seasoned generously.
- Add eggs and mix well.
- Oil a 2 quart baking dish and add noodle mixture.
- Sprinkle with remaining tablespoon oil, then dust with paprika.
- Bake uncovered 1 hour or until set.
- Serve from baking dish.

- Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the egg noodles, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 5 minutes. Drain well in a colander set in the sink.
- Preheat oven to 350 degrees F (175 degrees C). Spray a 1-quart baking dish with nonstick cooking spray.
- In a bowl, mix together the eggs with white sugar until thoroughly combined, then stir in the melted butter, whipped cottage cheese, sour cream, salt, and pepper. Lightly mix in the noodles; spoon the kugel into the prepared baking dish. Sprinkle the top with brown sugar.
- Bake in the preheated oven until the top has browned, about 40 minutes. Cool for 10 minutes before serving.

- Preheat the oven to 350 degrees F. Butter a 10 by 13 by 2 1/4-inch baking dish.
- Drizzle some oil into a large pot of boiling salted water. Cook the noodles for 6 to 8 minutes, until tender. Drain.
- In a large bowl, whisk together the eggs, half-and-half, brown sugar, vanilla, cinnamon, salt, and pepper. Stir in the ricotta and raisins. Add the drained noodles.
- Pour the noodle mixture into the baking dish. Place the filled dish in a larger pan and pour in enough hot water to come halfway up the sides. Cover the entire assembly with aluminum foil. Bake for 45 minutes, then remove the foil and bake for another 45 minutes, or until the custard is just set.
NOODLE KUGEL

- Preheat oven to 375 degrees F.
- Boil the noodles in salted water for about 4 minutes. Strain noodles from water. In a large mixing bowl, combine noodles with remaining ingredients and pour into a greased, approximately 9-by-13-inch baking dish.

- Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the egg noodles, and return to a boil. This savory kugel, a Jewish baked noodle pudding, comes from a 1950 spiral-bound cookbook that was compiled by the women of a synagogue in suburban Larchmont, N.Y. They called it Exciting Baked Noodles, and it included what were then considered secret ingredients: Worcestershire and Tabasco sauce. To update it, use high-quality pappardelle egg noodles, which add richness. A sprinkling of chives brings flecks of color to the finished casserole.

- Heat oven to 350 degrees. Butter the inside of a 2 or 2 1/2-quart casserole or gratin dish.

- Cook noodles until "al dente" (both types together or not, they may reach al dente at different times-read box/package) and rinse with hot water and drain well. Set aside.
- Meanwhile, in a large bowl combine cottage cheese, sour cream, garlic, Worcestershire sauce, herbs, hot pepper sauce and salt and pepper. Mix together well.

A heavenly, decadent kugel recipe that I have had since my college days when my roommate begged several vendors at a San Antonio Oktoberfest to share their delicious kugel recipes with us. From these recipes, we combined and created our amazing Lieblich Noodle Kugel. I have taken this dish to countless events with family and friends, and it receives rave reviews every single time!

- Preheat oven to 325 degrees F (165 degrees C). Spray a 9x13-inch baking pan with cooking spray. Bring a large pot of water to a boil. Add the noodles, and cook until tender, about 6 minutes. Drain.
- Combine the cottage cheese, pineapple, and apples; set aside. Mix together the sugar and cinnamon in a small bowl, and set aside.
- Spread one-third of the noodles onto the bottom of the prepared pan. Spread with half of the cottage cheese mixture, and sprinkle with one-third of the cinnamon sugar. Layer with another third of the noodles, and the remaining cottage cheese. Sprinkle with another third of the cinnamon sugar and the remaining noodles. Mix together the white wine and melted butter; brush onto the noodles. Sprinkle with remaining cinnamon sugar. Cover with aluminum foil.
- Bake for 1 hour in the preheated oven, until apples are tender.

SWEET NOODLE KUGEL
A very easy, very delicious kugel. I have no idea where I found this recipe, but I've been making it for years.

- Grease a 9"x13" glass baking dish and set aside.
- Cook the noodles according to the directions on the box. Cook the noodles only to the al dente stage.
- Drain them, return them to the cooking pot and add the melted margarine. Mix well and set aside to cool.
- Peel the apples, cut them in quarters, remove the core and seeds and slice the apples into the noodles. Add the raisins, cinnamon, sugar, honey and salt. Mix well.
- Gently beat the eggs together and mix into the noodle mixture.
- Pour into the greased pan. Cut a piece of aluminum foil and spray one side with non-stick cooking spray. Cover the kugel tightly and bake at 350°F for about 30 minutes.
- Remove the foil and bake for another 20 minutes or until a cake tester comes out clean.
- Let stand for about 15 minutes before serving.
SPINACH NOODLE KUGEL (DAIRY)
Kugels are so easy to make and there are so many varieties. This is from Ida Loverde, "From Our Jersey Shore Kitchens",(1982). It is Kosher as a dairy dish since it has sour cream and butter.

- Preheat oven to 350 degrees.
- Grease a 9-by-9-inch nonstick pan.
- Cook the noodles according to package directions and set aside.
- Coarsely chop the broccoli and cauliflower.
- Steam the vegetables together for 4 or 5 minutes.
- Set aside to cool.
- Heat the oil in a skillet.
- Add the onion, mushrooms and garlic.
- Sauté for 10 minutes.
- In a large bowl, combine the noodles, broccoli, cauliflower, onion, mushrooms, ricotta cheese, 1/2 cup of the cheddar cheese and dry mustard.
- Toss to thoroughly mix.
