Steps:

  • For the pita chips: Place an oven rack in the center of the oven. Preheat the oven to 400 degrees F. In a small bowl, combine the chili powder and cumin. Drizzle the tops of the pita breads with the oil and sprinkle with the spice mixture and salt. Cut each pita bread into 8 wedges and arrange in a single layer on a baking sheet. Bake until crisp and golden, about 10 minutes.
  • For the dip: Place an oven rack in the center of the oven. Preheat the oven to 400 degrees F. Butter a 9-inch round ceramic deep-dish pie pan or a 1-quart baking dish.
  • Place a large skillet over medium-high heat. Add the oil and bacon and cook until crispy, about 8 minutes. Remove the bacon and drain on paper towels. When cool enough to handle, crumble into 1/2-inch pieces. Set aside. In the same skillet, add the oil (if needed), shallots, garlic, artichokes, 1/2 teaspoon of the salt and pepper. Cook over medium-high heat until the shallots are translucent and the artichokes begin to brown, about 8 minutes.
  • Transfer the vegetables to a food processor. Add the mascarpone cheese, sour cream, mayonnaise, lemon juice, 1/2 of the cooked bacon pieces and the remaining 1 teaspoon salt. Pulse until combined but still chunky. Place the dip in the prepared baking dish and sprinkle with the remaining bacon pieces. Bake until just warmed through (do not let the dip boil), 10 minutes. Serve the pita chips alongside.

1 teaspoon chili powder
1 teaspoon ground cumin
3 to 4 pita breads
2 tablespoons extra-virgin olive oil
1/2 teaspoon kosher salt
Butter, for greasing the baking dish
5 strips thick-cut bacon
1 teaspoon extra-virgin olive oil, optional
2 shallots, chopped
2 cloves garlic, minced
One 8-ounce bag frozen artichokes, thawed
1 1/2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
2 cups (16 ounces) mascarpone cheese
1/3 cup sour cream
1/4 cup mayonnaise
1/4 cup fresh lemon juice (from 1 large lemon)

ARTICHOKE AND OLIVE FARRO SALAD

Farro, a nutty Italian grain with a chewy texture, is an excellent candidate for a savory, herb-flecked pantry salad that travels well. The grain is not intimidated by bold flavors: Tangy oil-marinated artichokes, briny kalamata olives, feta and crisp red onion take wholesome farro by the hand and lead it straight to the dance floor. Cook times vary depending on the type of farro. Quick-cooking, pearled or semi-pearled all work well, but hulled is not recommended here, as it would need soaking and takes a long time to cook. Don't be shy with the oil and vinegar: The farro absorbs them the longer it sits. If farro is not available, you can use orzo (see Tip), or other hearty grains like barley, wheat berries or freekeh.

Artichoke and Olive Farro Salad image

Steps:

  • Set aside a sheet pan or a large plate. Bring a medium pot of well-salted water to a boil. Add the farro and give it a stir. Reduce the heat to medium-high and cook according to package instructions, skimming off any foam that rises, until the grains are tender and plump. Depending on the type of farro used, this can take anywhere from 15 to 45 minutes. Drain the farro and transfer to the sheet pan or plate; spread out and cool to room temperature, 10 to 15 minutes. (If the farro is left to cool in the strainer, it will keep cooking, take longer to cool and turn mushy.)
  • Transfer the farro to a medium mixing bowl. Add the vinegar, oil and ½ teaspoon salt, and stir to combine. Add the olives, artichoke, feta, dill, red onion and chives, and season with black pepper to taste. Stir and taste. Add more salt, vinegar and oil, as needed.
  • Serve right away or store in the fridge for up to 2 days. The farro will absorb the vinegar and oil the longer it sits. Adjust seasoning, vinegar and oil before serving.

Kosher salt (such as Diamond Crystal) and black pepper
1 cup quick-cook, pearled or semi-pearled farro, rinsed and drained (see Tip)
2 tablespoons red wine vinegar, plus more as needed
2 tablespoons extra-virgin olive oil, plus more as needed
1/3 cup pitted kalamata olives, sliced in half lengthwise
About 1 cup (5.4 ounces) marinated quartered artichoke hearts from a jar, coarsely chopped
1/2 cup crumbled feta
1/3 cup chopped fresh dill leaves
1/4 medium red onion, finely chopped (about ⅓ cup)
1/4 cup thinly sliced chives

AWESOME ARTICHOKE DIP

My friend made this at a party and I just had to have her recipe. This is the best artichoke dip that I have ever tasted. You might want to double the recipe because this stuff will go very quickly! I've made this several times now and the key is to rinse the spinach well before putting it in the recipe. Otherwise you will have green dip! Other cheeses, and cheese blends work fine in place of the parmesan. However, I feel the parmesan gives the best flavor combination. Fresh lemon juice really makes this recipe different from other spinach artichoke dips and adds a much needed zing to the recipe. Its also best to use the freshest garlic you can get your hands on.

  • Preheat your oven to 375 degrees.
  • Grease a 7x11 baking dish in a medium bowl mix cream cheese and mayo until smooth add chopped artichokes, chopped spinach and parmesan.
  • Add lemon juice and minced garlic mix together well. For a smoother texture, pulse in a food processor until the desired texture is achieved. This will also help mix things more completely and give a better fusion of flavors.
  • Bake covered with aluminum foil for 20 minutes.
  • During the last 5 minutes of baking remove the foil. The top should be golden brown around the edges when it is done.
  • Serve while hot with tortilla chips, fresh veggies, or Italian bread.

25 SAVORY SNACK RECIPES WE CAN’T RESIST - INSANELY GOOD

Category Recipe Roundup
  • Buffalo Chicken Dip. First on my list is an outrageously umami-packed dip that’ll add excitement to crackers and crudites. Containing cream cheese, Bleu cheese, cheddar cheese, chopped rotisserie chicken, and red hot sauce, think of it as Buffalo chicken wings, but in dip form.
  • Texas Trash. It may not sound like it, but Texas Trash is a true treasure. Don’t be fooled by its stinky name! Texas Trash is a seriously addictive mix of Chex cereals, Cheerios, pretzel crisps, and nuts.
  • Potato Chips. Did you know that you can have chips and be healthy, too? This recipe for baked potato chips is all you’ll need to make the impossible possible.
  • Pizza Rolls. Frozen pizza rolls are always reliable for lazy afternoons and evenings. They take forever to reheat in the oven, though! Thankfully, the air fryer is here to save the day.
  • Ranch Pretzels. Pretzel crisps are already pretty fantastic, as they are. But there’s nothing wrong with wanting to give them a revamp, right? This is the transformation you never thought pretzel crisps needed.
  • Kale Chips. Don’t say I didn’t give you healthy options! While this potato chip alternative is admittedly not as addictive, it is surprisingly delicious.
  • Alabama Fire Crackers. Nobody wants plain saltine crackers, which is why this recipe transforms them from ordinary to extraordinary. You’d be surprised at how incredibly addictive these crackers are!
  • Cornbread Muffins. These cornbread muffins are savory and buttery with a hint of sweetness. If you don’t want the sweetness, just remove the honey. Honey or not, these muffins are unbelievably moist and fluffy, with a slightly crispy outer crust.
  • Mac & Cheese Balls. Mac and cheese is already perfect, so it’s hard to think it can still get better. But it definitely can, and with this recipe, it will.
  • Buffalo Wings. Buffalo wings are the quintessential game-day snack, so of course, it’s here on this list! I’m not a fan of tangy and spicy flavors, but Buffalo wings are an exception.
