CHINESE MARINADE
If you like Asian flavors, this is a great marinade for chicken or pork. This marinade recipe makes enough for 2lb of meat. Marinate red meat or poultry for 2 hours at room temp or 24-48 hours in the fridge.

A 24 hour marinade, guaranteed to please every time. Chicken or turkey is always moist, and tender. Use half of a recipe for a chicken, or the full recipe for a turkey of up to 25 pounds. Everyone will clamor for this recipe!!! Use the drippings from the pan to make gravy as usual. It is not necessary to strain drippings first.

- In a small bowl, whisk together the olive oil, soy sauce, lemon juice, and mustard. Stir in chives, sage, oregano, parsley, thyme, garlic, paprika, and herb seasoning. Cover, and refrigerate for 30 minutes to allow flavors to blend before marinating your favorite meat.
- Place turkey or chicken in a 30 gallon plastic kitchen bag. Pour marinade over the bird. Grasp the bag a few inches above the poultry, and press air from the bag. Seal with a twist tie. Rotate bag to coat turkey with the marinade. Marinate in the refrigerator 24 hours, repositioning the bag every 4 hours, or so. Remove poultry from bag before roasting, and transfer marinade to a saucepan. Boil marinade for a few minutes, then use to baste the turkey every 30 minutes, or so, while roasting. Discard any remaining marinade when turkey is done.

BEST EVER CARNE ASADA MARINADE
This traditional Mexican carne asada marinade recipe will marinade 5 or 6 pounds of meat and can be easily halved or doubled. I've tried many carne asada recipes through the years, and this one outshines them all. The flavors are the most flavorful and authentic and the meat is pull-apart tender. - Mix everything together.
- Makes 1 cup; should have 1 cup for each 2-3 lbs of turkey.
- Marinade between 4 and 24 hours depending on thickness of turkey.
- For a turkey I do overnight and at least 24 hours.
- I baste often and will inject marinade under the skin and into the meat with my baster.
- This is a BBQ recipe using either a BBQ rotisserie or just treating the BBQ like an oven.
- I always baste during the grilling process.
- Just cook till the turkey registers done with a thermometer.
- Cook at least 20 minutes per lb.
- Enjoy!
TURKEY AND CHICKEN LEGS WITH MEDIEVAL MARINADE

- Put the turkey and chicken legs into a large resealable plastic bag.
- In a large bowl, combine the tomato paste, olive oil, chicken broth, Worcestershire sauce, applewood rub, apple cider vinegar, onions, and garlic, and whisk them together until blended. Pour the marinade into the resealable bag over the turkey and chicken legs. Seal the bag and put it into a large bowl. Marinate in the refrigerator for at least 1 hour or as long as overnight.
- Preheat 1 side of a grill over medium heat. Remove the turkey and chicken legs from the marinade, shaking off the excess, and set aside.
- Put the marinade into a small pot and cook over low heat, until reduced by half.
- Grill the chicken legs over direct heat for 5 minutes per side with the lid closed. After 10 minutes grill them over indirect heat for another 10 to 15 minutes. Grill the turkey legs for 20 to 25 minutes with the lid closed. Brush on the reduced marinade every 5 minutes until the legs are cooked through and the internal temperature reaches 175 degrees F. on an instant-read thermometer. Hold the chicken legs on the coolest part of the grill or in an oven at 200 degrees F while the turkey finishes cooking.
- Arrange the chicken and turkey on a serving platter and garnish with fresh parsley.

TERIYAKI BEEF STIR-FRY OR MARINADE
Yet another recipe from Chatelaine, but this was originally in the magazine as a salad. The salad didn't appeal to me, but I used it as a base for a great stirfry and used the dressing as a marinade. I then added some things here and there to give it a unique flavor. Cooking time does not include marinating in fridge.

- Mix all ingredients together for the marinade.
- Cut the beef into one inch strips and add to the marinade.
- Put in a plastic container or Ziploc bag in refrigerator for 3 to 4 hours, stirring/shaking often.
- To make stirfry, heat sesame oil in a non-stick skillet or wok skillet.
- Add the sesame seeds, garlic and ginger and mix together until seeds are slightly toasted and flavors blended.
- Add sliced Spanish onion, green peppers, 1/4 cup of marinade, mix well and stirfry until onions are slightly translucent.
- Add the beef, mixing well to blend all the flavors and ingredients.
- If you want, you can add some more of the marinade with the beef.
- Stir fry about 5- 7 minutes on medium heat for medium rare or longer for your tastes.
- It went great with a bottle of Cabernet Shiraz Merlot red wine.
- Note: I reduced the measurement for the teriyaki sauce because it was a tad salty when I originally made it.
- If you don't mind the salty flavor, you can add more for your taste.

- Pour marinade over meat of choosing.
- Cover and refrigerate 2-4 hours.
- If baking in the marinade, once meat is done, you can boil down the marinade till thick and syrupy and use as a sauce.
- If grilling, brush marinade over meat several times to provide maximum flavour and boil down remainder until syrupy and use as a sauce.

My mom is Chinese, and often catered for special events. Everyone always asked for the recipe for the sauce that she marinated her meats in. It is savory and delicious, and I've never tasted anything like it anywhere else! Whether you're baking, grilling, or pan-frying your meats, this can't be beat! I make several jars of this stuff at Christmas to give away as gifts. Everyone loves it! You can use this sauce either as a marinade or in stir-fry.

- Mix all ingredients and store in a large jar or Tupperware container. Store in refrigerator for up to three months. Mix well before using. Use on pork, chicken, beef, or as a stir-fry sauce.
- When I use it on chicken, I add a little orange juice. For beef, I add a little Worcestershire sauce. For pork, I add a little brown sugar.
- For best results, marinate your meats in the sauce overnight in a large zip-lock bag.
