- Boil potatoes in salted water until tender, about 12 minutes. Drain potatoes and pour them into a bowl. Combine sour cream, egg yolk and cream. Add the cream mixture into potatoes and mash until potatoes are almost smooth.
- While potatoes boil, preheat a large skillet over medium high heat. Add oil to hot pan with beef or lamb. Season meat with salt and pepper. Brown and crumble meat for 3 or 4 minutes. If you are using lamb and the pan is fatty, spoon away some of the drippings. Add chopped carrot and onion to the meat. Cook veggies with meat 5 minutes, stirring frequently. In a second small skillet over medium heat cook butter and flour together 2 minutes. Whisk in broth and Worcestershire sauce. Thicken gravy 1 minute. Add gravy to meat and vegetables. Stir in peas.
- Preheat broiler to high. Fill a small flameproof rectangular casserole with meat and vegetable mixture. Spoon potatoes over meat evenly. Top potatoes with paprika and broil 6 to 8 inches from the heat until potatoes are evenly browned. Top casserole dish with chopped parsley and serve.

- Preheat Oven to 325'F.
- Use vegetable spray on casserole dish.
- Prepare instant mashed potatoes following box directions.
- Boil frozen vegetables in saucepan.
- Brown ground beef.
- Add 1/2 can of beef gravy.
- Add garlic powder.
- Stir until well blended.
- Drain vegetables.
- Add the beef mixture to casserole dish.
- Add the vegetables and spread evenly.
- Add large spoonfuls of the mashed potatoes
- over the vegetables.
- Wait a few minutes for potatoes to cool before spreading.
- Make a design with bottom of fork on the potatoes.
- Sprinkle some paprika.
- Bake for 30 minutes.
- Cool for 15 minutes before slicing.
- Add remaining warmed gravy to each serving.
SHEPHERD'S PIE TWICE-BAKED POTATO RECIPE BY TASTY
This hearty meat and potato dish can be made using ingredients you probably already have in your pantry. - Set one rack at the top and one rack in the center of the oven. Preheat the oven to 400°F (200°C).
- Place the potatoes on the baking sheet. Poke a few times on each side with a fork, then brush all over with olive oil and sprinkle with ½ teaspoon of salt.
- Bake the potatoes on the center rack of the oven for 45-50 minutes, until easily pierced with a knife. Remove from oven and let sit until cool enough to handle. Reduce the oven temperature to 350°F (180°C).
- While potatoes are cooking, make the beef filling: Heat the olive oil in a large, high-walled skillet over medium heat. Add the onion and cook until translucent, about 5 minutes. Add the garlic and continue to cook until fragrant, 2-3 minutes.
- Push the onion mixture to the edges of the pan and increase the heat to medium-high. Add the ground beef to the center of the pan and break up with a spatula. Let the meat brown, undisturbed, for 2-3 minutes, then season with 1 teaspoon of salt and ½ teaspoon of pepper and stir to incorporate.
- When the beef is mostly cooked through but still slightly pink, add the tomato paste and Worcestershire sauce and stir to combine, continuing to break up the beef with the spatula.
- Add the beef stock, carrots, and peas. Reduce the heat to medium and simmer for 3-5 minutes, until most of the liquid has evaporated. Season with the remaining teaspoon of salt and ½ teaspoon of pepper, plus more to taste. Remove the pan from the heat.
- Once the potatoes are cool enough to handle, cut in half lengthwise. Being careful not to tear the skin, scoop out most of the flesh and transfer to a large bowl. Set the potato skins aside.
- Add the melted butter, heavy cream, remaining teaspoon of salt, and the pepper to the bowl with the potato flesh. With an electric hand mixer, mix on low speed until combined, then increase the speed to high and mix until potatoes are light and fluffy. Add the cheddar cheese and mix on low speed until just incorporated.
- Scoop about ¼ cup (60 G) of the beef filling into each potato skin. Top with about ¼ cup of the mashed potatoes. Spread the potatoes over the beef filling so it's almost entirely covered. Using a fork, create ridges in the potatoes by dragging the fork from top to bottom.
- Bake the potatoes on the center rack for 10-15 minutes, until the cheese in the potatoes starts melt and you hear sizzling coming from the potatoes when you open the oven door.
- Transfer the potatoes to the top rack and broil on high for 1-2 minutes, until the edges are brown and crispy, keeping a close eye to ensure they do not burn.
- Top the potatoes with the chives and serve warm

- Scrub and pierce potatoes; rub with oil. Bake at 375° until tender, about 1 hour., In a large skillet, cook the beef, onion, peppers and garlic over medium heat until beef is no longer pink; drain. Add the mixed vegetables, Worcestershire sauce, tomato paste, steak seasoning, salt, pepper, cayenne and 1 teaspoon paprika. - Cook the potatoes in a large pan of boiling, salted water for 3-4 minutes.
- Drain well.
- Preheat the oven to 200°C.
- Meanwhile, heat the oil in a large frying pan and cook the carrot and onion for about 1 minute over a medium high heat, then add the lamb mince and stir fry until well browned.
- Pour in the hot stock and stir in the brown sauce and soy sauce.
- Bring to the boil and simmer rapidly for 3-4 minutes.
- Mix the cornflour and a little water to a paste, and stir into the lamb mixture with the peas; bring back to the boil, stirring, until slightly thickened.
- Season with salt, pepper and Tabasco, to taste.

- preheat the oven to 200c.
- Prick each potato 6 times with a skewer.
- Spray with oil and sprinkle with sea salt flakes.
- Bake for 1 hr or until tender.
- Cool.
- Cut each potato in half length ways and scoop out the flesh, leaving a 1cm-thick shell
- Transfer flesh to a bowl and set aside.
- Spray inside of shells with oil.
- Bake for 15mins or until crisp and golden.
- Meanwhile, heat the oil in a non-stick frying pan over medium-high heat.
- Add oil and mushrooms.
- Cook, stirring, for 5 minutes or until softened.
- Add mince and carrot.
- Cook for a further 4 minutes
- Stir in tomatoes and bring to the boil.
- Reduce heat to medium-low.
- Cook for 2 minutes or until sauce has thickened.
- Season with salt & pepper.
- Add milk to reserve potato flesh and mash.
- Spoon mixture into potato shells.
- Top with mash mixture and sprinkle with Parmesan.
- Spray with olive oil spray.
- Bake for 15 minutes or until cheese is golden.
- Serve.

- Heat oven to 375*F.
- Peel potatoes.
- Thinly slice them to make 4 cups.
- Cover with water.
- Melt butter, saute onions in this.
- Stir in salt, pepper, dry mustard, and flour until blended.
- Stir in half and half or milk and cook, stirring constantly, over medium heat until thickened.
- Stir and boil one minute.
- Remove from heat.
- Line a 9 inch pie tin with pastry.
- Drain potatoes.
- Pat dry.
- Using 1/3 cup each, layer potatoes, cheese and sauce in crust.
- Repeat layers twice.
- Cover with top crust.
- Flue edge and vent top.

- Place potatoes in large saucepan and add enough water to cover by 2 inches. Stir in 1 tablespoon salt and place pot over medium-high heat; bring to a boil. Cook until potatoes are fork tender, about 10 minutes. Turn off the heat and drain.
- Return potatoes to the hot pan and set over the same burner. Add milk and 2 tablespoons butter; allow butter to melt from the residual heat. Mash potatoes with a potato masher until smooth. Stir in Cheddar cheese, sour cream, egg yolk, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Set aside while you prepare the filling.
- Preheat the oven to 375 degrees F (190 degrees C). Grease a 9x13-inch casserole dish.

SHEPHERD'S PIE WITH GARLIC POTATO TOPPING
I had a favorite recipe for Shepherds Pie that I have misplaced. I searched recipe sites like crazy trying to find it, or one similar to it, and this is what i came up with. Mine was not a garlicky topping but very similar in the fact that you beat egg into the topping(and a little cheddar cheese) and i would top it with a little bit of fine, dry breadcrumbs and a shake of parmesan once i spread it over the meat layer.If you are not a garlic fan you could probably just leave it out. Sometimes i would spread a can of cream corn over the meat layer,however this recipe calls for corn kernels to be mixed right in,you could probably still do either.My recipe also called for the thyme & savory which i like the flavor of. This recipe was credited to "New Canadian Basics"

- Bake at 400 for 20 minutes or until filling is bubbling.

- Remove kale leaves from stems and cut into 1" pieces. Peel and julienne onion. Mince or grate garlic. Peel and grate carrots. Remove ends and peel beets, dice into 1/4" cubes. Slice potatoes into ¼” slices. Dissolve sour cream in 1.5 c water. Remove ground beef from package; pat dry.
- Heat 1 tbsp oil in a large oven-safe sauté pan over medium heat. Add half the onion and half the garlic, sauté 1-2 min until softened. Add potatoes and sauté 3-5 min until beginning to brown. Remove from pan and set aside.
- Heat 1 tbsp oil in previously used pan; add remaining onion, garlic, carrots, beets and ground beef. Cook, breaking apart with spoon for 8-10 min until fully cooked. Add Worcestershire sauce, salt and pepper; cook another 2-3 min stirring constantly and turn off heat.
- Layer potatoes on top of beef to completely cover. Drizzle sour cream mix over potatoes, add salt and pepper. Top with cheddar cheese. Bake for 15-20 min until cheese has melted and potatoes are soft. Turn oven to broil, cook 1-2 min until cheese is bubbly and browned. Remove from oven.
