BEEFARONI

This was one of my favorite dishes growing up and now it is my children's. Ground beef, cheese and tomato sauce are baked into a simply delicious casserole.

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Crumble the ground beef into a large skillet over medium-high heat. Cook, stirring frequently, until evenly browned. Drain.
  • While the ground beef is cooking, bring a large pot of lightly salted water to a boil. Add macaroni, and cook until tender, about 8 minutes. Drain, and stir in butter. Transfer to a large casserole dish, and mix in the ground beef, tomato sauce, and Cheddar cheese. Sprinkle a little salt and pepper over the top.
  • Bake uncovered for 30 minutes in the preheated oven, or until heated through and bubbly.

CHEF JOHN'S AMERICAN GOULASH

One of my all-time favorite comfort food meals growing up was the beef goulash they served in my school cafeteria alongside a slice of buttered white bread and a carton of milk. Little did I know that it wasn't really goulash, but an Americanized version, invented to stretch a small amount of beef into enough food for a not-so-small family. This is one of those very simple dishes that does not taste simple--perfect for your weeknight dinner rotation.

Steps:

  • Heat oil in a pot over medium-high heat. Add onion and ground beef. Cook, breaking the meat into small pieces, until browned, about 5 minutes. Cook and stir until liquid is evaporated, 3 to 5 minutes more. Add garlic, salt, black pepper, cayenne, paprika, Italian seasoning, and bay leaves.
  • Cook and stir until flavors come together, about 3 minutes. Pour in chicken broth, diced tomatoes, and marinara sauce. Rinse out the jar with 1 cup water and pour into the pot. Add soy sauce, stir, and bring soup to a simmer. Reduce heat to medium and simmer to let flavors intensify, about 30 minutes.
  • Increase heat to medium-high and bring soup to a simmer. Add macaroni; simmer, stirring occasionally, until just barely tender, about 12 minutes. Check for doneness after 10 minutes.
  • Remove goulash from heat. Discard bay leaves; stir in parsley and Cheddar cheese. Cover and let rest for 5 minutes. Taste and season as desired.

Steps:

  • 1. Brown ground beef. Drain fat; add onions, spaghetti sauce mix, pepper, oregano and garlic. Stir in tomato sauce, chicken base, Worcestershire, sugar and salt. Bring to a boil; reduce heat and simmer 45 minutes. If sauce needs thickening, dissolve a little cornstarch in hot water and add to sauce.
  • 2. Meanwhile cook spaghetti. Drain, but do not rinse. Stir cheese into sauce to melt, then stir in spaghetti. Transfer pasta and sauce to a baking pan and cover with foil. Place in a 225 degree oven for 1 hour.

  • Heat the olive oil in a large pan or dutch oven over medium-high heat. Cook the short ribs (in batches, if necessary, to avoid overcrowding the pan) on each side until browned. Remove them from the pan and set them aside.
  • Lower the heat to medium and add the celery, carrots, onion, and garlic to the pan and cook them until they start to soften about five minutes or so. Add the tomatoes, breaking them up with a wooden spoon, along with all of the liquid from the can. Add the beef stock, Italian seasoning, and parsley.
  • Stir it all together and add the short ribs. Bring it to a simmer, turn off the heat and partially cover the pot with an oven-proof lid. There should be a gap to allow steam to escape. Transfer it to the oven and let it simmer for two to three hours. The ribs are done when you can easily pull the meat off the bone with a fork.
