  • Preheat oven at 350 degrees F (180 degrees C). Grease and flour three 8x4 inch loaf pans.
  • In a large bowl, stir together cake mix, instant pudding mix, nutmeg, and cinnamon. Add the applesauce, oil, eggs and water. Blend for 3 to 4 minutes using an electric mixer. Divide the batter evenly between the prepared pans.
  • Bake for 50 to 55 minutes in the preheated oven, or until a toothpick inserted in the center comes out clean.

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13-inch rimmed baking sheet or baking pan and line with parchment paper.
  • Combine butter and sugar in a large bowl. Beat with an electric mixer until light and fluffy. Add eggs one at a time, beating well after each addition.
  • Mix flour and baking powder together in a bowl. Sift gradually into butter mixture, mixing well.

Mother's Applesauce Cake image

Steps:

  • Preheat oven to 300 degrees F (150 degrees C). Grease and flour a tube pan.
  • Whisk together flour, salt, cinnamon, cloves, and soda. Set aside.
  • Cream together 1/2 cup butter and 2 cups brown sugar, beating until light and fluffy. Mix in eggs. Add flour mixture into creamed mixture alternately with applesauce, beginning and ending with flour mixture. Stir in the raisins, dates, and walnuts. Pour batter into prepared pan.
  • Bake in preheated oven until a tester inserted in the center of the cake comes out clean, about 1 1/2 hours. Cool on wire rack.

  • In a mixer fitted with a whisk attachment, cream the butter. Add the brown sugar and continue mixing. Add the eggs, 1 at a time, and vanilla, then mix until well blended and fluffy.

  • Heat the oven to 325 degrees. Brush a 10-inch springform pan with soft butter. Coat the pan with 1/4 cup superfine sugar, lightly tap out excess sugar, and set pan aside.
  • Combine 1 cup butter and remaining 2 cups superfine sugar in bowl of an electric mixer fitted with a paddle attachment. Beat on medium speed, scraping down the sides with a rubber spatula, until mixture is light and fluffy, about 5 minutes. Carefully fold in the applesauce. Do not overmix.
  • Sift together 2 3/4 cups flour, 1 teaspoon cinnamon, 1/4 teaspoon nutmeg, cloves, salt, and baking powder. Fold the dry ingredients and pecans into the applesauce mixture. Add the vanilla, Calvados, and apple slices, and mix until just combined.
  • Transfer the batter to the prepared springform pan. Combine the remaining 3 tablespoons butter, 3 tablespoons flour, 1/2 teaspoon cinnamon, 1/4 teaspoon nutmeg, brown sugar, and ginger in a small mixing bowl. Mix with fingers until just combined, and sprinkle lightly over the batter. Steps:

  • Melt the butter in a frying pan.
  • Combine breads crumbs, sugar, and cinnamon- add to the butter in the pan and stir until mixed and golden brown.
  • Divide this mixture into three parts- placing the first portion into a greased deep dish pie plate.
  • Pour 1 cup of the applesauce on top to cover.
  • Continue with another layer of crumbs, then another layer of applesauce.
  • Sprinkle the remaining portion of bread crumbs on top of the last applesauce layer and dot with 2 Tbsp butter.
  • Bake in a preheated oven at 375°F for 25 minutes.
  • Allow to cool to room temp before serving.

My grandmother Anina always made this cake for holidays - it was probably created to make use of what was on hand in hard times. I'm posting it here for safe-keeping.

Danish Applesauce Cake image

Steps:

  • Dry the bread in a low oven, when sufficiently dry crush into crumbs.
  • Melt 1/4 pound of the butter in a skillet, and add the bread crumbs. Stir to brown over medium heat. Add 1/4 cup sugar and 1/2 tablespoon cinnamon, stir to keep from sticking.
  • Pat 1/3 of the crumb mixture into a greased pie pan, smoothing down.
  • Spread over this one can of the applesauce, dot with 1/3 of the remaining butter and sprinkle half the remaining sugar and cinnamon.
  • Repeat, then finish with the last third of the crumbs. Dot with last of the butter.
  • Bake at 325 degrees for 45 minutes.
  • Cool, then turn out onto a plate and refrigerate overnight.
  • Before serving coat with whipped topping and garnish with cherries and nuts.

  • In a bowl, beat egg substitute for 1 minute on medium speed. Add applesauce, milk, oil and vanilla; mix well. Combine remaining ingredients; gradually add to applesauce mixture. Beat on medium speed for 3 minutes. Pour into a 13x9-in. baking pan coated with cooking spray. Bake at 350° for 35-40 minutes or until a toothpick inserted in the center comes out clean.

  • Preheat oven to 350 degrees. In a large bowl, whisk together flour, baking soda, salt, cinnamon, and cardamom. Set aside.
  • In another bowl, with an electric mixer, beat butter, brown sugar, and honey until light and fluffy. Add eggs, one at a time, beating until combined. With mixer on low speed, gradually add flour mixture; beat just until combined. Beat in applesauce.
  • Generously coat a nonstick 9-inch tube pan with cooking spray. Spoon batter into pan; smooth top. Bake until a toothpick inserted in the middle comes out clean (but slightly wet), 50 to 60 minutes.
  • Cool on a wire rack 10 minutes. Turn out of pan onto a cutting board or baking sheet; invert cake onto rack, top side up. Cool completely. Dust with confectioners' sugar before serving, if desired.
