CUMIN-SEARED HALIBUT WITH SWEET CORN SAUCE

Northern Pacific halibut is my fish of choice to have in the warmer months. It is a flat fish and deserves special care when handling. Since it can be a little more expensive, I save it for special occasions. The sauce relies on corn, which is very important to Native American culture and recipes. Use blue corn if you can get ahold of it. Otherwise, sweet corn is a great go-to.

Steps:

  • For the sweet corn sauce: In a medium heavy-bottomed saucepan, add the canola oil, onions, garlic, thyme, bay leaf, salt and pepper. Sweat on medium heat, stirring occasionally, until the onions are softened, 7 to 10 minutes. Add the wine, if using, and cook until it evaporates, about 5 minutes.
  • Add the corn kernels, reserved cobs and stock. Bring to a boil over medium-high heat, then reduce the heat to medium and cook for about 10 minutes.
  • For the halibut: Meanwhile, in a large plastic bag, combine 5 teaspoons of the canola oil, the cumin, lemon zest and juice, salt and pepper with the halibut fillets and allow to marinate in the refrigerator for 30 minutes.
  • Discard the corn cobs, thyme and bay leaf from the sauce. Carefully pour the mixture into a blender and puree on high speed for 4 to 5 minutes. The natural starches will activate and thicken the sauce. Pour the sauce through a fine-mesh sieve into a clean saucepan. Simmer over low heat until it reduces by half, about 15 minutes.
  • To finish the halibut, in a medium sauté pan, heat the butter and remaining 3 teaspoons canola oil over high heat until the butter melts and the oil is hot (a little smoke indicates it's ready). Place the halibut fillets in the pan skin-side up and cook until a nice crust forms on the bottoms, about 4 minutes. Carefully flip the fillets and cook 3 minutes more. Lower the heat and continue to cook until the internal temperature registers 140 degrees F, about 4 minutes. Let rest, covered with foil, for a few minutes. Serve topped with the sweet corn sauce.

2 tablespoons canola oil
1/2 small onion, chopped
1 clove garlic, minced
2 fresh thyme sprigs
1 bay leaf
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
1/2 cup white wine, optional
5 ears corn, kernels cut off, 2 cobs reserved
4 cups vegetable stock
8 teaspoons canola oil
1/2 teaspoon ground cumin
Zest of 1 lemon plus 1 teaspoon fresh lemon juice
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
Four 6- to 8-ounce halibut fillets
2 teaspoons unsalted butter

BAKED HALIBUT WITH TOMATO CAPER SAUCE

This is a pungent tomato sauce that I learned to make in Provence. It goes well with any type of robust fish.

Steps:

  • Heat the olive oil in a large, heavy skillet over medium heat, and add the onion. Cook, stirring often, until tender, three to five minutes, and add the garlic and the capers. Cook, stirring, for three to five minutes, until the onion has softened thoroughly and the mixture is fragrant. Add the tomatoes, salt, pepper and a pinch of sugar. Stir in the thyme, bring to a simmer and cook, stirring often, for 15 to 20 minutes, until the sauce is thick and fragrant. Taste and adjust seasonings. Serve hot or cold.
  • Make the sauce as directed and keep warm.
  • Preheat the oven to 450 degrees. Oil a baking dish large enough for the fish to lie flat. Season the fish with salt and pepper, and arrange in the baking dish. Drizzle the olive oil over the fillets, and place a round of lemon on each one. Cover the dish tightly with foil, and place in the oven. Bake 15 minutes. Check the fish; if you can cut into it with a fork, it is done. If it doesn't yield, (halibut fillets tend to be thick can take time to cook), cover and return to the oven for five minutes. Remove from the oven, and check again. Remove the lemon slices from the fish.
  • Place a spoonful of sauce on each plate, and place a piece of fish partially on top. Spoon some of the liquid from the baking dish over the fish. If you wish, top the fish with another spoonful of sauce, garnish with basil leaves and serve.

  • Remove the fish from the fridge while you prepare the butter. Add tomatoes to a bowl with very hot water (all of them if you are makine the pasta). Let them sit for five minutes to plump up. Pat dry with paper towels.
  • Add the tomatoes to a food processor and pulse until they’re almost the consistency of a paste. You can also do this with a knife, but the texture won’t be as fine. Add lemon zest, salt, and 1/4 cup of the butter. Blend until smooth. Season to taste with salt and pepper. Transfer to a piece of plastic and roll back into a log of butter. Chill in the fridge while you sear the halibut.
  • Heat a large cast-iron skillet to a medium-high heat. Once the skillet is hot, add the olive oil. Swirl to coat the pan.
  • While pan heats, use a very sharp knife to remove the skin if you'd like. (We leave it on to keep the fish moist, but both sides will not get crispy.) Pat the halibut dry with paper towels. Season both sides generously with salt. (Only season right before you lay the fish in the pan, otherwise the salt will bring more moisture to the top of the fish and it won't sear properly.)
