MAPLE-GLAZED TUNA WITH PEAR-POTATO SALAD

Steps:
- 1. Whisk together the mustard, maple syrup, lime juice, and 1 tablespoon of the olive oil. Set aside.
- 2. Season the tuna on both sides with salt and pepper. Heat the remaining 3 tablespoons olive oil in a large cast-iron skillet over high heat. Add the tuna and cook for 30 seconds on each side.
- 3. Remove from the pan and brush both sides of the tuna with the maple-mustard glaze. Transfer to a serving platter and garnish with the cilantro. Serve with the pear-potato salad.
SEARED TUNA
Steps:
- Preheat a grill or grill pan to high.
- Put cubed tuna in a mixing bowl with olive oil, salt and pepper. Toss to incorporate the seasoning. Skewer the tuna through the center half way down the skewer. Season again with salt and pepper. Sear on a very hot grill for 10 seconds on all sides. Cool and serve at room temperature.
BIBIMBAP WITH TUNA, SWEET POTATO, BROCCOLI RABE OR KALE, AND LETTUCE
I keep the tuna in one piece when I marinate it and cook it, then slice it after it's seared so it won't be overcooked. If you want to reduce the calories and carbs here, substitute winter squash or another vegetable of your choice for the sweet potatoes.

- Marinate the tuna. Mix together the soy sauce, sesame oil, garlic, ginger, scallions and pepper. Lay the tuna steaks in the marinade, turn over, cover and refrigerate for 30 minutes, turning the fish over every so often.
- Mix together the rice vinegar, sesame oil, garlic, scallions, sesame seeds, chili paste and salt to taste in a small bowl or measuring cup. Set aside.
- While the fish is marinating, blanch the broccoli rabe or kale. Bring a medium pot of water to a boil, add salt to taste, and blanch the broccoli rabe or kale for 2 to 3 minutes, until just tender. Transfer to a bowl of cold water, drain and squeeze out excess water. Remove from the heat and toss in a bowl with 1 tablespoon of the vinegar and sesame oil mixture. Add salt or soy sauce to taste.
- Cut the baked sweet potato into thick slices. Peel if desired. Keep warm. Toss the shredded romaine with 1 tablespoon of the vinegar-sesame mixture (or more to taste).
- Heat a wok or large, heavy skillet over medium-high heat until a drop of water evaporates immediately on contact. Add the canola oil. Sear the tuna for 2 to 3 minutes on each side, depending on how rare or cooked you like it. Remove to a plate. Cut in thin slices across the grain.
- Fry the eggs in the hot pan (or in a separate nonstick skillet) until the whites are set and the yolks are still runny. Season with salt and pepper.
- Heat 4 wide soup bowls. Place a mound of hot grains in the middle of each one and surround with the sliced tuna and vegetables, as well as kimchi if desired, each ingredient in its own little pile. Place a fried egg and a small spoonful of chili paste on top of the rice and garnish with the toasted nori and sesame seeds. Serve at once. Diners should break the egg into the rice. Pass the chili paste and add more as desired.
SEARED SOY TUNA STEAKS WITH SPRING ONIONS & A GINGER SWEET POTATO MASH

Steps:
- Add the potatoes to a pan of boiling water and cook until tender.
- Drain then put back in the pot with a knob of butter and the ginger then mash until smooth. Keep warm.
- Heat a little oil in a wide pan and add the onions. Cook for about 5 minutes until softened. Move the onions to the edge of the pan and turn up the heat. Add the tuna and cook for 1 minute each side for rare, 2 for medium. Add the soy sauce to the pan and turn the tuna and onions to coat.
- Serve the tuna topped with the onions and the mash on the side.

- Heat oven to 220C/fan 200C/gas 7 and put in a roasting tin to heat up. Put the tuna in a shallow dish with half the oil, two-thirds of the garlic and leaves from 1 sprig of thyme. Leave to marinate while you cook the veg.
- Put the potatoes, peppers, onion and chilli into the roasting tin with the remaining oil, toss to coat, then roast for 20 mins. The potatoes should be tender or very nearly there. If not, give them another 5 mins (the cooking time can depend on the variety of potato). Add the remaining garlic and thyme to the pan, let them sizzle, stir in the tomatoes, then cook for 5 mins more until the sauce has reduced a little. Season to taste.
- With a few mins to go, heat a griddle or frying pan, wipe most of the garlic marinade off the fish with kitchen paper, season, then sear for 1 min each side for medium or longer if you prefer. Serve on top of the veg.
