THE BEST SLOPPY JOES
This is weeknight comfort food at its finest. We created a homemade sauce that is tangy and flavorful but also quick and easy. We used both ketchup and canned tomato sauce for lots of tomato-y zip and just a touch of brown sugar for a bit of sweetness and slight caramel finish. Green bell pepper is a key addition; it really enhances the other ingredients, elevating the flavor profile into the realm of a true sloppy joe.

Steps:
- Melt the butter in a large skillet over medium-high heat. Add the onions and peppers and cook, stirring occasionally, until softened and starting to caramelize in some spots, 6 to 7 minutes. Add the garlic and cook, stirring, until fragrant, about 1 minute. Stir in the beef and cook, breaking up the meat with a wooden spoon or spatula, until it is browned, no longer pink in the middle and cooked through, 7 to 8 minutes.
- Stir in the tomato sauce, ketchup, brown sugar, Worcestershire sauce, mustard, red wine vinegar, paprika, cayenne pepper, 1 teaspoon salt and a generous amount of black pepper and simmer, stirring occasionally, until thickened and heated through, 5 to 6 minutes. Spoon the meat onto the toasted buns.
SEMMA'S SLOPPY JOES
This recipe came from Gourmet Magazine back in 1994. I have made this many times for get togethers, especially when there are kids. They seem to like it alot. Even adults give good comments about the sandwiches. This recipe can easily be doubled to serve more and held on low heat in a crock pot for several hours. I find the flavor is superior to the usual envelope mix most use.

Steps:
- In a large skillet sauté ground beef with onion. Stir constantly breaking up clumps. Meat should be browned taking about 8minutes. Drain off some of the fat.
- Add ketchup, vinegar, lemon juice, Worcestershire, Dijon, brown sugar and Tabasco. Bring to a simmer.
- Cook, uncovered, over low heat for about 30minutes. Stir occasionally.
- Toast hamburger buns. Divide sloppy joe mixture among hamburger buns.

EASY WEEKNIGHT SLOPPY JOES
This is found in my recipe collection under "Mrs. McCann's Barbeque". It was handed down from a neighbor of my great-aunt's sometime in the 1940's. I prefer to use ground round so there isn't so much fat. Gets better the longer it simmers.

- Cook meat slowly in skillet with salt and onion.
- Meanwhile, make sauce by mixing together all other ingredients and cooking slowly over low heat for 15 minutes.
- Drain (not much to drain if you use ground round) and add meat.
- Let simmer for at least an hour, stirring from time to time, to let meat absorb the sauce.
- Serve on toasted hamburger buns.

Despite the name of this iconic retro dish, the secret to a great sloppy joe is a thick, rich, almost dry consistency, which allows the sandwich to be eaten with your hands. Serve on hamburger buns.

- Place ground beef and onion in a large skillet. Turn heat to medium and cook and stir the mixture constantly until the beef is browned and forms small crumbles, about 10 minutes.
- Stir in garlic and green bell pepper; cook and stir until softened, 2 to 3 minutes. Add 1 cup water and stir, scraping the pan to dissolve any brown flavor bits from the bottom of the skillet.
- Mix in ketchup, Worcestershire sauce, brown sugar, Dijon mustard, salt, and black pepper. Add 1 more cup water and return mixture to a simmer. Reduce heat to low and simmer, stirring occasionally, until the liquid has evaporated and the mixture is thick, about 40 minutes.
- Season with salt , black pepper, and cayenne pepper to taste.
