Steps:
- In sauté pan heat garlic in oil on medium heat.
- Add onion and jalapeño as oil begins to warm.
- Add oregano and cumin and sauté, stirring frequently, until vegetables are tender, adding a few drops of water if they begin to stick.
- Add contents of cans of black beans and bring to a boil.
- Reduce heat and simmer for 20-25 minutes, to allow flavors to blend.
- Add chopped cilantro and lime juice and stir.
- Serve.

SUPREMELY DELICIOUS BLACK BEANS FROM SCRATCH
My favorite way to enjoy black beans is straight out of the pot after they've simmered with this simple list of heady aromatics. So easy and truly "supremely delicious."

- Place the beans in a colander and rinse under water. Wash well to rinse out any dirt clumps and pick out any tiny rocks or twigs you might see. Pour into a large soup pot or Dutch oven and cover with water to about 4 inches above the top of the beans. Set in a safe place and let sit for 8 hours or overnight.
- When it's time to cook the beans, discard soaking water by draining the beans in a colander. Give them a quick rinse. Return soaked beans to the pot and add the onion, garlic, bay leaf, and cloves. Add about 10 cups water, filled to about 4 inches above the top of the beans. Set over medium-high heat and bring to a boil. Reduce heat to medium-low and simmer, partially covered, until the beans are tender, 30-40 minutes (longer for higher altitudes). You can tell the beans are done when you blow on them and skins peel back (I also bite into a couple just to be sure!)
- Remove from heat and stir in the salt and red wine vinegar. Remove the bay leaf, bundle of cloves, and any large bits of onion and garlic you can find.
- Scoop them up with a slotted spoon to serve immediately or let then cool then spoon drained beans into airtight zipper bags to freeze for later. They also keep in the fridge in an airtight container for 3-4 days.

- Bring beans, onion, lard, epazote, and water to a boil in a 3-quart heavy pot. Reduce heat and simmer, partially covered, until beans are tender, about 1 1/4 hours. Add salt and simmer, uncovered, until enough water is evaporated so that liquid reaches just below level of beans, about 30 minutes.
- If using beans for omelet filling: Measure out 1 1/2 cups beans with a slotted spoon and 1/2 cup liquid and mash together in a bowl with a potato masher until creamy. Reserve remaining beans and liquid for another use such as black bean soup.

SIMPLE BLACK BEANS
This recipe was published in the October 2007 issue of Cuisine at Home. I found a bag of black beans in the pantry and thought this sounded like a wonderful alternative to canned black beans. This recipe can be prepared, frozen in 1 cup size packages and then defrosted and used whenever a recipe calls for canned black beans. These are far superiour in texture and flavor to canned beans.

- In a large pot, saute onion in oil over medium-high heat until the onion is soft, about 5 minutes.
- Add the garlic and thyme; cook until fragrant, 1 minute.
- Add the drained beans, bay leaves and enough water to cover beans; bring to a boil over high heat, reduce temperature to simmer, cover and cook for 40 to 50 minutes or until beans are tender but not mushy.
- Check often and add from 1 to 2 cups additional water if beans start to cook dry.
- Drain beans, remove the bay leaves and fresh thyme springs, season with salt and pepper to taste.
- Please note: Do not salt before the beans are cooked. If they are salted before they will not soften.
- When cool, divide into 1 cup servings and freeze in rigid container or vacuum pack in small bags.
