- In a Dutch oven, bring 10 cups water to a boil. Add green beans; cook, uncovered, 6-8 minutes or until tender. , Meanwhile, in a small skillet, heat oils over medium heat. Add shallot, garlic, salt and pepper; cook and stir 2-3 minutes or until tender., Drain green beans and return to Dutch oven. Add shallot mixture; toss to coat. Sprinkle with sesame seeds.

- Combine mirin, soy sauce, sesame chili oil, garlic, and sesame seeds in a small bowl. Set sauce aside.
- Heat peanut oil over medium-high heat in a large skillet. Add green beans and saute for 2 minutes, stirring frequently. Add in sauce and lower heat to medium. Continue cooking until beans have reached the desired doneness, 4 to 5 minutes more. Season with salt, if desired, before serving.

- Bring a large pot of water to a boil. Add the green beans, and cook for about 2 minutes. Drain, and immediately transfer to a bowl of ice water to stop the cooking. Drain again.
- Heat the sesame oil and vegetable oil in a large skillet over medium-high heat. Add the green beans, and fry for 2 to 3 minutes, stirring constantly. Add the garlic, shallot, salt and pepper to the beans. Cook and stir for 1 minute. Mix in the sesame seeds, cook for 1 more minute, then serve.

SESAME-GARLIC BEANS
A nice change of pace when plain, steamed or microwaved beans are getting boring -- especially if you're serving a rather simple main dish and the thought of the plate is making you yawn. But it makes up pretty enough to serve at a party. Use either butter or extra-virgin olive oil to saute the garlic according to which flavor will better complement the rest of the meal. The garlic should complement the beans rather than overwhelm them but serious garlic lovers can double it.

- Steam or microwave the beans to desired doneness (I prefer them just hot through -- more frightened than cooked). Drain if necessary.
- Saute the minced garlic in the butter or olive oil over low heat until soft but not browned.
- Toss beans with garlic mixture.
- Sprinkle sesame seeds over the beans just before serving.
- Note -- A good potluck dish if you undercook the beans slightly and have access to a microwave to reheat everything when you arrive.

These are green beans with attitude. I think I got the recipe from Vegetarian Times, and it's never missed yet when served alongside a nice piece of fish or tuna steak. I like to cook the beans early in the day so I can throw it together in a snap at mealtime. I also use more garlic.

Steps:
- Cook beans 4 minutes, transfer to ice water to stop cooking.
- Drain and dry.
- This can be done up to 8 hours in advance- store in fridge.
- Heat peanut oil in wok over high heat.
- Add garlic and stir fry until golden, about a minute.
- Transfer to paper towel to drain.
- Add green beans, salt and sesame seeds to the wok.
- Stir fry 3-4 minutes, pressing beans against side of pan so they char in places.
- Combine sesame oil and soy sauce.
- Add to pan along with the garlic from earlier.
- Heat through (less than a minute) and serve.
- These are great hot, room temperature, and even cold.
