These are so easy, and so delicious! They cook up very quickly. Tender pork with onions, peppers, garlic, lime juice...well, you get the idea. From The Recipe Hall of Fame Cookbook, with a few changes.

Steps:
- Heat the oil in a large skillet over high heat.
- Add pork, sprinkle with the salt and pepper.
- Cook, and stir constantly for 2 minutes.
- Add peppers, onion, garlic, cumin and fajita seasoning, continue to cook until the vegetables are crips-tender, about 3-4 minutes.
- Stir in the lime juice, and saute for about 2 more minutes.
- To serve, roll 3/4 cup meat mixture in each tortilla and garnish as desired.
- I like to put the meat and tortillas in a platter and bring it to the table, and let everyone make up their own.

TEX-MEX PORK FAJITAS WITH PEPPERS AND ONIONS
Spiced pork chops are grilled and thinly sliced and served with charred peppers and onions in tortillas and toppings.

- Mix together the paprika, brown sugar, chili powder, cumin, chipotle chile powder, garlic powder and 1 teaspoon salt in a small bowl. Toss the pork chops in a container with the oil and lime juice, then rub with the spice mixture. Refrigerate, covered, for at least 30 minutes up to 2 hours before cooking.
- Heat a cast-iron skillet over medium-high heat until hot. Toss the peppers and onions in a bowl with the oil, lime juice and 1 teaspoon salt. Add the pepper-onion mixture to the hot skillet and cook, stirring occasionally, until the vegetables are tender and the edges are charred, 8 to 10 minutes. Set aside.
- Prepare an outdoor grill for medium-high heat.
- Lightly brush the grill grates with oil and grill the pork chops until marked and cooked through, 4 to 5 minutes per side. Transfer to a cutting board, let rest for 10 minutes and then thinly slice.
- Serve with the warm tortillas peppers and onions, guacamole, sliced pickled jalapenos, lime wedges, shredded pepper jack cheese, salsa, chopped scallions, sour cream.

SHREDDED PORK FAJITA TACOS
A very quick and easy recipe. I actually stumbled across this by using leftovers. My family of 7 likes it so much that we have it a few times a month. Even the youngest child can join in the preparation by getting the toppings ready. A wonderful use of any type of leftover meat.

- Heat butter in a large skillet over medium heat until melted, 3 to 5 minutes. Stir in onion and green pepper; cook and stir until softened, about 5 minutes. Add shredded pork, water, and fajita seasoning; cook and stir until heated through, about 5 minutes.

Fajitas with an Oriental twist. High protein, low fat lunch or dinner. Moo shu pancakes are similar to tortillas, but they're made with rice flour. They can be found at Asian markets.

- Trim fat off pork and cut into thin strips.
- Combine pork with marinade ingredients in a zip-top plastic bag, and shake well to coat.
- Marinate in refrigerator for 20 minutes.
- Heat moo shu shells according to directions on package.
- Coat a skillet with cooking spray, and warm over medium-high heat until hot.
- Stir-fry pork for 4 minutes.
- Divide pork evenly between moo shu shells, drizzle with hoisin sauce, and roll up.

SAUSAGE FAJITAS
Sizzling fajitas are such a quick weeknight meal. I like to switch up the usual chicken or beef strips with sliced chicken sausage because it's already loaded with flavor and all you have to do is warm it in the oven! A spicy one, like jalapeño chicken sausage, adds a little heat, but green chile, garlic or roasted red pepper chicken sausage would all work well here, too.

- Preheat the broiler and line a sheet pan with aluminum foil.
- Cut the sausage into thin slices on the diagonal (1/4 to 3/8 inch thick). Place on the prepared sheet pan and broil according to the package directions (or about 9 minutes) until warmed through.
- Meanwhile, heat a 12-inch cast-iron skillet or large skillet over medium-high heat then add the oil. Add the onions and peppers. Season with the chili powder, cumin, paprika, 1 teaspoon salt and several grinds black pepper. Cook, stirring occasionally, until the onions and peppers are slightly softened and charred, 7 to 9 minutes. Add 1/2 cup water to the skillet, scraping up the browned bits from the bottom with a wooden spoon to deglaze, then stir. Reduce the heat to medium low. Add the sausage and lime juice and stir to combine.
- To warm the tortillas, turn a gas burner on medium-low heat or let a heavy skillet get very hot over medium-low heat. Place a tortilla on the flame or skillet and let char for 30 seconds to 1 minute on each side. Repeat with the remaining tortillas and wrap in a clean kitchen towel as you go to keep them warm until serving.
- Serve the sausage, onion and pepper mix in the warmed tortillas and top with guacamole, salsa, sour cream and cilantro.
YUMMY PORK FAJITAS
This recipe has been in my family for many years. Out of myself, brothers and sisters on down to nieces and nephews, someone's always making it! I hope you will enjoy it as well.

Steps:
- Slice pork into thin strips.
- Marinate strips in garlic, oregano, cumin, salt, orange juice, vinegar and hot sauce for 30 minutes.
- Heat heavy skillet or griddle until hot. Add the oil, and when it is hot, and pork strips. Stir-fry until pork is no longer pink.
- Add bell pepper and onion and cook until vegetables are limp.
- Serve on flour tortillas.
- Garnish with green onions, salsa, cheese and lettuce.
- Note: prep time includes marinade time.

SPICY SESAME CHICKEN FAJITAS
I haven't actually tried this recipe. It comes from The Well-Filled Tortilla Cookbook which was a Christmas gift. I have tried several of the dishes from the book and all have been good. Now that summer is here, I can do these on the grill.

Steps:
- Between 2 sheets of wax paper, flatten chicken breasts 1 at a time to 1/8 inch thickness using heavy saucer or other pounding device.
- (I use my wooden rolling pin for this.) Continue until all chicken breasts have been flattened, refrigerate until ready to cook.
- When ready to cook, sprinkle both sides of the chicken with sesame seeds, cayenne and salt.
- Set aside while preparing grill.
- If using a charcoal grill, allow coals to burn until they are mostly covered with white ash and a few red spots show through here and there.
- This should take about 40 minutes.
- When fire is ready, place chicken on grill and cook until no longer pink but still mosit in center, about 1-1/2 minutes on each side.
- Cut chicken into then strips.
- Serve with warmed corn tortillas, chopped avacado, shredded lettuce, salsa, sour cream.
