- Whisk 2 tablespoons lemon juice, 1 mashed anchovy fillet, 1 small grated garlic clove, 1/4 teaspoon kosher salt and a few grinds of pepper in a large bowl; let sit 5 minutes. Whisk in 2 tablespoons olive oil. Peel 2 small turnips and thinly slice on a mandoline. Toss with the dressing along with 1/2 cup fresh parsley; season with salt and pepper.

- In a small bowl, whisk the vinegar and salt until the salt dissolves. Whisk in the honey, oil and pepper.
- Using a mandoline or sharp knife, slice the turnips into paper-thin rounds. In a large bowl, combine turnips, arugula and prosciutto. Toss with the dressing. Taste and adjust seasonings if necessary.

ARUGULA WITH PROSCUITTO AND BURRATA

- Put the vinegar, mustard, egg yolk, garlic, 1 teaspoon salt, and 1/2 teaspoon pepper in a small bowl or 2-cup glass measuring cup. Slowly whisk in the olive oil, making an emulsion. Place the arugula in a large salad bowl, pour on enough vinaigrette to moisten, and toss well.
- Distribute the arugula on 4 dinner plates. Place half a burrata, cut side down, in the middle of the plate and artfully arrange the prosciutto around it (I tear each slice of prosciutto in half lengthwise). Sprinkle with salt and pepper, and serve.

- Place the arugula in a very large bowl, ideally one that could hold twice as many leaves. Drizzle over the olive oil and use your hands to toss lightly, then add the lemon juice and 1/4 teaspoon salt. Lightly toss the greens until they are evenly glossy; avoid overmixing or crushing the greens.
- Add the Parmesan and toss just to incorporate. Taste. If the salad is too sharp, add another drop of oil and toss. If the salad is dull, add a sprinkle of salt and some lemon juice and toss. Eat right away.

- In a skillet (with a lid), heat the olive oil and garlic over medium heat.
- While that heats, peel the turnips and chop them into thin strips, like tiny French fries.
- When oil is heated, add the turnips and raisins and saute for about 3 minutes.
- Pour in the lime juice and cover; let it cook for 5-10 more minutes, allowing turnips to soften.
- Meanwhile, wash and chop or tear up the spinach.
- After 5-10 minutes are up and turnips are tender, stir in the spinach and cook it until it just begins to wilt.
- Remove from heat and sprinkle with nutmeg.

- Coarsely chop chives and put in a food processor. Add olive oil and purée for 1 minute. Transfer to a squeeze bottle dispenser and set aside.
- Evenly distribute arugula onto 4 medium plates. Top with prosciutto and blue cheese.
- Peel and core pears, then cut in half. Cut each half into thin slices and add to plates in a fan shape.
- Drizzle chive olive oil over each salad and decoratively add some to the sides of the plates. Repeat with balsamic glaze.
