SHISH TAWOOK (MEDITERRANEAN CHICKEN KABOBS)
Grilled, marinated, Mediterranean-style chicken. This recipe was inspired by the Lebanese restaurant for which I used to work. Its flavor is so unique and outside the box and will have everyone trying to guess the ingredients because its flavor is so mouth watering! Goes great with a plain or bland rice pilaf. Also fatoosh or tabbouleh salad goes well with it as a side. You'll need metal skewers or a grilling basket (I prefer the basket).

Steps:
- Season chicken breasts with salt. Cut each breast into 3 to 4 pieces. Place in a large bowl; stir in garlic. Add olive oil, apple cider vinegar, red wine vinegar, white balsamic vinegar, lemon juice, red pepper flakes, allspice, sumac, and pomegranate syrup. Mix well with your hands.
- Cover chicken mixture with plastic wrap, pressing against the surface to remove any air. Refrigerate for at least 4 hours and up to overnight.
- Preheat an outdoor grill and 2 grill baskets with the cover closed for 10 minutes. Divide chicken evenly between the grill baskets. Grill until golden brown, 10 to 15 minutes per side.

SHISH TAWOOK GRILLED CHICKEN
These are served in every restaurant in the Middle East. You can easily make them at home and make them taste just as good, if not better. Don't substitute sour cream for the yogurt, as the yogurt is a meat tenderizer.

Steps:
- Whisk together the lemon juice, vegetable oil, plain yogurt, garlic, tomato paste, salt, oregano, pepper, allspice, cinnamon, and cardamom in a large bowl; add the chicken and toss to coat. Transfer the chicken mixture into a large plastic bag; refrigerate at least 4 hours.
- Preheat an outdoor grill for medium-high heat and lightly oil grate. Thread the chicken, onions, and pepper onto metal skewers. Cook on preheated grill until the chicken is golden and no longer pink in the center, about 5 minutes each side. Sprinkle the parsley over the skewers.

- 2. place chicken cubes on skewers and grill till done.

A perfect middle eastern dish! My husband couldnt get enough of it & actually wanted the leftovers the next day!!!! Also in my opinion, it's better than any restaurant i've tried in the US!! So enjoy!

Steps:
- **Prepare the marinade by mixing all of the ingredients together (except pita bread) then adding the chicken cubes into the mixture. make sure you mix it well when adding the chicken. Store in the fridge for a few hours. although you should take it out an hour before cooking. when ready to bake,set the oven on 400 degrees. place chicken on skewers then bake for 30 minutes (or until chciken looks ready).
- **Prepare the garlic spread by mixing the (garlic gloves,lemon juice & salt) in a blender. blend for 1-2 minutes.while its still blending, gradually add the veg oil & olive oil untill you start to see it thicken up. when done, add tahinah into the mixture & blend. finally,add the mayo then whip it with a spoon or fork. Place in fridge for 1 hour.
- **When making the sandwich, put the garlic spread first onto the pita bread then add chciken & any veggy you desire.
