SPINACH BEEF BISCUIT BAKE
My family is from Greece, and I grew up on Greek food like casseroles, so I combined the two in this deliciously different main dish. I've served this to both family and friends, and it's a hit with everyone.

- Press and flatten biscuits onto the bottom and up the sides of a greased 11x7-in. baking dish; set aside. , In a skillet over medium heat, cook beef and onion until meat is no longer pink; drain. , In a bowl, beat eggs. Add spinach and mushrooms; mix well. Stir in the cheeses, garlic powder, salt, pepper and beef mixture; mix well. Spoon into prepared crust. Drizzle with butter. , Bake, uncovered, at 375° for 25-30 minutes or until crust is lightly browned.

BISCUIT-CRUST SPINACH GROUND BEEF BAKE
My family loves lots of heat so I also add in 2 jalapeno peppers, seeded and finely chopped along with the dryed chili flakes, but both can be omited if desired. You can use grated cheddar cheese for the top in place of Parmesan, just sprinkle the cheddar cheese on the last 5 minutes of baking. I have made this dish using Italian sausage meat, removed from casings in place of the ground beef, I like the sausage better, but the choice is yours!

- Set oven to 375 degrees.
- Butter an 11 x 7-inch baking dish.
- In a large skillet over medium heat; add in the ground beef with onion, garlic, chili peppers and jalapeno pepper (if using) cook until meat is well browned; drain fat.
- In a large bowl mix together eggs with spinach and mushrooms; mix well to combine.
- Stir in the feta (or Monterey Jack) Parmesan cheese, seasoned salt and black pepper and the gound beef mixture; mix well to combine.
- Spoon the mixture into the preapred biscuit crust.
- Drizzle with melted butter, then sprinkle with grated Parmesan cheese.
- Bake uncovered for about 25-30 minutes.

- Preheat oven to 375°. In a saucepan over medium heat, cook beef until no longer pink; drain. Add beans, corn, soup, milk, onion, chili powder and salt; bring to a boil. CHEESY SPINACH AND BEEF CASSEROLE
Finally, a way to get even your pickiest eaters to eat their spinach! This is a filling and quick casserole that can easily be made low fat if you use ground turkey and low-fat cheese. Serve with a green salad and some french bread and dinner is served!

- In a large wok or frying pan heat oil and cook onion and garlic in a small amount of oil until transparent.
- Add spinach and cook until wilted. Set aside.
- Brown ground beef and season with garlic salt, salt and pepper to taste. Set aside.
- Combine cooked pasta, spinach, ground beef, cheese (amount to your preference, my family likes it cheesy!) and soup.
- Add salt and pepper to taste.
- Place in a large baking dish, cover in a layer of shredded cheese.
- Cover with tin foil and place in a 350°F oven for 30 minutes.
- Uncover and place back in oven for another 10 minutes.

- In a large nonstick skillet, brown the ground beef with the onion and green pepper. Drain off any excess fat.
- Stir in the tomato sauce, chili powder, and garlic salt. Let simmer.

- In a large skillet, brown the ground beef, onion and green chile pepper; drain. Stir in tomato sauce, chili powder ,and garlic salt. Simmer while preparing the biscuits.

- Preheat the oven to 350 degrees F (175 degrees C). Spray a glass baking dish (such as Pyrex®) with cooking spray.
- Heat oil in a pan over medium-high heat. Add carrots, onions, and celery and saute until onions are translucent, 5 to 7 minutes.
- At the same time, heat a large skillet over medium-high heat. Cook and stir ground beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease.
- Move beef to one side of the skillet and melt butter over medium heat. Whisk in flour a little at a time until combined; whisk in milk, whisking constantly to prevent lumps. Stir in beef broth. Add sauteed vegetables, garlic salt, onion powder, garlic powder, and black pepper. Bring to a boil; cover and remove from heat.
- Add buttermilk to baking mix. Stir until a soft dough forms. Place on waxed paper. Roll to 1/2-inch thickness. Cut with a 2 1/2-inch round biscuit cutter dipped in baking mix.
- Pour the beef mixture into the prepared baking dish and top with biscuits.
- Bake in the preheated oven until biscuits are browned, 24 to 25 minutes.
