SHOEPEG CORN CASSEROLE

Steps:

  • In a large bowl, combine the first seven ingredients. Transfer to a greased 2-qt. baking dish. Sprinkle with the cracker crumbs; drizzle with butter. Bake, uncovered, at 350° for 20-25 minutes or until bubbly.

3 cans (7 ounces each) white or shoepeg corn, drained
1 can (10-3/4 ounces) condensed cream of celery soup, undiluted
1 cup sour cream
1 cup shredded cheddar cheese
1/2 cup chopped onion
1/2 cup chopped celery
1/4 cup chopped green pepper
3/4 cup crushed butter-flavored crackers (about 18 crackers)
2 tablespoons butter, melted

Steps:

  • Preheat oven to 325F and spray a 13 x 9 baking dish with cooking spray.
  • Mix first 8 ingredients together; add pepper to taste.
  • Pour into prepared baking dish.
  • Mix butter and Ritz crackers together; sprinkle evenly over top of casserole.
  • Bake uncovered for 45 minutes, or until bubbly and golden brown.

1/2 cup sharp cheddar cheese, grated

1 (16 ounce) package buttery crackers, crushed (preferably Ritz crackers)

Everybody loves this at the holidays. It's a rich dish full of flavor. I make it about twice a year at Thanksgiving and Christmas.

Steps:

  • 1. Mix together the first 8 ingredients. Plus add the salt & pepper.
  • 2. Place mixture in a 9/13 greased casserole dish. I usually spray mine with cooking spray, typically Pam.
  • 3. Melt butter and mix with Ritz crackers and spread that on top of the casserole.
  • 4. Bake at 350 degrees for 45 minutes .

1/2 c chopped onion
1/2 c chopped celery
1/4 c green bell pepper
1/2 c sharp cheddar cheese grated
1-2 can(s) shoe peg corn
1 can(s) cream of celery soup
1/2 pt sour cream
1 stick butter, melted
1 sleeve of ritz crackers
