COCONUT BARBECUED RIBS

Coconut Barbecued Ribs image

Steps:

  • Rinse ribs. Pat dry. Place steamer rack in heavy large Dutch oven; add water to just below rack and bring to simmer. Place ribs on rack, cover and steam until tender, about 20 minutes. Remove ribs from over water and cool.
  • Combine coconut milk, cilantro, brown sugar, shallots, soy sauce, garlic, ginger, lemongrass and salt in processor and process until almost smooth. Transfer marinade to 15 x 10 x 2-inch glass baking dish. Add ribs and turn to coat. Cover and refrigerate overnight.
  • Prepare barbecue (medium-high heat) or preheat broiler. Remove ribs from marinade; reserve marinade. Grill or broil ribs until golden brown, turning occasionally, about 8 minutes. Transfer to platter. Tent with foil to keep warm.
  • Transfer marinade to heavy small saucepan. Boil marinade 1 minute.
  • Serve ribs with marinade.

4 pounds baby back pork ribs, cut into individual ribs.
1 cup canned unsweetened coconut milk (available at Southeast Asian markets)
1/2 cup chopped fresh cilantro
1/2 cup (packed) golden brown sugar
1/3 cup (packed) chopped shallots
1/4 cup soy sauce
3 tablespoons chopped garlic
2 tablespoons chopped peeled fresh ginger
2 stalks lemongrass, (available at Southeast Asian markets) chopped
1 teaspoon salt

FAST AND EASY SLOW-COOKED SHORT RIBS

Few ingredients, under 3 minutes, and come back to a finished dinner. Fresh rosemary is best, but dried works just fine too.

Steps:

  • Place short ribs into a slow cooker; top with French onion soup. Season mixture with salt and pepper. Pour chili sauce over exposed parts of ribs; sprinkle with rosemary.
  • Cook on Low for 8 to 10 hours.

  • Season meat with 1/2 tsp. salt. Preheat oven to 325ºF. In a 5- to 6-quart Dutch oven heat oil over medium-high. Cook ribs in batches 3 to 5 minutes on each side until deep brown. Transfer to plate.
  • Reduce heat to medium. Add shallot, ginger, lemongrass, and garlic; cook 1 minute. Stir in curry paste and brown sugar; cook 1 minute. Stir in coconut milk and fish sauce; bring to a simmer. Return ribs and juices to pot, meat side down. Cover; braise in oven 2 to 2 1/2 hours or until meat is fork-tender.
  • Transfer meat to a platter; keep warm. Skim fat from braising liquid. Bring liquid to a simmer over medium-high. Add bok choy; simmer 2 to 3 minutes or until just tender, turning once. Transfer bok choy to platter with meat. Pour liquid over. Serve with mint and lime wedges. Makes 4 to 6 servings.
