SHORTBREAD
I live in Missouri, but many family recipes come from New Zealand where I was born. My parents moved there when I was a year old, so I have a "Down Under" heritage. This easy shortbread recipe brings back warm memories of my childhood, and I'm going to make sure they're passed on to the next generation in my family...no matter where they live! -Allen Swenson, Camdenton, Missouri

Steps:
- Preheat oven to 325 degrees. Butter an 8 1/2-inch round cake or springform pan. Sift together flour and salt in a small bowl. In a large bowl, with an electric mixer on medium, cream butter until fluffy, 3 to 5 minutes. Add sugar, and continue to beat until very light in color and fluffy, scraping down sides of bowl as necessary, about 2 minutes more. Add flour mixture, and beat on low, scraping bowl if necessary, until flour is just incorporated and dough sticks together when squeezed.
- Pat dough into prepared pan. Use a paring knife to score dough into wedges; prick all over in even intervals with a wooden skewer or fork.
- Bake until firm in the center and just starting to color, about 50 minutes. Transfer pan to a wire rack, and let cool completely. Cut into wedges. Cookies will keep, in an airtight container, at room temperature 3 weeks.

Steps:
- Heat the oven to 180C/160C fan/gas 4. Lightly grease and line a 20-22cm square or rectangular baking tin with a lip of at least 3cm.
- To make the shortbread, mix 250g plain flour and 75g caster sugar in a bowl. Rub in 175g softened butter until the mixture resembles fine breadcrumbs.
- Knead the mixture together until it forms a dough, then press into the base of the prepared tin.
- Prick the shortbread lightly with a fork and bake for 20 minutes or until firm to the touch and very lightly browned. Leave to cool in the tin.
- To make the caramel, place 100g butter or margarine, 100g light muscovado sugar and the can of condensed milk in a pan and heat gently until the sugar has dissolved. Continually stir with a spatula to make sure no sugar sticks to the bottom of the pan. (This can leave brown specks in the caramel but won't affect the flavour.)
- Turn up the heat to medium high, stirring all the time, and bring to the boil, then lower the heat back to low and stirring continuously, for about 5-10 minutes or until the mixture has thickened slightly. Pour over the shortbread and leave to cool.
- For the topping, melt 200g plain or milk chocolate slowly in a bowl over a pan of hot water. Pour over the cold caramel and leave to set. Cut into squares or bars with a hot knife.

- Preheat the oven to 325°F (163°C). Line the bottom and sides of a 9×13 baking pan* with parchment paper, leaving an overhang on the sides to lift the finished bars out (makes cutting easier!). Set aside.
- Mix the melted butter, sugar, vanilla extract, and salt together in a medium bowl. Add the flour and stir to completely combine. The dough will be thick. Press firmly into prepared pan, making sure the layer of crust is nice and even. Bake for 20-22 minutes or until the edges are lightly browned. Remove from the oven. Using a fork, poke holes all over the top of the warm crust (not all the way through the crust). A new step I swear by, this helps the filling stick and holds the crust in place. Set aside until step 4.
- Sift the sugar and flour together in a large bowl. Whisk in the eggs, then the lemon juice until completely combined.
- Pour filling over warm crust. Bake the bars for 22-26 minutes or until the center is relatively set and no longer jiggles. (Give the pan a light tap with an oven mitt to test.) Remove bars from the oven and cool completely at room temperature. I usually cool them for about 2 hours at room temperature, then stick in the refrigerator for 1-2 more hours until pretty chilled. I recommend serving chilled.

12 BEST SHORTBREAD RECIPES - THE SPRUCE EATS
From thespruceeats.com
- Classic Shortbread. You know what they say: If it ain't broke, don't fix it. These three-ingredient shortbread squares get their satisfying texture from pricking them all over with a fork before baking.
- Chocolate Shortbread Cookies. For those who just don't consider a dessert worth it unless it contains chocolate, this shortbread will hit the spot. The dough also freezes well, so make half now and save the other for a quick treat later.
- Peanut Butter Shortbread Cookies. Combine two classic cookie flavors with this peanut butter shortbread recipe. This one also contains no eggs, making it great for those with food allergies.
- Butter Pecan Shortbread Cookies. Fans of butter pecan ice cream or Keebler sandies will love these shortbread cookies that have a similar taste. Sprinkling with coarse or vanilla sugar would add a little extra crunch, but they taste great without too.
- Three-Ingredient Shortbread. You read that right: all you need for a buttery basic shortbread is three ingredients and an oven. A food processor would make mixing the butter into the sugar and flour easier, but a pastry blender works too.
- Keto Shortbread Cookies. Using keto-friendly almond flour and a sugar substitute like Stevia means you can still enjoy a sweet treat while following the popular diet.
- Cardamom Pistachio Shortbread Cookies. Give basic shortbread cookies extra excitement by adding warming cardamom and nutty pistachios in a recipe that's reminiscent of the Middle Eastern version, called Ghoraibi.
- Mexican Tea Cakes. With the taste and texture of a shortbread cookie but shaped like a drop cookie, you may also know these holiday favorites as butternut cookies, sand cookies, or Mexican wedding cakes.
- Maple Shortbread Cookies. With the signature sweetness of maple syrup, these butter cookies taste just right for a crisp winter's day. If you don't have a leaf-shaped cutter, you can also roll and slice them but allow for plenty of time for chilling so the cookies keep their shape.
- Scottish Shortbread. Adding cornstarch to this basic shortbread recipe makes the cookies crispy on the edges while staying soft and crumbly in the center.
