SHRIMP COCKTAIL SPREAD
This is from an old Best of Bridge cookbook that has been served at many parties and is always the first thing to be gobbled up. If you run out of crackers people will eat it with spoons! You can use light versions of cream cheese and mayo but I can't tell you what the results would be like. Feel free to add another can of shrimp if you want it shrimpier.

Steps:
- Mix the cream cheese, sour cream and mayo together till smooth. Spread onto a 12" serving platter or pie dish.
- Cover evenly with seafood sauce.
- Sprinkle evenly with mozzarella, then with shrimp.
- Top evenly with green onion, tomato and green pepper.
- Cover and chill until ready to serve - any kind of cracker or tortilla chips will be good.
SHRIMP COCKTAIL WITH DIPPING SAUCES

- For the shrimp cocktail: Add the parsley stems, peppercorns, garlic, lemon, shallot, 2 teaspoons salt and 3 quarts water to a large stockpot and stir to combine. Bring to a boil over high heat. Prepare an ice water bath.
- Add the shrimp to the boiling water and cook just until opaque, 1 to 2 minutes. Remove the shrimp and shock in the ice water bath for 5 minutes. Drain the shrimp and refrigerate until ready to serve. Reserve the parsley leaves for the peppercorn remoulade sauce.
- For the peppercorn remoulade sauce: Combine the mayonnaise, green peppercorns, brine and sugar in a small bowl. Chop the reserved parsley leaves and stir into the remoulade. Store in an airtight container in the refrigerator until ready to serve.
- For the "bloody" cocktail sauce: Combine the ketchup, horseradish, celery seed and Worcestershire sauce in a small bowl. Store in an airtight container in the refrigerator until ready to serve. This can be prepared up to 2 weeks in advance.
- Serve the chilled shrimp over crushed ice with the dipping sauces alongside.
FANTASTIC SHRIMP COCKTAIL SPREAD!
This is a huge favorite at my get togethers, it's the perfect spread with crackers, it's easy to put together just layer and serve. It can be prepared hours in advance and refrigerated until serving time. Once your guests try this everyone will want the recipe it's *that* good!--- 2 cups fresh cooked baby shrimp can be used in place of the canned, but canned is much easier, you will love this! :)

- Prepare about one 12-inch dish or a glass pie or a fancy quiche plate.
- In a bowl, combine/whisk together the softened cream cheese, sour cream garlic (if using) and mayonnaise; spread into bottom of prepared dish.
- Scatter the shrimp over the sour cream mixture.
- Top with the cocktail sauce (you can use more than 1 cup if desired) then the mozzarella cheese, green peppers, chopped tomatoes, and last the chopped green peppers on the top.
- Cover, and refrigerate until ready to serve.
- Serve with crackers.

I first tried something similar to this in San Antonio and could never find a recipe that really recaptured what I had there. I experimented and finally came up with this. Anyone who has tried it has begged for the recipe. Try it with tortilla chips!

- Place the shrimp in a large bowl. Stir garlic, red onion, and cilantro. Mix in tomato and clam juice cocktail, ketchup, lime juice, hot pepper sauce, and horseradish. Season with salt. Found this in Kraft Foods Magazine and sounds easy great for when companies coming. Once I pick up all the ingredients I plan on making it as a dip that's just a little different. Also suggested a substitute of 1 8oz package of chopped crabmeat for the shrimp. Will serve with crackers. Edited to change amount of shrimp to 3/4 pound based on flowers post.
