Steps:

  • For Shrimp: Arrange Shrimp on serving platter, cover and refrigerate until serving.
  • For Spicy Lemon Pepper Dipping Sauce: In medium bowl, combine all ingredients. Whisk thoroughly. Pour into small serving bowl.
  • Serve chilled shrimp with dipping sauce on the side.

1/4 cup mayonnaise
1/4 cup sour cream
1 tablespoon hot sauce, preferably Sriracha
2 teaspoon lemon pepper seasoning, salt free
1 teaspoon lemon juice

Shrimp Cocktail with Rocoto Chile Dipping Sauce image

Steps:

  • Prepare the cocktail sauce in a large bowl. Combine the chili sauce, ketchup, lemon juice, sugar, Worcestershire sauce, horseradish, rocoto chile paste, and cilantro, mix well with a rubber spatula, and set aside.
  • In a large saucepot, fill with water and add the pickling spices, lemon halves, and hot pepper sauce and a generous amount of salt and pepper. Bring to a boil. Skewer the shrimp, from tail to top, 5 per skewer, and add the shrimp to the boiling water. Cook for 5 minutes, remove from the water, plunge into an ice bath, and refresh for 5 minutes until the shrimp are completely cool.
  • Serve on a platter with a bowl of the dipping sauce in the middle.

1 1/2 cups prepared chili sauce (store bought)
1 1/2 cups ketchup
1 lemon, juiced, plus 2 lemons, halved
1 tablespoon sugar
2 tablespoons Worcestershire sauce
1/2 cup prepared horseradish
2 tablespoon rocoto Peruvian chile paste
1 tablespoon chopped cilantro
4 tablespoons pickling spices
2 tablespoons hot pepper sauce
Salt and freshly ground black pepper
10 (jumbo or U-10 size) shrimp, peeled and deveined, with tail still attached

Chipotle Honey Dipping Sauce (For Shrimp Cocktail) image

Steps:

  • In a small saucepan, bring chiles, tomato, water, onion, garlic and salt to a boil and reduce to a simmer. Cook, slowly, covered for 15 minutes.
  • Puree mixture in a blender (or use an immulsifier) until smooth. Stir in the honey and vinegar. Serve at room temperature as a dipping sauce with shrimp.

2 chipotle chiles, stemmed seeded and chopped
1 tomatoes, chopped (or 12 oz canned)
1/2 onion, chopped
1 garlic clove, peeled and crushed
1/2 cup water
1 teaspoon salt
1/4 cup honey
2 tablespoons vinegar (red wine vinegar)

SHRIMP COCKTAIL DIPPING SAUCE

This is a little different from the traditional shrimp cocktail sauce. You may add more lemon if you prefer, more/less curry, and more/less Tobasco sauce as you please. I hope you enjoy this. This is pretty much a "dump" recipe & then blend all ingredients together. The recipe makes a bunch, about 5 cups or so, so i divide recipe into small containers & freeze if we're not entertaining a large group. It does keep well in the frige. Do not use Miracle whip in this recipe.

  • Mix all ingredients together. Let set in frige several hours so all ingredients get happy together. Serve with chilled cooked shrimp. I also use this to dip with imitation crab.
