We've been making this recipe for over twenty years. It was a favorite potluck appetizer recipe shared by a previous co-worker.

Steps:
- Make one day ahead.
- Let cream cheese rest at room temperature until soft.
- Mash all ingredients together (a potato masher works great).
- Chill before serving, at least one day.

CREAMY SHRIMP SCAMPI DIP
This rich, garlicky dip caused a feeding frenzy in the Food Network test kitchen. We've taken a beloved shrimp-and-pasta dish and made it into a creamy, crowd-pleasing appetizer. You can make it ahead to take to a nearby potluck, then ask your host if you can borrow some oven space to quickly bake it.

- Position an oven rack in the top position, and preheat the oven to 375 degrees F.
- Beat the cream cheese, mozzarella, sour cream, mayonnaise, Parmesan, 2 tablespoons of the breadcrumbs and 1/2 teaspoon salt in a large bowl with an electric mixer on medium high until smooth. Cover and refrigerate until ready to add the shrimp.
- Melt 2 tablespoons butter in a large skillet over medium-low heat. Add the shrimp, garlic, 1/4 teaspoon salt and the red pepper flakes, and cook, stirring frequently, until the shrimp just start to turn pink, about 2 minutes. Add the wine, bring to a simmer and cook until the shrimp are pink and cooked through, about 2 minutes (there will be some liquid left in the skillet). Remove the skillet from the heat, and let the shrimp cool completely.
- Meanwhile, mix together the parsley, the remaining 2 tablespoons breadcrumbs and 1 tablespoon melted butter, the lemon zest and a pinch of salt in a small bowl.
- Stir the shrimp, pan sauce and cream cheese mixtures together to combine; transfer to a 2-quart flameproof baking dish. (The dip and breadcrumb mixture can be covered and refrigerated overnight separately at this point.) Sprinkle the breadcrumb mixture over the dip, and bake until hot and bubbly, 15 to 20 minutes. Switch the oven to broil, and cook until the top is golden brown, 1 to 3 minutes. Let rest for a few minutes, then serve hot with bread and/or crackers.
NEW ORLEANS BARBECUE SHRIMP DIP
This super-flavorful dip is inspired by the spicy shrimp dishes of New Orleans.

- Special equipment: 5-cup broiler-safe casserole dish
- Melt 4 tablespoons of the butter in a large skillet over medium heat. Whisk in the chili sauce, lemon juice, garlic, Worcestershire, cayenne, oregano, paprika and hot sauce. Bring to a low simmer and cook, stirring frequently, until slightly reduced, about 5 minutes. Add the shrimp and cook until they are pink and just cooked through, flipping once, 4 to 5 minutes. Remove from the heat and let cool.
- When cool, place the shimp mixture in a food processor and pulse until roughly chopped. (The shrimp mixture can be made up to a day in advance and refrigerated.)
- Combine the cream cheese and sour cream in a large bowl and stir vigorously with a rubber spatula until smooth. Add the shrimp mixture, scallion whites, parsley, 1 1/4 teaspoons salt and a few grinds of pepper and stir to combine. Place in a 5-cup broiler-safe casserole dish and spread evenly.
- Melt the remaining 4 tablespoons of butter and pour over the top of the shrimp dip, making sure to cover the entire surface with a thin layer of butter. Sprinkle with the scallion greens. Chill for at least 4 hours and up to overnight.
- Just before serving, position an oven rack in the top third of the oven and preheat the broiler. Broil the dip until the butter layer just begins to melt. Serve with the crackers and crunchy bread.
SHRIMP DIP WITH CREAM CHEESE
This tasty spread, prepared with softened cream cheese, is a beautiful pale salmon color. A teaspoon of Worcestershire sauce provides just the right amount of zest.

Steps:
- Mix onions, green peppers& mayo in bowl and set aside.
- Over medium heat in medium size pot mix until creamy and well blended cream cheese& tomatoe soup (No cream cheese lumps).
- Rinse both cans of shrimp well under water, set aside to allow water to drip off.
- In small bowl mix warm water and Gelaton until dissolved.
- Once tomatoe soup and cream cheese is well blended add all ingredients to the pot, mix well.
- Put shrimp dip into a nice serving bowl (the one you'll serve the dip in) that can be refrigerated.
- Refrigerate until the dip is completely chilled.
- When the dip is done it will be hard as jello.
- Serve with a HARD cracker, seasame crackers,trisciuts, etc.
- A cracker that wont break when you dip into it.

- Fit a large saucepan with a steamer basket, and fill with 1 inch water; cover and bring to a boil. Add shrimp; cover and cook, tossing once, until opaque throughout, 30 seconds to 4 minutes (depending on size of shrimp). Immediately transfer to a colander, and run under cold water to stop cooking. Pat shrimp dry with paper towels, then finely chop.
- In a medium bowl, combine shrimp, sour cream, mayonnaise, scallions, parsley, and lemon zest and juice; season with salt and pepper. - Place cream cheese in a mixing bowl; cream with a fork. Add sour cream and mayonnaise. Whisk with a fork until mixture is well combined and smooth.
