SHRIMP SAUTE MEXICALI

This dish as printed is not overly spicy. You can up the heat by adding more cayenne pepper and crushed red pepper. I have not made this yet but wanted to be sure to save. The original comes from the Taos Recipe cookbook. Time does not include time to cook rice.

Shrimp Saute Mexicali image

Steps:

  • In a large skillet heat olive oil over medium-high heat.
  • Add tomatoes through salt and pepper mixing ingredients together and saute for 2 to 3 minutes.
  • Add the shrimp and saute them just until they turn pink. Add the Madeira and orange juice and deglaze the pan. Cook for an additional 2 to 3 minutes or until the liquid is reduced by half.
  • Add the butter and swirl it in so that the sauce thickens.
  • Serve over rice and garnish with the toasted slivered almonds.

3 tablespoons olive oil
1/2 cup tomatoes, chopped
1/3 cup green bell pepper, chopped
1/3 cup red onion, chopped
1/4 cup black olives, sliced
1/4 cup green olives, sliced
1 tablespoon garlic, minced

3 tablespoons dried currants
1/8 teaspoon ground cloves
1/8 teaspoon ground cinnamon
1/8 teaspoon cayenne pepper
1/2 teaspoon crushed red pepper flakes
1/2 teaspoon cumin
1/2 teaspoon ground coriander
salt, to taste
fresh ground pepper, to taste
1 1/2 lbs shrimp, shelled and deveined
1/4 cup madeira wine
1/3 cup orange juice
2 tablespoons butter
4 cups cooked rice
1/4 cup slivered almonds, toasted

AUTHENTIC MEXICAN SHRIMP COCKTAIL (COCTEL DE CAMARONES ESTILO MEXICANO)

I prepare this refreshing shrimp cocktail for my family a lot during the hot summer days. Being a Mexican family, we always add Mexican hot sauce (such as Valentina® or Tapatio®) and serve with saltine crackers on the side. The trick is to start with well-chilled shrimp, ketchup, and tomato juice cocktail so it can be ready after only chilling 1 hour in the fridge. Top with additional hot sauce and avocado slices if desired. Enjoy!

Authentic Mexican Shrimp Cocktail (Coctel de Camarones estilo Mexicano) image

Steps:

  • Mix onion with lime juice in a small bowl and allow to stand for 10 minutes. Meanwhile, toss shrimp, roma tomatoes, cucumber, celery, jalapeno, salt, and black pepper in a bowl until thoroughly combined.
  • Whisk tomato and clam juice cocktail, ketchup, cilantro, and hot pepper sauce in a separate bowl; stir dressing into shrimp mixture. Gently fold in avocados. Cover and chill thoroughly, at least 1 hour.

Steps:

  • Squeeze lemon over shrimp and set aside.
  • Heat olive oil over medium heat. Add onion, celery, and garlic. Season with salt and pepper and cook until tender, about 5 minutes. Stir in rosemary, basil, oregano, coriander, and bay leaf. Add white wine and Worcestershire sauce; cook until sauce is slightly reduced and flavors come together, 8 to 10 minutes.
  • Add shrimp to the sauce and cook until pink, 5 to 7 minutes more.

  • Defrost (if necessary), peel and devein the shrimp. Put the shrimp back in the bowl you defrosted them in but without the water. Cut a lime in half and squeeze the juice in with the shrimp. Put the lime rinds in the bowl and mix it up. Set it aside while you get the veggies ready.
  • A chopping jalapeños tip. Cut it in half lengthwise and grab the stem as you scrap out the seeds and the white stuff. The more you avoid touching the seeds and white ribs the less traces of hot stuff on your hands. Cut off the stem end and cut them lengthwise into strips then crossways for chopped.Core and seed a Roma tomato or half of a big old regular tomato. Then chop it just like you did the jalapeño. Chop about a quarter of a medium size onion, 4 garlic cloves and coarsely chop a big handful of cilantro leaves.
  • Put a skillet on at medium. Add about a tbsp. of olive oil and a tbsp. of butter. When the butter stops bubbling add the shrimp all laid out laying on their sides. As soon as the pan side turns pink. Less than a minute. Turn them over and just pink on the other side. Don't worry about them not cooking all the way through at this point. They are going to finish cooking in the sauce. Take out the shrimp and put them aside in a plate to catch any drippings.
  • Put the heat up to medium high and put another tbsp. of butter in the pan. The jalapeño and the onion are going to take the longest to cook so they go in first. A pinch each of salt and pepper. Mix them up with a wooden spoon scraping the bottom of the pan to get the bits of shrimp mixed in with the butter. As soon as the onion starts to get translucent add the tomato and the garlic. Squeeze the juice from another lime in. As soon as the tomato starts to wilt add the cilantro.
