Shrimp and Cheese Grits image

Steps:

  • For Shrimp:.
  • Over medium heat cook bacon in a large nonstick skillet for 10 minutes or until crisp; remove bacon, crumble, and drain on paper towels, reserving 1 tsp drippings in skillet.
  • Peel shrimp and devein, if desired.
  • Sprinkle shrimp with salt and pepper; then dredge in flour.
  • Sauté mushrooms in hot bacon drippings with oil in skillet 5 minutes or until tender.
  • Add green onions, and sauté 2 minutes.
  • Add shrimp and garlic, and sauté 2 minutes or until shrimp are lightly browned.
  • Stir in chicken broth, lemon juice, and hot sauce, and cook 2 more minutes, stirring to loosen particles from bottom of skillet.
  • Spoon shrimp mixture over hot Cheese Grits; sprinkle with crumbled bacon.
  • For Cheese Grits:.
  • Bring first 3 ingredients and 1 1/3 cups water to a boil in a medium saucepan over medium-high heat; gradually whisk in grits. Reduce heat to low, and simmer, stirring occasionally, 10 minutes or until thickened. Stir in Cheddar cheese and next 3 ingredients.

Steps:

  • In a medium saucepan,bring chicken broth and milk to a boil.
  • Stir in grits and salt;return to a boil.
  • Reduce heat to low and cover.
  • Cook 5 minutes until thickened, stirring occasionally.
  • Stir in cheddar cheese.
  • Keep warm.
  • Cook bacon in a large skillet until crisp.
  • Remove bacon and set aside.
  • Drain all but 2 tablespoons of bacon drippings from skillet.
  • Add shrimp, peppers and onions;cook over medium heat until vegetables are tender and shrimp is no longer pink.
  • Stir in bacon.

Cheesy Shrimp and Grits image

Steps:

  • Bring water to a boil in a pot. Add salt and pepper. Stir in grits; reduce heat and let simmer until water is absorbed, 20 to 25 minutes. Remove from heat and stir in Cheddar cheese and butter.
  • Rinse shrimp and pat dry.
  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels.
  • Heat remaining bacon grease in the skillet over medium heat. Cook shrimp until they are bright pink on the outside and the meat is opaque, 3 to 4 minutes. Add bacon, scallions, parsley, garlic, and lemon juice. Saute for 3 minutes.
  • Spoon grits into a serving bowl. Add shrimp mixture and mix well. Serve immediately.

Sausage, Shrimp and Peppers over Cheesy Grits image

Steps:

  • For the grits: Bring the chicken stock, the cream and butter to a simmer in a heavy saucepan. Gradually whisk in the grits. Reduce the heat and simmer until the grits have thickened, 15 to 20 minutes, stirring occasionally to avoid lumps. Once the grits are thick and creamy, stir in the cheeses and adjust the consistency with stock and/or cream and season with salt and pepper. These grits provide a wonderful bed to soak up the flavor from the sausage, shrimp and veggies.
  • For the sausage, shrimp and peppers: Heat the olive oil in a large skillet. Add the sausages and brown. Then transfer to a plate with a slotted spoon, leaving all of the fat in the skillet. Add the garlic, bell peppers and onions to the skillet, sprinkle with salt and pepper and saute until tender, 5 to 7 minutes. Add the shrimp and saute until they begin to turn pink, 1 to 2 minutes. Add the reserved sausage and the chicken stock to the skillet and let reduce a bit to intensify those flavors. Stir in the butter at the end and garnish with parsley.
  • Serve the sausage mix over the grits.

Crispy Cajun Shrimp and Cheesy Grits image

Steps:

  • Heat 2 tablespoons of the butter in a saucepan over medium heat until melted. Add the corn and scallion whites and saute for 5 minutes. Season with salt and pepper. Add 1 cup water. Using an immersion blender, blend the mixture until smooth. Add the stock and milk and bring to a simmer.
  • Slowly rain in the grits while whisking vigorously. Bring to a simmer and keep at a light simmer while stirring constantly, about 15 minutes. Add the cheese and remaining 2 tablespoons butter and whisk until smooth. If the grits are too tight, add a bit more water to loosen them up. Season to taste.
  • Meanwhile, heat the oil in a heavy-bottomed pot until a deep-frying thermometer registers 350 degrees F. Fry the shrimp until crispy, 3 to 5 minutes. Drain on a paper towel-lined plate.
  • Toss the hot crispy shrimp with the warm Cajun Butter. Spoon the shrimp over bowls of grits with some of the butter. Slice the reserved scallion greens very thinly on the bias and sprinkle on top.
  • Mix the paprika, sugar, cayenne, celery seed, garlic powder, onion powder, oregano, thyme, salt and pepper together in a bowl. Heat a 12-inch nonstick skillet over medium heat. This is a favorite recipe around my house. I found it originally on foodtv.com as one of Emeril's recipes. It's definitely more of a winter dish as it's filling and comforting. You may use vegetable stock but if you can use shrimp stock or seafood base dissolved in water.

Steps:

  • In a saucepan, over medium heat, add the milk and butter.
  • Season with salt and white pepper.
  • Bring the liquid to a boil.
  • Slowly stir in the grits.
  • Reduce the heat to medium low and continue to cook for about 1 hour or until the grits are tender and creamy, stirring every 10 minutes to prevent the grits from sticking.
  • Add some water during the cooking process if the liquid evaporates too much.
  • Remove from the heat and stir in the cheese.
  • Re-season with salt and white pepper if needed.
  • Set aside and keep warm.
  • In a sauté pan, over medium heat, heat the oil.
  • Add the sausage and render for 2 minutes.
  • Add the garlic and sauté for 30 seconds.
  • Season the shrimp with salt and black pepper.
  • Add the shrimp and continue to sauté for 2 minutes.
  • Remove the pan from the heat and add the sherry.
  • Place the pan back over the heat and flame the sherry, (optional- I'm chicken so I just allow it to boil for a minute) shaking the pan back and forth several times until the flame dies out.
  • Remove the shrimp from the pan and set aside.
  • Add the stock and bring the liquid to a boil.
  • Reduce the heat to medium low and mound in the butter.
  • Add the shrimp back to the sauce and simmer for 2 minutes.
  • Remove from the heat and stir in 2 teaspoons of the parsley.
  • To serve, spoon the grits in the center of each shallow bowl.
  • Spoon the shrimp mixture over the grits.
  • **Note:For shrimp stock, when I fix boiled shrimp I save the liquid for this recipe.
  • I also use the quick cooking grits and adjust the quantities to those listed on the box.
