This is a very lightly sauced pasta with lemon and shrimp. It's refreshing as well as filling.

Lemon Shrimp Pasta image

Steps:

  • Bring a large pot of lightly salted water to a boil.
  • Meanwhile, heat oil in a pan over medium heat. Coat shrimp with salt and pepper. Cook and stir shrimp in the hot oil until opaque, about 2 minutes per side.
  • Cook linguine in the boiling water until tender yet firm to the bite, 1 to 3 minutes.
  • Combine lemon zest and juice in a small saucepan over medium heat and bring to a simmer. Sprinkle in parsley and stir in butter until melted. Add 2 tablespoons of the pasta cooking water and stir. Drain pasta. Add shrimp to the lemon sauce. Mix pasta, shrimp, sauce, and Parmesan cheese together in a large serving bowl.

Steps:

  • Heat 1 tbsp olive oil in large skillet over high heat.
  • Add shrimp, red pepper flakes and salt, cook stirring for ONLY 1 minute until shrimp is opaque (DO NOT COOK MORE THAN 1 MIN, SHRIMP WILL OVERCOOK).
  • Add wine, boil for 30 seconds.
  • Transfer shrimp and wine to bowl.
  • Reduce heat to medium-high, heat remaining 2 tbsp oil in same skillet.
  • Add onions, cook for 6-7 minutes until lightly browned.
  • Stir in garlic; cook 30 seconds.
  • Add tomatoes, breaking up with spoon.
  • Bring to a boil, boil 5 minutes, stirring occasionally.
  • Stir in shrimp, cook for 1 minute.
  • Toss with fusilli and parsley in large bowl.

Steps:

  • Heat the oil in a heavy large skillet over medium heat. Add the shallots and garlic and and saute until translucent, about 2 minutes. Add the red pepper flakes and white wine and bring to a simmer. Simmer until the wine reduces by half, about 5 minutes. Add the shrimp and cook just until they are pink, about 2 minutes.
  • Meanwhile, cook the fusilli in a large pot of boiling salted water until just tender but still firm to the bite, stirring occasionally, about 8 to 10 minutes.
  • Drain the fusilli. Add the fusilli and arugula to the skillet. Toss to combine. Season the pasta, to taste, with salt and pepper. Transfer the pasta to a large bowl and serve.

Steps:

  • Place cheese in freezer for around 45 minutes.
  • Meanwhile, preheat oven to 400 degrees F.
  • Drizzle shrimp with olive oil in a large bowl. Sprinkle with salt and pepper and toss to coat. Spread on a baking sheet and bake, rotating once, until just cooked through, 7 to 9 minutes.
  • When shrimp are cool enough to handle, remove and discard peels and tails. Cut shrimp into thirds.
  • Shred cheese using the large holes on a box grater.
  • Spread 1 tablespoon mayonnaise on one side of a tortilla. Place tortilla, mayo-side down, in a large skillet. Sprinkle half the cheese evenly over the top of the entire tortilla, then turn heat on to medium-low heat. While pan is heating, sprinkle half of the chopped shrimp, half of the roasted red peppers and half of the cilantro on one half of the tortilla, leaving the other half with just cheese. Let quesadilla cook, checking that the bottom of the tortilla doesn't burn, until cheese is mostly melted, 3 to 5 minutes. Remove skillet from heat and carefully fold the quesadilla in half like a book, folding the cheese side over the toppings. Place quesadilla on a plate and let rest 5 minutes. Repeat with second tortilla and ingredients. Cut into wedges before serving.

Hawaiian Garlic Shrimp Scampi image

Steps:

  • Separate garlic cloves into a bowl and place another bowl on top. Shake until all of the peels are knocked off the cloves, about 30 seconds, being careful not to shake too hard. Chop peeled cloves into relatively small pieces.
  • Melt butter in a saute pan over medium heat and add chopped garlic. Cook, stirring occasionally, until golden brown, 2 to 3 minutes. Transfer the garlic and butter into a small bowl and reserve.
  • Pat thawed shrimp dry with paper towels and add to a large mixing bowl.

  • While pasta is cooking, heat oil over medium-high heat in a medium skillet. Add garlic and white parts of scallions, and cook until fragrant, about 30 seconds.
  • Add shrimp, and cook 1 minute. Turn and cook until pink and firm, about 1 minute more. Stir in peas, lemon zest, and red pepper flakes. Add 1/2 cup pasta cooking water, and cook until peas are bright green and shrimp are cooked through, about 1 minute more. Transfer to a large bowl.
  • Drain pasta and add to bowl with shrimp. Add watercress and mix gently. Drizzle with lemon juice. Season with salt and pepper, and toss to combine. Serve immediately, garnished with scallion greens.

NEW ORLEANS PANEED CHICKEN WITH SHRIMP AND FUSILLI

I was in shock to find no recipes for paneed chicken in here! In New Orleans "Paneed" mean pan fried. It's usually chicken coated in bread crumbs and seasonings that is pan fried and served with pasta alfredo. This recipe is one I found from Bon Appétit, September 1995. I have however tweaked it and made it a little more to my tastes.

New Orleans Paneed Chicken With Shrimp and Fusilli image

Steps:

  • Place eggs in shallow bowl and beat to blend. Mix breadcrumbs, 1/3 cup parsley, 3/4 teaspoon salt and 1/2 teaspoon pepper in another shallow bowl. Dip chicken into eggs, then into crumb mixture, turning to coat completely.
  • Heat 3 tablespoons oil in heavy large skillet over medium-high heat. Add chicken; sauté until cooked through, about 4 minutes per side. Transfer to a dish in a warm oven. Discard oil in skillet; add 1 tablespoon oil. Add shrimp, green onions and bell peppers; sauté over medium-high heat until just cooked through, about 3 minutes. Using slotted spoon, transfer shrimp and vegetables to dish with the chicken. Add wine to skillet; boil until reduced to 1/2 cup, about 2 minutes. Add cream and garlic; boil until sauce thickens slightly, about 3 minutes. Mix in cayenne and Parmesan.
  • Return shrimp, veggies and any collected juices to sauce in skillet. Stir over medium heat until heated through.
  • Meanwhile, cook fusilli in large pot of boiling salted water until just tender but still firm to bite.
  • Drain pasta. Add to skillet; toss to coat. Season with salt and pepper. Plate each chicken breast and divide the pasta between the four plates of chicken. Sprinkle with the 2 table spoons of fresh chopped parsley to garnish before serving.
  • Great served with fresh french bread and butter. Also goes great with a little side salad.

CONFETTI SHRIMP

This wonderful gingery-garlic shrimp dish is served cold, and is a nice change from the usual "cocktail" shrimp. The directions listed below use 1 1/2 lb UNCOOKED shrimp, but this can be easily made using shrimp that's already cleaned as well as cooked. After the oil, garlic and ginger are heated, you may toss the already cooked shrimp in the pan and heat for a minute or two before tossing them with the other ingredients and chilling in the fridge. Cook time does not include time to chill.

Steps:

  • Spray a sauté pan with cooking spray.
  • Sauté the shrimp until they turn pink, about 2 to 3 minutes, stirring often.
  • Set aside.
  • Spray a large skillet and add the garlic.
  • Sauté for 2 minutes.
  • Add the wine and increase the heat.
  • Simmer until the wine has reduced to 3 tablespoons, about 8 to 10 minutes.
  • Add the tomatoes to the wine along with the lemon juice.
  • Reduce the heat and simmer for 5 minutes.
  • Add the chives and parsley and remove from the heat.
  • Meanwhile, bring a large pot of water to a boil.
