My family loves ham like this. Sweetly seasoned ham roasted with moist heat is a delicious way to celebrate special occasions. If using a pre-cooked ham, follow the directions on the package for baking times.

- Preheat the oven to 350 degrees F (175 degrees C).
- Place ham in a roasting pan, and press whole cloves into the top at 1 to 2 inch intervals. Pack the top with a layer of brown sugar. Pour enough water into the bottom of the roasting pan to come to a 1 inch depth. Cover the pan tightly with aluminum foil or a lid.
- Bake for 4 1/2 to 5 hours in the preheated oven (about 22 minutes per pound), or until the internal temperature of the ham has reached 160 degrees F (72 degrees C). Make sure the meat thermometer is not touching the bone. Let stand for about 20 minutes before carving.

SIMPLE BAKED HAM
This recipe comes from an old Canadian insurance company recipe book (???) from the fifties. Everybody loves this recipe, especially those who don't like pineapples.

- Boil the ham for 1/2 hour per lb.
- Make sure the water covers at least 3/4 of the height of the ham.
- After it is properly boiled, lay the meat in an appropriate roaster.

SUPER EASY BAKED HAM
So one day, I was just too weary to try to do anything special with the ham I picked out for dinner. So I stabbed it with a meat thermometer, and let it bake until done. It was so surprisingly delicious that it's the only way I bake hams now. :) This recipe is written for beginners or for people who have never even thought of baking a ham but found a great sale and now need to know what to do with their hunk of ham. :) Servings are a guess based on the 11 pound ham I served last night.

- Preheat oven to 350F and make sure the racks are all the way on the bottom so there is plenty of room for the ham.
- Bring ham in packaging to sink and have a pan big enough to hold it nearby. I find a 9"x13" baking pan works great. Make sure your pan is at least an inch deep.
- Take ham out of wrapper and rinse it with cool water if you think it feels icky. Then find the plastic doohickey on the large cut end and remove it. At this point you can trim off some of the fat if you would like. I usually don't, as most of it renders out into the pan or is very easy to cut around.
- Place ham in pan with large cut side down.
- Stab with the business end of a probe style thermometer. This is the kind which has a long metal skewer on one end (the business end), a long cable, and a box which has all the controls and readouts. Make sure the probe goes through a large area of meat, not fat, and doesn't hit one of the bones down the center of the ham. Set your thermometer to alert you when the ham reaches 140°F.
- When your oven has reached 350F, put the ham in (be careful, it's heavy).
- Wait until the thermometer alerts you. Then remove the ham from the oven (remember, it's heavy and now it's really hot, too). Remove the probe, and either start slicing or put on a pretty platter and let your family/guests ooh and ahh. :).
- NOTE: The skin gets very black and crispy. Do not panic, the meat is juicy, I promise. Simply cut the skin off where it is really crispy and get to the meat underneath.
- ALSO: If you do not have a probe style meat thermometer, or need an idea of timing for preparing the rest of your meal, an already cooked (city) ham will reheat to 140F in approximately 15 minutes per pound. So a 12 pound ham will take 3 hours. Ish.
- And FINALLY: I like to carve off the leftovers and separate into 1 pound amounts. I then put these into labeled quart sized freezer bags and freeze for casseroles, pasta, or beans another night. The bone can be put into a labeled gallon sized freezer bag, and then thawed for yummy beans another night.

- Spray roaster pan with non stick cooking oil.
- Wash and score ham.
- Stud 8 cloves into ham.
- Cover with foil.
- Place in oven to cook about 1 hr per pound.
- Now to make glaze.
- In saucepan melt your butter,sugar,allspice.
- Drain juice off can of pineapple,set pineapple aside for later.
- Pour 1/2 cup of pineapple juice into mixture in saucepan.
- Cook on med high heat till it comes to boil, then turn down heat and let simmer till you can drop it in a glass of cold water and it stays firm to the bottom of glass.
- When ham is done lay pineapple rings around the ham and secure with toothpicks.
- Place maraschino cherries inside rings of pineapple and secure with toothpicks.
- With a cooking brush spread glaze all over ham, repeat letting it stand for just a minute between spreading. Continue till it begins to shine.
- Let stand for about 10 mins before carving.

PERFECT GLAZED HAM

- Dry a bone-in, fully cooked half ham (do not use a country ham) and bring to room temperature. Preheat the oven to 375 degrees F. Trim the ham skin, leaving the fat intact. Score the fat in a crosshatch pattern, making the cuts about 3/4 inch deep and 1 inch apart. Put the ham flat-side down on a rack in a roasting pan; add 1 cup water. Bake on the lowest oven rack, 40 minutes, adding more water if the pan gets dry. Meanwhile, make the glaze: Whisk 1 cup jam or marmalade with 3/4 cup brown sugar, 1 cup dijon mustard, 2 tablespoons cider vinegar and 2 teaspoons Worcestershire sauce. Brush the ham with half of the glaze; cover loosely with foil and bake 45 more minutes. Brush with the remaining glaze and bake, uncovered, until the glaze is browned, 40 to 50 more minutes. Let rest 15 minutes before carving.
- Don't toss your ham bone! Add it to simmering soups, beans or braised greens for extra flavor.
- Give your ham a great crunch: Sprinkle one of the below mixes onto the glaze before the last 40 to 50 minutes of cooking.
- Spring Herb Mix 1 cup panko (Japanese breadcrumbs), 3 tablespoons each chopped parsley and chives, and the grated zest of 1 lemon.
- Cornmeal-Thyme Crush 1 cup cornbread stuffing mix; toss with 2 tablespoons chopped thyme, 1 1/2 teaspoons ground coriander and 1/2 cup cornmeal.
- Spicy Sourdough Grind 3 cups cubed sourdough bread in a food processor; toss with 1 tablespoon chili powder and 1 bunch chopped scallions.

- Preheat oven to 275°.
- Score the fat on the ham in about 1 inches diamond shapes & place a whole clove in the center of each -- 10-15 whole cloves is plenty.
- Mix the remaining ingredients together & pour into the bottom of a large roaster.
- Place ham in roaster & place in oven.
- Bake 5-6 hours.
- Check every 1½ to 2 hours to be sure there's enough liquid in the bottom of the roaster -- add HOT water as needed.
- NOTE: I don't normally glaze my ham, but if you do, I recommend making a medium-thick paste out of ginger ale & light brown sugar & glaze during the last hour or so.

- Preheat the oven to 350 degrees F (175 degrees C).
- Remove as much of the ham from the bone as you can. Layer one third of the ham in the bottom of a 6 quart casserole dish. Top with a few pineapple rings and 1/4 of the brown sugar. Repeat the layers, ending with pineapple rings on top, but don't sprinkle the last 1/4 of brown sugar.
- Pour any juice left in the pineapple can over the ham. Then pour in enough of the ginger ale to fill the dish about half way. Sprinkle the remaining brown sugar over the top.
- Cover with aluminum foil and bake for 20 minutes in the preheated oven. Uncover and cook for an additional 20 minutes.

- Preheat the oven to 325°F. Place the ham on a rack in a shallow roasting pan. For a whole 10- to 15-pound ham, allow 18 to 20 minutes per pound; for a half--5 to 7 pounds--about 20 minutes per pound; or for a shank or butt portion weighing 3 to 4 pounds, about 35 minutes to the pound. In all cases, cook uncovered until the internal temperature reaches 160°F. For an attractive, quick finish, remove the ham from the oven about 30 minutes before it is done and glaze as directed below.
- II. Ham labeled "Fully Cooked" or "Ready to Eat"
- Preheat the oven to 325°F. To heat the ham, place it on a rack in a shallow roasting pan, and bake uncovered. For a whole ham, allow 15 to 18 minutes to the pound; for a half, 18 to 24 minutes per pound. The ham will be ready when the internal temperature reaches 140°F. To glaze the ham, remove it from the oven about 30 minutes before it is done, and increase the oven heat to 425°F. Remove all the rind but a collar around the shank bone. Slash the fat in the top of the ham in a diamond pattern, and cover the surface with brown sugar, dry mustard moistened with cider vinegar, prune juice, wine or ham drippings.
- Stud the fat at the intersections of the diamonds with whole cloves. Or decorate with alternating half pineapple rings studded with cranberries and stars cut from preserved orange peel.
- Return the ham to the oven, reduce the oven heat to 325°F again, and cook about 30 minutes. Place on a platter. Garnish with: Slices of jellied cranberry sauce topped with thin orange or pineapple slices.

- Bring the ham to room temperature if desired. Wash the ham in cold running water. Place it, cut side down on a sheet tray. Fit a roasting pan with a rack, (one is a requirement), add the chicken stock to the basin, add, about 11/2 cups, but not enough to touch the ham.
- Trim the ham of as much excess fat as desired. Score the meat, 1/2-1-inch apart, going into the skin, and flesh by no more than 1/2-inch deep.
- Place the ham on the roasting tin rack, with the cut side, facing you, at an angle, if need be. Cover with three layers of heavy foil.
- Put into a preheated 350 degree oven, with the rack on the lowest level, or the bottom third, depending on the size of oven, and the height of the roasting pan.
- Bake for 40-50 minutes without interruption.
- Remove from oven, remove foil, (you may want to keep it aside, for wrapping the meat later). Using a tong, and a meat fork, turn the ham, so that the cut side is underneath, fitting any sides of the ham, that protrude from the rack, into the pan snugly.
- Insert a meat thermometer into the thick part of the flesh, without hitting a gape, or piece of bone (it may take two or even three tries).
- Put back in oven and bake until the ham registers 100 degrees on thermometer.
- Mix together the mustards with the honey and brown sugar till smooth, adding grinds of black pepper, if desired.
- Remove the ham from oven, increase oven heat to 375 degrees, baste the ham well, and liberally, with the sauce, six or seven times, (approximately every 5-8 minutes), until the ham reaches an internal temperature of 120 degrees. Take the ham from the oven, every time it is basted, and rotate it, returning to bake, making also sure, that the glaze, gets deeply coated, into the crevasses, of the cut surfaces of the ham. Replace, up to 1-cup stock, if it reduces more than half.
- Return the finished ham to the oven to cook, until the internal temperature reaches 130 degrees.
- Remove ham from oven. Preheat the broiler.
- When the broiler is set, return the ham to the oven and glaze for about three or four minutes, remove, it will not require basting.
- Remove the ham to a platter or plate, remove the thermometer, remove the rack to a sink. Stir the drippings, they should taste good, not too sweet, and a bit salty, do not use full-salt broth. They probably will not need to be degreased, unless your ham, had a lot of fat left on it. If, for some reason, more sauce is required, add about another 1/2 cup of low-sodium broth, and bring acutely to the simmer, before serving.
- Carve the ham, and serve with some of the sauce.
