SIMPLE SCONES
Make a holiday breakfast -- or afternoon tea -- really special with these sweet bakery treats.

Steps:
- Adjust oven rack to lower-middle position and preheat oven to 400 degrees.
- In a medium bowl, mix flour, 1/3 cup sugar, baking powder, baking soda and salt. Grate butter into flour mixture on the large holes of a box grater; use your fingers to work in butter (mixture should resemble coarse meal), then stir in raisins.
- In a small bowl, whisk sour cream and egg until smooth.
- Using a fork, stir sour cream mixture into flour mixture until large dough clumps form. Use your hands to press the dough against the bowl into a ball. (The dough will be sticky in places, and there may not seem to be enough liquid at first, but as you press, the dough will come together.)
- Place on a lightly floured surface and pat into a 7- to 8-inch circle about 3/4-inch thick. Sprinkle with remaining 1 tsp. of sugar. Use a sharp knife to cut into 8 triangles; place on a cookie sheet (preferably lined with parchment paper), about 1 inch apart. Bake until golden, about 15 to 17 minutes. Cool for 5 minutes and serve warm or at room temperature.

SIMPLE SWEET SCONES
This is a simple perfectly delicious recipe my mom used to make for our family. It origioually came from a biscuits and scones recipe book, this one was always my favorite of all the recipes.

Steps:
- Heat oven to 425°F (220 Celsius).
- Put flour, baking powder and salt into a large bowl; stir mix well Add butter and cut in with a pastry blender or rub in with your fingers, until the mixture looks like fine crumbs.
- Add sugar; toss to mix.
- Add milk and stir with a wooden spoon until dough forms,(the dough may be a bit crumbly).
- Place dough on floured counter and knead gently until the dough comes together in a ball.
- Pat or roll into a circle about 1 1/2 inches thick.
- cut each circle into 6 or 8 wedges.
- place wedges on a greased cookie sheet- slightly apart for crisp sides, touching for soft.
- Bake about 12 minutes, or until medium brown on top.

SIMPLE SCONES
Great easy recipe. Add grated cheese and sprinkle paprika on tops for a savoury scone. Add 2 cups mashed pumpkin and a teaspoon of cayenne pepper for pumpkin scones.

- Pre-heat oven to 200C and line baking tray with paper.
- Combine all ingredients together in a large bowl and mix well.
- Knead together until a soft dough and turn onto a floured board.
- Roll dough out to about 3cm thick and cut scones with a scone cutter.
- Place on tray and brush with egg and milk mixture.
- Cook in oven for 15-20 minutes until golden brown.

- Mix all-purpose and wheat flours, sugar, baking powder, salt, cinnamon, and cloves together in a bowl.
- Cream together butter, eggs, cream cheese, and lemon juice. Mix in milk until combined. Combine egg mixture with dry ingredients. Mix in apple. Add sour cream and mix until well combined.
- Shape scones and place on ungreased baking sheets.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add sweet potato, cover, and steam until tender, 8 to 10 minutes. Strain into a bowl and mash until smooth.
- Mix flour and salt together in a large bowl. Cut in butter with a pastry blender or a fork until mixture is crumbly. Stir in sugar, raisins, cinnamon, nutmeg, and allspice. Add 3 cups mashed sweet potatoes; mix until dough comes together.
- Turn dough out onto a floured work surface; divide in half. Pat each half into a circle the size of a large dinner plate. Cut each circle into 8 wedges. Transfer wedges to two 10x15-inch baking sheets.
- Bake in the preheated oven until lightly browned, about 20 minutes.

MUMMY'S SWEET WHITE SCONES

- Preheat oven to 475 degrees. Line two baking sheets with parchment paper; set aside.
- In a large bowl, whisk together flour, salt, superfine sugar, and baking powder. Make a well in the center and add butter. Using your fingers, work butter into flour mixture until a crumbly mixture is formed.
- In a medium bowl, whisk together 3 eggs and milk. Add milk mixture to flour mixture and stir to combine.
- Turn dough out onto a lightly floured work surface; knead lightly and shape into a round. Roll dough out until it is 1 inch thick. Using a 3-inch biscuit cutter, cut out scones and transfer to prepared baking sheets.
- In a small bowl, beat remaining egg and brush the top of each scone; sprinkle each with granulated sugar. Transfer baking sheets to oven and bake until golden brown and cooked through, 12 to 14 minutes. Transfer scones to a wire rack and let cool slightly before serving.
