Steps:
- Bring a large pot of lightly salted water to a boil.
- Add pasta and cook for 8 to 10 mis or until al dente; drain.
- In a medium saucepan, combine cheeses, margarine, milk, garlic powder, basil and stir over low heat until smooth and creamy about 10 to 15 minutes.
- Toss sauce vegetables, smoked salmon, sauce and pasta in a large bowl.
- Sprinkle with nutmeg.

Steps:
- Cook the fettucine in the usual way, and drain.
- Finely chop the spring onions, and celery.
- Heat the oil in a large frying pan.
- Add onion, celery, parsley and capers.
- Cook until the onion is soft and clear.
- Cut the salmon into thin strips.
- Stir in the salmon and cook further for 1 minute.
- Add the dill and cream/sour cream and gently simmer for about 5 minutes or until the liquid has reduced to a sauce consistency.
- Season with salt and pepper.
- Serve immediately, spooned over the fettucine.

SMOKED SALMON FETTUCCINE
This low fat creamy fettuccine dish is simple and easy to prepare. I use home smoked salmon, but any kippered style salmon works great.

Steps:
- Sauté garlic in margarine for 1 minute--do not let it brown.
- Add flour and incorporate completely.
- Add skim milk a little at a time and mix until flour has dissolved.
- Cook on medium heat stirring continuously for 8 minutes.
- Add cream cheese and mix until incorporated.
- Cook for 2 minutes.
- Add parmesan cheese and salmon.
- Cook fettuccine according to directions and drain.
- Combine sauce with fettuccine and serve immediately.
SMOKED SALMON, SUGAR SNAP PEAS AND PASTA
Steps:
- Bring a large pot of salted water to a boil. While this is coming to a boil prepare the remaining ingredients. When the water comes to a boil, add sugar snap peas and cook for about a minute or until crisp tender. Retrieve them from water with a sieve and run under cold water to stop the cooking. Pat dry and set aside. Add pasta to water and cook until al dente, about 8 to 10 minutes. When pasta is done, drain and refresh under cold water. Pat dry. Combine in a bowl with green onion, mustard vinaigrette, smoked salmon and parsley. Season well to taste with salt and freshly ground black pepper.
FETTUCCINE WITH SALMON AND SNAP PEAS

- Bring a large pot of salted water to a boil. Add the pasta and cook as the label directs, adding the snap peas during the last 2 minutes of cooking. Reserve 1 cup of the cooking water, then drain.
- Meanwhile, heat 2 tablespoons butter in a large skillet over medium-high heat. Add the shallot and cook, stirring, until slightly softened, about 2 minutes. Add the salmon; season with 3/4 teaspoon salt and a few grinds of pepper. Cook, turning once, until the salmon is just cooked through, about 3 minutes. Transfer to a plate.
- Add the pasta and snap peas to the skillet along with 1/2 cup of the reserved pasta cooking water, the remaining 2 tablespoons butter, the herbs and lemon juice. Cook, tossing and adding more of the reserved cooking water if necessary, until the pasta is coated, about 1 more minute. Season with salt and pepper. Top with the salmon.

STRAW AND HAY PASTA WITH CREAM AND SMOKED SALMON

- Cook the pasta and while it is cooking, melt butter over low heat. Stir in the salmon and warm it for a few seconds Add the cream and reduce over low heat until somewhat thickened. Season to taste with salt and pepper. When pasta is done, drain it and return it to saucepan and toss with sauce; adjust seasoning and serve garnished with chives and caviar if you wish.
FETTUCCINE WITH SMOKED TOMATO SAUCE

- Prepare a grill for indirect heat. If using a charcoal grill, build the hot coals on one side only. If using a gas grill, heat one side only to medium-high heat. Place a cooling rack over indirect heat. Place a heavy-bottomed saucepot over direct heat.
- Slice the tomatoes in half. Drizzle them with olive oil and season with salt and pepper. Place the tomatoes on the cooling rack on the grill, cut-side down, to soften and take on some smoke while you make the sauce, 10 to 12 minutes.
- Meanwhile, add a drizzle of olive oil to the saucepot along with the bacon. Cook, stirring occasionally until the bacon is crisp, 3 to 5 minutes. Stir in the garlic, onions and crushed red pepper flakes if using and cook until the onions soften, an additional few minutes. Add the wine. Tie the fresh herbs together with a piece of butcher's twine and add to the saucepot.
- When your tomatoes have begun to soften, remove them from the grill. Remove the skins (they will come off really easy), add the tomatoes to the saucepot and season with salt and pepper. Close the grill and continue to cook the sauce until the tomatoes fully break down and the sauce thickens slightly, about 20 minutes.
- Meanwhile, bring a pot of salted water to a boil. Cook the pasta 2 minutes less than the package directions. Using tongs, pull the pasta out and add it directly to the tomato sauce, along with 1/3 cup of the starchy pasta water. Mix to combine. The sauce will stick to the pasta. Remove the saucepot from the heat.
- Add the butter and a drizzle of olive oil to the pasta and stir to combine. Add the basil and and stir again. Serve with freshly grated Parmesan over top.
- (Alternatively, you can cook the sauce and pasta over medium-high heat on a stovetop.)
SMOKY SALMON FETTUCCINE
This was first made for me by a friend, and I've tweaked it over the years to make it my own. Although it is by no means a healthy recipe to have in your everyday rotation, it makes a very easy and impressive dish to serve for company. The original recipe did not call for mushrooms, so feel free to subsitute another vegetable or leave them out completely. If you like a spicier dish, add chili flakes to taste with the onions, or a bit of hot sauce after the alfredo is added. If you don't want to use liquid smoke, you can replace the fresh salmon fillet with prepared smoked salmon- just begin the recipe with step seven. Serve with garlic bread and a green salad for a complete meal.

- Prepare your grill, or preheat your broiler for high heat.
- Season the salmon with salt and pepper to taste.
- Drizzle the liquid smoke over the salmon.
- Grill or broil the salmon until it is just barely done. (Note- when I use the grill for this, I place the salmon skin side down on a piece of foil so that it doesn't stick to the grill.).
- Remove the salmon for the heat, and set aside to cool slightly.
- When it is cool enough to handle, remove the skin (if needed) and break the fish into bite sized pieces.
- Cook the pasta as directed on the package.
- Heat the oil in a large skillet over medium heat.
- Add the onions, and season with kosher salt and fresh ground pepper. If you would like to add some heat, add a pinch of chili flakes at this time.
- Cook the onions, stirring frequently, for one minute.
- Add the mushrooms, and continue to cook, until the onions are soft and golden.
- Add the alfredo sauce, and bring to a simmer, stirring occasionally.
- Add the reserved salmon, and gently fold into the sauce.
- If the sauce is too thick, add a little of the pasta cooking water to thin it to your liking.
- Taste the sauce, and add salt, pepper, or liquid smoke if necessary.
- When the pasta is al dente, drain and add to the sauce, tossing gently, so the salmon doesn't break up further.
- Serve immediately.

- Cook the spaghetti for 10 mins or following pack instructions until al dente.
- Meanwhile, heat the oil in a wok or large frying pan and briefly fry the chilli to soften it.

SMOKED SALMON PASTA
This is an awesome pasta that is quick to make and very satisfying. I first copied a recipe from Bon Appetit and then combined it with several recipes from my cookbooks. Over the years I have tweeked it to the recipe it is today. I have used fresh salmon in place of smoked salmon when I have not been able to get smoked salmon, and it was very good as well. Served with a salad it makes a very lovely meal.

- Cook Pasta as directed. Drain.
- Meanwhile, in a large skillet, heat oil. Add mushrooms, shallots, garlic and cayenne. Saute until veggies are tender.
- Add white wine and bring to boil. Add cream and bring to boil. Let simmer for 3minutes.
- Add lemon juice, lemon zest and salmon. Bring to boil and let simmer 1 to 2 minutes.
- Add capers, parsley, salt and pepper. Mix well.
- Pour salmon mixture onto hot drained pasta. Toss to mix. Add Parmsean and toss well. Let set for 2 minutes as pasta will absorb any extra liquid.
- Serve.
