Simple Apple Muffins image

Steps:

  • Preheat oven to 325-degrees F.
  • Grease muffin tins or use paper liners.
  • In a large bowl, blend 3/4 cup brown sugar, oil, egg and vanilla with a wooden spoon.
  • Add flour, baking soda and salt.
  • Stir in apple and buttermilk and mix throughly until combined well.
  • Spoon batter into prepared muffin tins.
  • In a small bowl combine remaining 1/4 cup brown sugar with remaining ingredients (walnuts and cinnamon).
  • Sprinkle over muffins.
  • Bake for 30-40 minutes or until muffins are browned and toothpick comes clean when inserted in middle.

Quick and Easy Apple Muffins image

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Lightly grease 12 muffin cups or line with paper muffin liners.
  • Stir together flour, baking powder, sugar, cinnamon and salt. In a separate bowl, stir together milk, egg and butter. Stir egg mixture into flour mixture just until combined. Fold in chopped apples. Spoon batter into prepared muffin cups.
  • Bake in preheated oven for 20 minutes, or until a toothpick inserted into center of a muffin comes out clean.

Steps:

  • Preheat oven to 325°F.
  • Grease and flour muffin tins or use paper liners.
  • In a small bowl combine white sugar and butter and mix with a fork until crumbly and set aside for topping.
  • In a large bowl combine brown sugar, oil and egg.
  • In a separate bowl combine buttermilk, soda, salt and vanilla.
  • Alternately add buttermilk mixture and flour into the brown sugar mixture, stirring with a wooden spoon until combined.
  • Fold in apples and pecans (if using).
  • Spoon batter into prepared muffin tins and then sprinkle with reserved topping mixture.
  • Bake for 30 minutes or until toothpick tests done.

Easy Apple Cinnamon Muffins image

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Grease six muffin cups or line with paper muffin liners.
  • Stir together 1 1/2 cup flour, 3/4 cup sugar, salt, baking powder and 1 teaspoon cinnamon. Mix in oil, egg and milk. Fold in apples. Spoon batter into prepared muffin cups, filling to the top of the cup.
  • In a small bowl, stir together 1/2 cup sugar, 1/3 cup flour, butter and 1 1/2 teaspoons cinnamon. Mix together with fork and sprinkle over unbaked muffins.
  • Bake in preheated oven for 20 to 25 minutes, until a toothpick inserted into center of a muffin comes out clean.
