Steps:
- Fry the bacons in a skillet, drain and crumble.
- Chop up the green onions.
- Spray a 9 x 15 cassarole dish with cooking spray.
- add potatoes and 1 C gouda.
- add sour cream.
- Stir together until just mixed.
- Sprinkle bacon and green onions on top.
- Top with 1 C gouda.
- Bake in a 350F oven for 30 minutes until the cheese is bubbly and the mixture is heated through.

SIMPLY POTATOES BISTRO DINNER #5FIX
5-Ingredient Fix Contest Entry. Simply Potatoes Five Ingredient Fix Contest. It's amazing how delicious this simple bistro-style dinner is, and it pleases everyone at my house. The adults enjoy ours especially when accompanied by a fresh green salad with vinaigrette. It's also great for lunch, brunch or breakfast (of course).

Steps:
- Heat two large skillets over medium heat and preheat the broiler of your oven. (Leave your oven rack in the middle setting.).
- Melt 2 tablespoons of butter in one pan and 1 tablespoon of butter in the second pan.
- Remove the pan with less butter from the heat.
- To the other pan, add the hash browns and spread to evenly distribute in a single layer. Use the back of a metal spatula to press down on the hashbrowns to compress them. Sprinkle with about 1/2 teaspoons of seasoned salt and cook undisturbed for about 2-3 minutes until the bottom achieves a beautiful, golden brown crust.
- Place a large rimless baking sheet (or large plate) on top of the skillet and invert it to flip the hashbrowns browned side up. Place the skillet back on the heat and melt the remaining tablespoon of butter. Immediately slide the hashbrowns back into the hot pan. (This maneuver is a little tricky, but if the hashbrown cake falls apart, it will still taste just as yummy!) Sprinkle the cake with 1/2 of the shredded parmesan. Leave it to cook undisturbed for another 2-3 minutes. (If your cheese is not melted at the end of this time, just cover the skillet for a few seconds after you remove it from the heat. The residual heat will do the trick!).
- While the second side is browning, return the second skillet to the heat. Crack your eggs carefully into the hot pan, trying not to break the yolks. Sprinkle with 1/4 teaspoons of seasoned salt. As soon as the bottoms have turned opaque (after just a few seconds), place the skillet under the broiler. Watch for the top of your egg whites to set. Depending on the heat of your broiler, this will likely take 1-2 minutes. Remove when the whites are set and the yolks are still very loose.
- To serve, remove the hashbrown cake from the hot skillet. Cut into four wedges. Top each wedge with two eggs and a sprinkle of cheese. (It's important to put the eggs on TOP, so that the runny yolks will dress the hashbrown cake when you cut into them--bistro-style!).

- Mix together in a bowl one 20 oz. package of Simply Potatoes Southwestern Style Shredded Hash Browns, one 16 oz of package of ground turkey, and one egg in a mixing bowl. Mix by hand and form into 10 round balls, and then flatten into patties for grilling or frying in a non-stick pan.
- Preheat grill or non stick pan on medium high heat. Cook 5 to 8 minutes on each side until golden brown, top each pattie with one slice of favorite sliced cheese,( i use swiss or cheddar cheese) let cheese slightly melt, remove from pan and place on bun and serve.

- Crisp the prosciutto in a 350° oven for 10 minutes. Let cool then crumble into small pieces.
- Set oven to 375°.
- Separate the egg whites and yolks. Whip the 3 egg whites until stiff.
- Mix together the Simply Potatoes, 1 egg yolk, prosciutto, and white cheddar cheese. Fold in the egg whites.
- Put the mixture into a greased mini-cheesecake pan. Sprinkle 2 t. of chives on top.

This deliciously simple recipe came to mind almost instantly after reading about your recipe contest. I made this up myself, a take off from a recipe I created for layering ingredients in ramekin crocks for simple macaroni and cheese bakes. These loaded mashed potatoes are so easy to make, all the ingredients are easy to find at any local grocery store, and inexpensive to purchase. These loaded potatoes are layered in ramekin crocks, creating perfect sized portions, with a perfect loaded potato taste. I actually place my ramekins in a toaster oven to bake, making this recipe for me an even less expensive side dish to add to almost any meal.

- Preheat oven to 375 degrees.
- Fry the bacon, then crumble in pieces.
- Chop the scallions in small pieces.
- Microwave the potatoes according to the directions on the Simply Potatoes label.
- Spoon the heated mashed potatoes into the ramekin crocks, for this first layer, just cover the bottom of each crock with the mashed potatoes. Place the potatoes in lightly, don't pack them down.
- Cover the potatoes with a layer of cheese.
- Sprinkle bacon on top of the cheese.
- Repeat the above layers in each crock. Begin with spooning mashed potatoes over the bacon. Make a mound of potatoes that goes up a little over each crock edge.
- Cover the potatoes with a layer of cheese.

- Bake the crocks in the oven for 10 minutes or until the cheese is melted.
- Remove the crocks from the oven and garnish with chopped scallions.
- Top each crock with a dollop of sour cream.
