A brownie-like biscotti that tastes great with a cup of coffee. Drizzle with more chocolate if desired. Especially popular in the winter time when coffee and chocolate taste so much better. Enjoy!

Steps:
- Preheat oven to 375 degrees F (190 degrees C). Line 2 baking sheets with parchment paper.
- Combine vanilla extract and espresso powder in a small bowl; mix until espresso powder is dissolved.
- Sift flour, cocoa powder, baking powder, and salt into a bowl; mix in chocolate chips.
- Whisk vanilla mixture, sugar, eggs, and oil together in a large bowl. Add flour mixture; stir, by hand if needed, until dough comes together and is thick and stiff.
- Divide dough into 2 equal pieces and place onto the baking sheets. Shape each piece into a log as long as the baking sheet; press down with wet hands to about 1/2 inch thickness.
- Bake in the preheated oven until firm, about 25 minutes. Remove from oven and cool until easily handled, about 5 minutes.
- Move cooled logs to a cutting board and slice into 1/2-inch long slices with a serrated knife. Return the slices to the baking sheets, placing them on their sides.
- Bake until dry, about 6 minutes per side. Remove from oven and let cool until hardened on wire racks.

ABSOLUTELY SINFUL CHOCOLATE CHOCOLATE CHIP COOKIES
This recipe was given to me by my grandmother 10 years ago. They were always a HUGE hit at work pig-outs and now my family loves them! A wonderful soft cookie that is incredibly chocolaty.

- Preheat oven to 375 degrees F (190 degrees C). In the microwave or over a double boiler, melt unsweetened chocolate and butter together, stirring occasionally until smooth. Sift together flour, baking soda, baking powder, and salt; set aside.
- In a medium bowl, beat sugar, eggs, and vanilla until light. Mix in the chocolate mixture until well blended. Stir in the sifted ingredients alternately with sour cream, then mix in chocolate chips. Drop by rounded tablespoonfuls onto ungreased cookie sheets.
- Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely. Store in an airtight container.

- Melt chocolate with the butter and the sweetened condensed milk in a sauce pan. Combine the peanuts and mini-marshmellows and mix together in a large bowl. Pour the melted chocolate mixture into the nut mixture. Mix well. Spread candy mixture in a 13 X 9 pan lined with wax paper. Freeze the pan until hard. Remove from wax paper and cut up into cubes before serving.

- Cover and cook 45 minutes.
- Add cream, stir until blended, about 3 minutes.

- Adjust oven rack to middle position and heat oven to 300°F Toast bread on rimmed baking sheet, stirring occasionally, until golden and crisp, about 30 minutes. Transfer to large bowl.
- Increase oven temperature to 325°F Grease 13- by 9-inch baking pan. Heat 1½ cups cream, milk, cocoa, espresso, and ½ cup sugar in saucepan over medium-high heat, stirring occasionally, until steaming and sugar dissolves. Pour warm cream mixture over toasted bread and let stand, tossing occasionally, until liquid has been absorbed, about 10 minutes.
- Meanwhile, bring additional 1 cup cream to simmer in saucepan over medium-high heat. Remove from heat and stir in chocolate until smooth. Transfer 1 cup chocolate mixture to medium bowl and let cool 5 minutes (cover pan and reserve remaining chocolate mixture for serving). Add egg yolks, remaining cream, and remaining sugar to bowl with chocolate mixture and whisk to combine.
- Transfer soaked bread mixture to prepared pan and pour chocolate custard mixture evenly over bread. Bake until pudding is just set and surface is slightly crisp, about 45 minutes. Let cool 30 minutes. Warm reserved chocolate mixture over low heat, then pour over bread pudding. Serve. (Leftover bread pudding should be refrigerated; reheat individual portions in microwave.).
- Make Ahead: In step 4, once soaked bread mixture has been transferred to prepared pan, the pan can be covered with plastic wrap and refrigerated overnight. When ready to bake, remove plastic and proceed with recipe as directed, increasing baking time to 55 to 60 minutes. Let reserved chocolate serving sauce cool, then cover with plastic wrap and refrigerate. Heat sauce in microwave when needed.

- Line a 9 x 13 pan with aluminum foil.
- (This speeds the clean up.).
- Preheat oven to 400°.
- Place saltine crackers in pan in rows.
- I usually can fit about 24 in the pan.
- In a saucepan, bring the butter and sugar to a boil.
- After it begins boiling, boil for 3 minutes.
- Immediately pour the butter-sugar mixture on the crackers.
- Bake in the oven for 7 minutes.
- Take out of the oven, pour chocolate chips over crackers, and smooth them out after they melt.
- Cool in the fridge until the chocolate has hardened.
- Cut into squares.

- Prepare brownie according to package directions (or use homemade), and cool completely.
- In a large bowl, combine pudding mix, water and sweetened condensed milk.
- Mix until smooth, then fold in the 2 containers of 8-ounce whipped topping until no streaks remain.
- In a trifle bowl, place half of the brownies, half of the pudding mixture and half of the 12 ounce container of whipped topping (I have a big trifle bowl- you may need to cut recipe in half!).
- If using any optional ingredients, place on top of brownie layer.
- Repeat layers.
- Shave chocolate onto top layer for garnish.
- Refrigerate 8 hours before serving.
- Note: You can use non-fat ingredients and never know the difference.
