Steps:

  • Place potatoes in a large pot and cover with water. Bring to a boil. Reduce heat and simmer until they're almost falling apart, about 20 minutes.
  • While potatoes are cooking, heat olive oil in a medium pan over medium-high heat. Add steak and brown on all sides, 5 to 7 minutes total.
  • Pour beef broth and condensed soup into the bottom of a slow cooker and set to Low. Add barley. Drain potatoes and add to the cooker. Add steak, including pan juices and oil, followed by onion, mushrooms, garlic, oregano, salt, and pepper.
  • Cover and cook on High for 1 hour. Add frozen vegetables and continue to cook until barley and vegetables are tender and steak is cooked through, about 2 hours more.

  • Heat 2 teaspoons oil in a skillet over medium-low heat and cook shallots until they are lightly browned, 5 to 10 minutes. Place in the slow cooker.   • Combine 1/4 cup flour, oregano, salt, and pepper in a bowl. Add beef and toss to coat.
  • Heat olive oil in a cast iron skillet over medium-high heat heat. Brown beef in the hot oil on all sides, 5 to 7 minutes. Transfer meat to the bottom of a slow cooker. Do not clean the skillet.

I found this online at www.sparkpeople.com. I made it and was blown away by how yummy it was. I did not add white rice to the recipe, but you can easily get away with many many cups of cooked rice with how much sauce this makes. The onion soup packet is just a reg. sized one. Some say they are 1oz others say 1 1/4 oz. I'm sure either will work. UPDATE: I have since made this with regular cream of mushroom soup and it was wicked salty and tasted completely different for me. I recommend only using the low-fat/fat free kind.

  • Add stew meat to crock pot (you can brown it first in a pot if you want, but I had no issues doing it right in the crock pot).
  • Place sliced mushrooms on top.
  • Combine soup, water and dry onion soup mix. Stir till well blended. Pour over mushrooms and beef.
  • Cook on low 6-8hrs or high for 3-4 hours. I personally cooked it on high for 1 hour, then low for 7 hours and it was amazing.
  • Pour over cooked rice (not included in recipe) and enjoy!
