CHICKEN SMITHFIELD

Chicken Smithfield image

Steps:

  • Heat oil in a saute pan over medium to high heat. Add shallots and sweat for 2 minutes. Add diced ham and cook for 2 minutes. Add chicken breast and saute for 4 to 5 minutes, then add mushrooms and saute for 2 minutes.
  • Deglaze the pan with brandy, using caution to watch out for a flame. Add heavy cream and reduce until creamy, 3 to 4 minutes. Season with salt and pepper to taste. Serve over white rice.

1 tablespoon olive oil
1 tablespoon minced shallot
2 ounces diced smoked ham, preferably Smithfield
6 ounces chicken breast, cut into strips
1/2 cup sliced mushrooms
2 ounces brandy
6 ounces heavy cream
Salt and pepper
Cooked white rice, for serving

Steps:

  • To peel the tomatoes, place them in boiling water for 1 minute and then immediately transfer to cold water. Peel and quarter tomatoes, and place in a large saucepan with the salt. Slowly simmer over low heat for 20 to 30 minutes, stirring occasionally to prevent burning.

Steakhouse-Style Stewed Tomato Casserole image

Steps:

  • 1. Preheat oven to 350 degrees. Saute onion in butter until soft, but not browned. Add bread cubes and brown sugar. Cook and stir over low heat for 3-5 minutes. Stir in tomatoes and season with salt and pepper.
  • 2. Transfer mixture to a greased shallow casserole dish. Bake 30-40 minutes or until bubbly.

1 small onion, chopped
4 Tbsp butter
1 1/2 c bread cubes (dry, plain)
1/2 c light brown sugar
5 c canned tomatoes (crushed, diced or fire-roasted)
1 tsp salt (or to taste)
1/2 tsp freshly ground black pepper
