Our honey-mustard glazed Turkey Meatloaf Florentine is full of onion, garlic, red peppers-and spinach, of course.

Steps:
- Heat oven to 350°F.
- Mix first 6 ingredients in large bowl until well blended. Add spinach, peppers and onions; mix well.
- Shape into 9x4-inch loaf in 13x9-inch pan sprayed with cooking spray.
- Bake 45 min. Mix mustard and honey; brush onto meatloaf. Bake 25 to 35 min. or until done (165°F). Let stand 10 min. before slicing.

MEATLOAF FLORENTINE
I had some spinach for a salad, but I can never finish those big bags before they turn slimy, so this recipe from meals.com was the perfect way to use the rest of the spinach. The recipe calls for frozen spinach, but fresh works just fine, 2 or 3 cups of it, chopped up in the food processor. I also used 1/3 cup Italian seasoned bread crumbs in place of the bread slices, the ingredient list, however, is being posted in it's original state.

Steps:
- Preheat oven to 350.
- Combine tomato sauce, oregano, basil and garlic powder in a small bowl.
- In a larger bowl, mix beef, bread crumbs, egg white, salt pepper, and 1/2 the tomato sauce mixture until well combined.
- Press meat mixture onto a sheet of wax paper, making a rectangle approx.
- 8 x 10 inches.
- Spoon spinach over half.
- Place mozzarella cheese over spinach, being careful not to place too close to the edges, or your filling will leak out.
- Fold meat over so that spinach and cheese are inside.
- Pinch edges to seal.
- Place meat in shallow baking pan, on a rack or strips of aluminum foil, or some means of keeping the loaf off the pan to allow the juices to drain.
- Top with remaining tomato sauce and the parmesan cheese.
- Bake, uncovered, for 1 hour.
- Let rest for 5 to 10 minutes before slicing.
- (try the leftovers on a sandwich or kaiser roll).

FLORENTINE MEATLOAF
From A Taste of Italy (1996) by The American Cooking Guild: "When 14-year-old Catherine de Medici left Florence to marry King Henry II of France, her entourage of chefs encountered spinach for the first time. From then on, they referred to dishes with spinach as florentine, which means 'bed of spinach' in French. This moist spinach and beef loaf tastes even better topped with marinara sauce."

Steps:
- Preheat oven to 350 degrees.
- Heat oil and saute onion, garlic, and fennel seed 2 minutes, stirring constantly.
- Combine with the remaining ingredients.
- Shape mixture into a log and place in a shallow casserole dish or loaf pan. Top with marinara.
- Bake 75 minutes or until the thermometer registers 170 degrees.
- Cool 10 minutes, then serve.
TWENTY-FIVE INGREDIENT MEATLOAF
Steps:
- Preheat oven to 350 degrees F.
- Heat oil in heavy skillet. Add green onions, celery, garlic, carrot, onion and peppers and saute until sweated, about 5 minutes. Do not overcook. Set aside to cool. Combine salt, black and white peppers, cayenne, cumin, garlic powder, paprika, thyme, sugar and eggs in a large bowl and beat well. Add half-and-half and ketchup and blend thoroughly. Add meats, breadcrumbs, cilantro and cooled vegetables to egg mixture and blend thoroughly with hands for about 5 minutes. With damp hands, form the mixture into an oval resembling a long loaf of bread. Place on a cookie sheet that has been lined with foil and sprayed with cooking spray. Cover with foil. Bake 45 minutes, then uncover and bake 15 minutes more. Let rest for 20 minutes before slicing and serving.
CREAMY RIGATONI FLORENTINE
Pan-roasted garlic adds heady savor to a rich and creamy basil-infused tomato sauce. Tender cubes of sauteed chicken and fresh, green spinach go for a quick simmer along with cooked rigatoni. Toss this marvelous meal with mozzarella cheese and serve.

- Bring a large pot of lightly salted water to a boil. Cook rigatoni in the boiling water, stirring occasionally until cooked through but firm to the bite, about 8 to 10 minutes. Drain.
- Heat olive oil in a skillet over medium-high heat; saute chicken until no longer pink in the center, about 10 minutes. Transfer chicken to a plate. Add mushrooms to skillet; saute until mushrooms are tender, 5 to 10 minutes. Add garlic; saute until fragrant and golden, 1 to 2 minutes.
- Stir spaghetti sauce, half-and-half, and Italian seasoning into mushroom mixture; cook and stir over medium heat until sauce thickens, 10 to 15 minutes. Mix cooked chicken and spinach into sauce and cook until spinach is wilted, about 5 minutes.
- Stir pasta into sauce and add mozzarella cheese; stir until cheese melts. Garnish dish with Parmesan cheese and fresh basil.

- Preheat oven to 350 degrees.
- In a small bowl, combine tomato sauce and spices.
- In a large bowl, combine beef, crumbs and 1/2 cup of the tomato sauce mixture. Mix well. Spread meat on a piece of wax paper, forming a rectangle about 8 x 10 inches.
- Spread spinach over half the meat. Top with Mozzarella cheese, still only covering half the meat.

- Preheat the oven to 325 degrees F (165 degrees C). Line a 9x5-inch loaf pan with parchment paper, or use a silicone loaf pan.
- Combine mushrooms, bell pepper, carrot, celery, onion, vegetable broth, garlic, salt, and pepper in a large skillet over medium heat. Cook until vegetables are browned, about 7 minutes.
- Transfer cooked vegetables to a food processor. Add cooked lentils, oats, bread crumbs, flaxseed meal, tomato paste, 1 tablespoon barbeque sauce, mustard, and parsley. Pulse until combined but chunky; don't over pulse.
- Place dough into the prepared loaf pan; gently press the top to form a bread shape. Cover with aluminum foil.
- Bake for 35 minutes. Remove aluminum foil and drizzle with additional barbeque sauce. Slice and serve.
