SMOKED CORNED BEEF BRISKET

A homemade dry rub of coriander, mustard seed, fennel, and paprika really brings out the flavor in this smoked corned beef brisket.

Smoked Corned Beef Brisket image

Steps:

  • Combine coriander, fennel seeds, brown sugar, paprika, garlic powder, onion powder, and mustard seed in a small bowl.
  • Place brisket in a glass baking dish and rub spice mixture all over. Cover with plastic wrap and place in the refrigerator for 2 to 3 days.
  • Soak wood chips in water for at least 1 hour.
  • Preheat a smoker to 240 degrees F (116 degrees C) according to manufacturer's instructions. Maintain temperature for 15 to 20 minutes.
  • Drain wood chips and place on coals. Place a water pan on the smoker and add water to the depth of the fill line. Place brisket on the lower cooking grate and cover with the smoker lid. Smoke for 2 hours.
  • Pull brisket from the smoker and wrap tightly in foil. Return to the smoker until an instant-read thermometer inserted into the thickest part registers at least 190 to 200 degrees F (88 to 93 degrees C), about 3 hours.
  • Remove brisket from the smoker and let rest for 40 minutes. Slice corned beef against the grain.

  • If applicable, discard seasoning packet from brisket. Place brisket in a Dutch oven, and add water to cover. Let stand 45 minutes. While brisket soaks, whisk together mustard, paprika, pepper, onion powder, garlic powder, and 2 tablespoons of the honey in a small bowl.
  • Remove brisket from water, and pat dry with paper towels. Place brisket on a rimmed baking sheet. Spread 2 tablespoons mustard mixture evenly all over brisket. Whisk apple cider vinegar and remaining 1 teaspoon honey into remaining mustard mixture to make honey mustard sauce; set aside.
  • Open bottom vent of a charcoal grill completely. Light charcoal chimney starter filled with briquettes. When briquettes are covered with gray ash, pour them onto bottom grate of grill, and then push to 1 side of the grill. Adjust vents as needed to maintain an internal temperature of 275°F. Place brisket, fat side up, on oiled grates on side of grill without coals. Grill, covered, 2 hours.
  • Remove brisket from grill, and wrap tightly with aluminum foil. Place wrapped brisket, fat side up, on side of grill without coals. Close grill cover, and continue to cook until a thermometer inserted through foil into brisket registers 200°F, about 2more hours. Remove brisket from grill, and let rest 20 minutes before thinly slicing against grain; serve with honey mustard sauce.

  • Light your coals until they are amber and start to ash. Add hickory wood chips and adjust your grill to reach 275F. Add a pan of water or beer off to the side of the coals.
  • Remove the corned beef from the package. Rinse. Pat dry. Rub with provided seasoning pouch.
  • Place on the grill over indirect heat. (Coals should not be directly under the meat). Cook until the internal temperature reaches 185F. Spritz occasionally with water or beer.
  • Add more coals, as needed, to keep the temperature steady. Once it reaches 185F, wrap it in parchment paper or foil and continue cooking until it reaches 199F. Let it rest 30 minutes before slicing.
