SMOKY SCALLOPED POTATOES

- Preheat the oven to 350 degrees F. Butter a 9-by-13-inch casserole dish with 1 tablespoon butter. Melt the remaining 2 tablespoons butter in a large saucepan. Once the butter foams, add the shallot and garlic and saute until softened, 3 to 4 minutes. Add the flour and cook, stirring frequently, until golden, about 2 minutes. Season with salt and pepper and add the half-and-half, smoked paprika and potatoes. Bring to a low simmer and cook for 5 minutes.
- Pour half of the potato mixture into the buttered casserole dish. Shake the pan to arrange the potatoes in a single layer. Sprinkle half of each of the cheeses on top of the bottom potato layer. Add the remaining potatoes and shake again to arrange in a layer. Sprinkle on the remaining cheese, cover with foil and bake 45 minutes, or until bubbling. Remove the foil and place back in the oven for another 15 minutes, or until the potatoes and cheese are golden and browned. Let stand 15 minutes before serving.

- Preheat smoker to 225.
- Rinse and dry potatoes. Prick on all sides with a fork.
- Combine butter, salt, and pepper in a bowl. Rub onto potatoes.
- Smoke for 1 to 2 hours, depending on how large the potatoes are. Potatoes can be smoked alongside whatever meat you are smoking.
- Potatoes are done when they can be pierced easily to the center.
SMOKED POTATO
This is the perfect side dish for times you already have the smoker fired up and smoking meat. No need to heat up the oven, just plan ahead and throw them in the smoker instead.

- Preheat a smoker to 250 degrees F (120 degrees C). Add wood chips according to manufacturer's instructions.
- Using a fork, pierce holes on all sides of the potato. The more holes, the smokier the flavor. Rub oil on all sides of the potato and sprinkle with salt.
- Place potato directly on the smoker rack and cook for 3 1/2 hours

TWICE-SMOKED POTATOES
Twice "baked" potatoes except on the smoker instead of in the oven. This is a great side for ribs, brisket, or whatever else you've got the smoker fired up for. Once the potatoes are cut open, they take on the smoke flavor quickly so you won't want to leave them in there for more than 30 minutes. I used hickory for these but any wood will work.

- Preheat a smoker to 250 degrees F (120 degrees C). Add wood chips according to manufacturer's instructions.
- Using a fork, pierce holes on all sides of the potato. Brush oil over entire potato.
- Place the potato directly on the smoker rack and cook for 3 hours. Transfer potato to a cutting board and let cool until easily handled.
- Slice potato in half. Leaving the shell intact, spoon out flesh and place in a bowl. Add milk, Cheddar cheese, butter, chives, salt, and pepper. Using the back of a spoon, mash potato and stir until evenly combined.
- Spoon mixture back into the shells. Return to the smoker for 30 minutes more.

SMOKED SAUSAGE AND POTATOES
We make this all the time! I got the recipe from a website quite awhile ago, I don't remember where exactly. It is so simple. You just make it in your MICROWAVE! How great is that??? By the way...we prefer the skinless sausage but by all means use what you like.

Steps:
- Cut potatoes into chunks and leave the skin on.
- Cut peppers into strips.
- Toss potatoes, peppers, garlic, rosemary and olive oil together and place in a microwave safe bowl.
- Cover and microwave on high 5 minutes, stir, re-cover, then microwave 5 more minutes on high.
- Add cut up sausage and microwave for another 5 minutes.
- Check potatoes for doneness and sprinkle with parmesan cheese if you'd like.
- Serve.

Steps:
- Cut potatoes in 1/2- to 3/4-inch slices, leaving skin on. Arrange them on smoker rack and season to taste with salt and pepper. Depending on moisture content of potatoes, cook on medium heat, using a tablespoon of hickory wood chips. Smoke for 35-45 minutes. Remove from smoker and toss with butter, salt and pepper to taste.
