- In a large saucepan, heat oil over medium heat; saute pepper and onion until tender. Add garlic; cook and stir 1 minute., Stir in beans, sausage, Cajun seasoning, pepper sauce and water; bring to a boil. Reduce heat; simmer, uncovered, until heated through, 5-7 minutes. If desired, serve with rice.

- In a skillet, saute green pepper, onion and garlic in butter until crisp-tender. Add sausage; cook and stir until browned. Add the tomatoes, beans, oregano and pepper. , Bring to a boil. Reduce heat; simmer, uncovered, for 20-25 minutes or until thickened. Serve with rice.

- In a large skillet heat the vegetable oil over medium-high heat. Saute the onion, celery, green bell pepper, and garlic until tender. Add the smoked sausage, Neelys Dry Rub, thyme, salt and pepper. Saute for about 5 minutes then add the red beans, chicken stock and bay leaves. Let simmer uncovered on low for 1 1/2 hours. Stirring occasionally and adding water, if necessary.
- While the beans are cooking add all the ingredients for the rice to a small saucepan over medium heat. Cover and let cook for 15 minutes. Once the rice is cooked, let stand for 5 minutes. Serve with the red beans.
SMOKED SAUSAGE AND GREEN BEAN STEW
A family tradition, and one of my favorite comfort foods. The blending of flavors makes this simple meal one I prepare often.

Steps:
- Slice smoked sausage on the diagonal into 1/2 inch thick slices.
- Brown over medium heat in large saucepan or dutch oven.
- Add onions and garlic and saute until onions are transparent.
- Add potatoes and green beans.
- Add water until all ingredients are covered.
- Reduce heat to a simmer for at least 1/2 hour, adding more water if necessary.
- The longer it cooks the better it tastes.
- Season to taste with salt and pepper.
- Serve in bowls with garlic bread.

RED BEANS & SMOKED SAUSAGE
A dish I threw together today, for my other half. It's been cooking the biggest part of the day in my crock pot, and boy does it smell good...He tasted it, and gave me the thumbs up! :) Enjoy!

- 1. Place everything in crock pot and cook on high for 7 - 7 1/2 hours, or until beans are tender. The last 30 minutes, I added 1/2 cup Basmati rice. Just to thicken some. You can either add the rice like I did, or serve over hot cooked rice.

AUTHENTIC NEW ORLEANS RED BEANS AND RICE
Just like mom makes. I recommend cooking the day before you want to eat it. It is a time-consuming recipe and the taste gets even better after 24 hours in the refrigerator. For extra spice, add a splash of hot sauce.

- Melt shortening in a skillet over medium heat. Cook and stir onion, garlic, and bell pepper in hot shortening until tender, 5 to 7 minutes.
- Combine water, red beans, and ham hock in a large pot; bring to a boil. Stir onion mixture into the water; add smoked sausage and celery to the boiling water; return to a boil. Stir bay leaves, Creole seasoning, thyme, and sage into the boiling water. Reduce heat to low, place a cover on the pot, and simmer until the beans are tender, about 5 hours.
- Remove and discard ham hock and bay leaves; stir in hot pepper sauce and serve over white rice.

Steps:
- In large stew pot, soften onions in oil for 1 minute.
- Add water.
- Wash beans and pour into stew pot.
- Cover and cook on low for 1 hour and 30 minutes.
- Remove 1/4 cup of beans and mash, then return to pot and stir.
- Continue to cook until gravy becomes thickened.
- About 10 to 20 minutes.
- Cut sausage into pieces about 1 inch long and add to the beans.
- Add salt, pepper, chili powder, and cumin powder.
- Continue to cook for 15 to 20 minutes.
- Serve over rice.
