SMOKEMASTERS SMOKED CHICKEN
Bob Lane of the Mozark Smokemasters won first place in the Poultry division at the Valley Fare Daze in Grain Valley, MO with this recipe. It is a delicious smoked chicken recipe that we have used time and time again! Prep time includes overnight marinating time.

Steps:
- Rinse chicken with cold water and pat dry.
- Mix salad dressing and soy sauce in a bowl; strain.
- Inject chicken breasts, thighs and legs with salad dressing mixture.
- Sprinkle barbeque seasoning evenly over chicken.
- Place chicken in sealable plastic bag; seal bag.
- Marinate in the refrigerator for 8 hours or longer.
- Remove chicken from bag.
- Cook chicken in smoker at 250 degrees F over indirect heat for 4 hours or until cooked through, misting with apple juice every 30 minutes.
- Use hickory chips or apple wood in the smoker.
APPLEWOOD SMOKED CHICKEN

- In a medium size bowl, mix together the dry ingredients. Rub the seasoning over the both halves of the chicken. Cover the chicken with plastic wrap and place in the refrigerator for 1 hour.
- Place wood chips in the smoking tray of the grill. If you don't have this option you can make a packet out of aluminum foil and punch a few holes in the top of it with a fork and place directly on the hot coals.
- Place the chicken on a hot grill over medium-heat with the meat side down. Grill over the wood chips for 1 hour and 20 minutes. Cover, this will keep in the smoke and to prevent oxygen from igniting the smoking wood. After 30 minutes turn the chicken to its opposite side. The juices near the bone should run clear.
" EVIL" CHICKEN
I modified this recipe from a tea smoked chicken recipe in one of my cookbooks. My husband dubbed it "evil" chicken because he couldn't stop eating it. I find it turns out best when you use a whole chicken. However you can substitute boneless breasts. I serve with steamed rice and broccoli.

- Combine sherry, soy sauce, brown sugar, ginger, garlic, crushed peppercorns, onion, tea leaves, orange peel and juice from orange in a bowl and mix well.
- Pour over chicken and marinade in refrigerator for at least 2 hours.
- If using a whole chicken bake at 350 for 1 1/2 to 2 hours or until chicken is done.
- If using boneless breasts I prefer to cook it in a slow cooker on low for at least 2 hours but you can also bake at 350 for at least 45 minutes or until chicken is done.
- Use remaining marinade from roasting pan or slow cooker as a gravy.
- (You may need to thicken).
EASY SMOKED CHICKEN
This chicken gets its flavor from the smoke of the hickory chips, so I don't baste with a barbecue sauce while cooking this recipe....feel free to add it if you think it's necessary. I do like to offer Recipe #248912 posted by Oolala when serving it. It's important to use skin on chicken halves because the chicken is cooked for a long period over indirect heat. I have the butcher at my grocery store cut whole chickens in half for me to make it easier on myself.

Steps:
- Soak your hickory chips for 6 hours (may soak overnight).
- Split the chickens if you didn't have your butcher do it for you. Combine the salt, paprika, and pepper; stir well. Sprinkle over the chicken on both sides.
- Combine the vegetable oil, vinegar, and hot sauce, stirring well. Set chicken and oil mixture aside.
- Prepare a fire in your grill; let burn until the coals are gray. Rake the coals to one end of the grill; put an old disposable foil pan on the other end of the grill. Pour water in it to make steam and keep your chicken nice and moist. Sprinkle the hickory chips over the hot coals.
- Place the chicken on the side of the grill over the pan with water in it. Place the lid on the grill. Grill over indirect heat 3 to 3 1/2 hours, or until done. Turn the chicken occasionally. Add hickory chips as needed to keep the smoke going. You may also need to throw a few pieces of charcoal in it to keep the fire going nice and hot. Baste the chicken with the oil mixture during the last hour of grilling time.

TURN YOUR CROCK POT INTO A SMOKEHOUSE CHICKEN (SMOKED CHICKEN)
Since so many people have said this is bland: This is more of a cooking method than a full RECIPE. Season the chicken as desired, use barbecue or soy sauce or what have you. The idea is that you can get "SMOKED CHICKEN" flavor with just your crockpot. If it turns out BLAND, then I guess you should have used some more seasoning.

- Place in crock pot, breast side down.
- Pour liquid smoke over top or just add along the side, if desired.

STOVE TOP SMOKER BONELESS CHICKEN BREASTS (WITH OR WITHOUT SKIN)
When it comes to serving smoked chicken as a main course, most people will offer boneless breasts for the centerpiece of a meal and use smoked thighs as an ingredient in soups, salads, and casseroles. I'm an exception to that rule, choosing legs over breasts for just about any chicken dish I'm preparing. Legs and thighs have more flavor and are easier to keep juicy, although with a stovetop smoker keeping the breasts juicy is less of a problem. From the cookbook "Smokin".

- Trim any fat from the breasts before seasoning them. If you're leaving the skin on in preparation for serving the crispy-skinned version, trim any overhanging skin and smooth the skin into an even layer over the chicken. If not, remove the skin before smoking the chicken.
- Boneless chicken breasts absorb a lot of flavor and watch well with a wide variety of wood. Use less of the more assertive wood like hickory or mesquite, or more of the milder wood chips like alder or cherry. Use 1 1/2 Tblsp hickory or mesquite OR 2 to 2 1/2 Tblsp alder or cherry wood chips.
- Season the chicken breasts with 1/2 teaspoon kosher salt and a scant 1/8 teaspoon freshly ground pepper each, adjusting that amount to your taste. Or rub a generous amount of your

Check for doneness with the instant read thermometer about 4 minutes before the end of the time.

SMOKED WHOLE CHICKEN
Pitmaster Sam Jones teaches you how to smoke a chicken: brine it, sprinkle it with his BBQ Spice Rub, and cook it low and slow, allowing it to absorb smoky flavor without burning the skin.

- Prepare chicken for even cooking: Lay chicken on a flat surface, breast-side up. Using kitchen shears or a sharp knife, cut through the breastbone, then all the way down to the opening at the other end. Open the chicken like a book, exposing the cavity, and flatten it; the backbone should crack a bit, which is normal.
- Brine: In a 1-gallon container, combine water, salt, and sugar. Seal and shake to dissolve salt and sugar. (Alternatively, stir with a whisk.) Place brine into 2-gallon container, followed by the chicken; make sure the chicken is fully submerged. Cover with plastic wrap and refrigerate 15-24 hours, optimally 20 hours.
- Smoke the chicken: After chicken has been brining for 20 hours, light the smoker and heat to 250 degrees F. Remove chicken from brine, and place skin side up on a flat surface. Pat dry with paper towels. (Chicken will be about ½ pound heavier from absorbing brine.) Flip over and dry the other side.
- Sprinkle BBQ Spice Rub on both sides of the chicken, then rub it into the chicken, making sure the entire bird is covered. Place chicken onto the grill, cavity side down. Cover and cook undisturbed for 2 hours. Add charcoal and use vents as needed to maintain a temperature of 250 degrees F through the duration of cooking.
- After 2 hours, flip chicken over so it's skin side down. Cover and cook for 20-30 more minutes. (Removing the lid of the smoker will reduce the temperature, so bring it back to 250 degrees F by adding more charcoal.)
- After 20-30 minutes, check chicken for doneness by gently tugging on the legs. They should be loose, but not pulling away from the bird. A digital thermometer placed into the thickest part of the thigh, not touching the bone, should register 165 degrees F.
- Carving the chicken: Cut chicken in half along the backbone. Cut each half in half again, so the breast and wing (white meat) form one serving and the drumstick and thigh (dark meat) form another. Serve.
